The mat is a flexible, non-stick, easy-to-use liner that has a perforated texture covered with food grade silicone and can be used thousands of times. This Silpain ( Silpat for bread) is a must when making dough and baking bread rolls, buns and more. This 11-5/8 x 16-1/2-inch mat will turn your pan into a non-stick surface. The mat is a flexible, non-stick, easy-to-use liner that has a perforated texture covered with food grade silicone and can be used thousands of times. It is ideal for freezing and for baking bread of all shapes and sizes, which are not required to be calibrated, as well as for the partial baking of tarts. The mat must be used flat and placed on a tray (we recommend a perforated tray as this provides better heat circulation). The mat is easily cleaned using a soft sponge under running water. Nothing sticks to Silpat, so it will save you a lot of time cleaning as there in no more sticky mess on your pans! Silpat never needs greasing, which saves both time and money. Use Silpat instead for any baking recipe that calls for parchment paper. This saves money and creates less waste for our environment. Life of product varies-lasts 2,000 to 3,000 uses depending on use and care. Can be used at temperatures varying from -40 Degree to 250 Degree (-40 Degree to 500 Degree). Made in France. This is a fantastic tool for rolls, buns, even cookies.In the first image I’m comparing to my regular silpat. The weave on the silpain is more open - allowing for more air to move.This is not huge, it fits fine in my baking sheets. I used a ruler to show the actual baking area (the black area).It fit 12 of the garlic knots you see in the final photo.The bottoms were golden and crispy - not burned or hard - but you can tell the difference versus parchment paper.If you bake on your pan directly you may notice the flat surface heats up and so it’s easier to overcook the bottom surface. This takes care of that.If you’re making cookies and want a nice bottom like shortbread or a more crisp cookie (especially if you decorate them) this works great.Just make sure you don’t fold it and store it rolled or flat.Cleans up in a snap.

Amazing baking mat. I use this along with the silpat perforated baking sheet. My bread has improved in quality and I don’t need to use semolina to prevent the bread from sticking.

Because the mat has tiny holes, the bottom of my bread also has this awesome texture and has a harder and heartier crust than baking on the normal silpat, which I also have.

The one funny thing with using this mat and the baking sheet is that the bottom of my bread gets the SILPAT logo on the bottom due to the baking sheet.

Cleaning is a breeze - just rinse under water with some dish soap if it’s oily.

Can’t wait til I try this mat with croissants. The holes will allow the butter to drain to the bottom so will have to use some parchment paper, but at least all the excess butter won’t be absorbed back into the dough as it bakes.

If you bake on your pan directly you may notice the flat surface heats up and so it’s easier to overcook the bottom surface. This takes care of that.

If you’re making cookies and want a nice bottom like shortbread or a more crisp cookie (especially if you decorate them) this works great.

Just make sure you don’t fold it and store it rolled or flat.

Cleans up in a snap.

They sent me the silpain I was missing, a little bit late to update my review but just found out how to do it. They sre excement and good quality

I bought two silpains, becauae i wanted this item long ago. I got one silpain, and one mini silpat, which i have tons of silpats and doesnt work for me. Very disappointed

The product is excellent construction and does the job well. I marked it down a star because I already own a Silpat and I bought this because it is supposed to brown the bottom of the bread. So far I have not seen any improvement in browning after using it multiple times. If you already own the Silpat, you're all set, don't bother getting the Silpain. If you don't own the Silpat then this is a great product, well made, and worth having.

Well I've only been baking for a year. At 63 I never thought I would. I enjoyed hunting. When I started, everyone liked what I did but I was having a problem with butter that would drain from my dough and settle in the bottom of my dough which made it heavy when I took it out of the oven. This is the only product that I've seen that would allow the butter to drain through without damaging my dough. Now I have orders coming in all the time. I also like that it's non stick. I just wish they made it in more sizes, its bigger than the 24 inch inside width of my oven. Right now I only have room for a 30 inch range and I found one range with a maximum wideth of the opening 25.5 inches. Your pad is 26 inches wide.

This mat is incredible, a great even bake, nothing sticks, it cleans like a dream, and it's super easy to move around and store. There's nothing bad to say, I'm definitely glad I invested a little extra in it! I bought the cookie, bread, and macaron ones too actually.... They're amazing!
