I just sharpened every kitchen knife in the house, first clearing the existing bevel shoulders at the 15deg setting, then setting a strong secondary bevel at 25deg. Am I happy with the edges? Absolutely. These edges are a superior edge for the kitchen. They just work.
Sharpened my Buck #110 folder and I wish I could say I am as happy with the edge. But my usual edge is created with 9u lapping film on a 3/4" thick cast acrylic block. This is the same way I set the bevel on a straight razor unless it needs serious edge repair. The bevel is about as flat as human hands can make it. Razors have the advantage of a built in angle guide, which is the spine. My pocketknives must be set by eye and experience but I still do pretty good, achieving a very tight reflection when turned in a strong light. I normally don't go any finer on the Buck but I occasionally progress to 3u, then 1u film. A draw cut is easier with a 1k or so edge, which is between 12u and 9u film or loose abrasive grit. A push cut is easier with a highly polished bevel that comes to a perfect apex. One has a certain toothiness. One is refined and polished.
If you hone a razor with a convex edge by lifting the spine, you will find that it WILL NOT GIVE YOU A GOOD SHAVE. This is the metric, for sharpness: absolute cutting ability with minimal force and lack of collateral damage. Such an edge, particularly given a very acute bevel angle, will not stand abuse, however. And here is where the compound bevel shines. The fine primary bevel provides relief and reduces the area of the secondary bevel. The secondary bevel, because it is small and well relieved, can cut well even though the bevel angle is relatively obtuse, and resists chipping or displacement better. This is the edge for general purpose cutting tools. Chisels, turning tools, plane irons, etc though some will argue the point on plane irons. And pocketknives that will see heavy use. Still, the actual bevel facets are FLAT. The convex bevel would seem at first glance to approximate this, but in reality it is a whole nother critter.
Kitchen knives operate in a different environment. They are used with considerable force in chopping, etc and here is where the WorkSharp setup really shines. I KNOW sharp and I KNOW sharpening. I shave every morning with my own edges taken to .1u diamond on lapped balsa. I have press cut a cherry tomato by dropping my pocketknife on it from a height of 1/2". For sheer cutting power in the press cut mode, a flat and well polished bevel that comes to a tight apex with no wire edge or other artifacts and no residual scratch pattern left by coarse grits after the finish, is the ultimate edge. For a working blade in a shop or outdoor environment, a compound bevel can be better. The kitchen is different.
For the kitchen, this belt-delivered bevel is surprisingly good and I recommend this highly for any cook or chef, home or pro. You will be hitting a steel with it anyway, a usually very imprecise operation, so a flat bevel is just wasted. The process is fast, fast enough to sharpen all your kitchen knives in a few minutes every day, and always have a great edge whether it is for chopping or slicing. Let's face it... the kitchen is no place to have a Jnat and a collection of nagura, or a 1k-12k progression of Naniwas, or an assortment of lapping films and acrylic blocks or calibrated granite plates. This thing is way better than a twirly wheely setup like the Chef's Choice its cheap knockoffs. Way better than carbide pullthroughs though I do like the Lansky Quadsharp.
Bottom line... for workbench, man up and get some serious rocks (and keep them lapped) or lapping film. For kitchen, if you don't have one of these you don't know what you are missing. This thing is fast, simple, and I am really liking the edge for chopping stuff. If it holds up and doesn't fall apart, I can say I made a good purchase.
So with Thanksgiving coming up I decided to get this tool after seeing some reviews and hearing from professional knife makers who use it. I want my knives to be razor sharp for the dinner we have planned.
It arrived yesterday and was really quick to set up. It comes pre-loaded with a low-grit band and comes with several other bands up to around 6000 grit. You can get additional bands online with additional grits. I lowered the motor speed to the lowest possible as recommended by the instructions.
The directions are very simple to follow: set the angle, place the knife inside and pull gently as the motor runs. It gives you a guide for different types of knives, from kitchen knives, utility knives, scissors, etc. It can even be modified out of the box to work as an angle grinder for especially large or thick knives if you prefer. The bands are easy to remove and replace
After about 5 minutes with my knife, a simple Victorinox 8" work horse, the results were really incredible. I went on to sharpen every kitchen knife we have including my $250 Togiharu gyuto from my restaurant days and they're all spectacularly sharp, some of them even sharper than when I got them.
I could not recommend this tool more. It's small, maybe a little bigger than a rectangular tissue box, meaning you can easily pack it away and pull it out when you need it. It's super easy to set up, just put it on a flat surface and plug it in. It's easy to use and takes almost no time at all to put a fantastic edge on an even completely dull knife. The belts are easy and fast to swap out, taking a few seconds to change. You can alter the angle to get the exact edge you want by simply turning a dial. Out of the box it comes with everything you would need for typical knives, though additional attachments exist as well.
For $140 the only issue I worry about is the motor burning out, but we'll see if that happens. Some pro knife makers I know swear by these and will often buy multiple and attach different bands to them so they have a quick and easy sharpening station from low to high grit.

Fast forward some time spent reviewing and wanting that perfect edge and I came up withe the KO Work Sharp system, after reading many reviews and watching a few youtube reviews I decided I would give it a go. Now I am an old dog so new tricks freak me out, I have had to take all the bevels off of my knives and go with convex edges (thats what the Work Sharp system does) So my Zwilling and Henkle and my Shun Kitchen knives and all my other edges had to be redone to Convex. Couldn't be happier, the system is easy and almost fool proof (provided you follow the instructions and it wouldn't hurt to watch a couple youtube tutorials) I don't think I have ever hand sharpened this sharp.........I definitely have never done it this quickly and efficiently. If you believe that a sharp knife is the best tool and you have invested in your knives you definitely need to pick up one of these systems. Now the only hand sharpening that happens is a little stropping at the end to make my edges scalpel sharp.
If you pick one of these units up and do it right you will be super satisfied. Even my 12' serrated bread knife is better than brand new. Unbelievable.

PROS:
Very consistent edge angle that is VERY easy to duplicate every time. The angle adjuster is so simple to use, it never moved on its own and is very easy to see and feel.
The machine motor stays consistent RPM and does not slow or minutely vary in speed when pulling a blade through.
The belts are super easy to change and having the belt centering adjuster is a great feature that is much appreciated.
The knife angle guide is super easy to remove when doing gut-hook edges and then to re-install afterwards.
CONS:
The little plastic roller wheel on each pull-through guide are of a soft plastic that the knives will cut into even with light pressure.
The speed adjuster is not in a good spot, every time I pull and release the trigger it slightly creeps up in RPM as the wheel ever-so-slightly rotates when I place my finger back on and pull the trigger. It should be a 4 or 5 indexed speed setting wheel on the motor housing somewhere, no need for it to be on the trigger and it would greatly help if indexed.
I personally found the angle of the handle to be very flat and after an hour of using this tool my wrist started to feel the strain due to the angle. I do realize that many will not spend over an hour straight using this tool and I typically won't either however I wanted to put this tool through its paces.
I read that many people had issues with it scratching their knives, this I can only assume is do to improper use. I was initially a bit worried about it scratching my knives due to so many comments about it, so I started with a few hunting knives. I carefully followed the simple included use instructions and I never so much as put the faintest of scratches on any of my knives. I have a really expensive set of Wustof kitchen knives that I sharpened every one with this tool and just like all other knives I put through, they came out the same as when first purchased from the manufacturer. I used the 6000 grit belt to finish off the edges on all of my knives as I like an incredibly sharp edge on every type of knife I own and the edge looks like polished chrome this does such a good job. Even sharpening the gut hook on several of my hunting knives was a quick and easy task that now has them razor sharp again. I also read about many people rounding the tips off their knives, again, if you read and carefully follow the instructions you will always end up with razor sharp pointed tips. Even on my fish filet knives the tips are still like a needle, you just need to stop the belt before pulling the blade completely off the belt. I gladly give this a 5 star rating and not only would I buy this again I have already been recommending this to friends and family. Worth the price considering what just a good set of sharpening stones will cost and those are much more labor intensive to use correctly.
Natürlich kommt es auch auf den Stahl an und deswegen werde ich das eine Billigmesser daß ich noch habe entsorgen, natürlich wird es scharf... aber nicht lang.
Der Work Sharp, ein Traum zum Messer schärfen, exakt immer im gleichen Winkel schleifen, zuerst grob vor schleifen dann mit dem mittleren Band und zum Schluß das Messer polieren mit dem feinen Band.
