These "eggs" aren't just for vegans; they could be for egg-lovers who need to cut their cholesterol intake.Just Egg is composed of plant-based proteins, which is appearing now everywhere since the excitement of plant based burger's arrival to the market. Just a bit pricey.When I tasted my first bite, the taste, smell, and texture are very similar to an egg. Wonderful on a toasted bagel!try this recipe:Omelet (1 Serving)½ cup Just Egg (per omelet)¼ cup mushrooms¼ white onion5 grape tomatoes, sliced(any vegetables you like in your omelet)Vegan cheese (optional)Saute onions and mushrooms until translucent and brownedAdd vegetables to ½ cup Just EggUse a quality nonstick pan and heat it to medium-lowPour Just Egg with sauteed vegetables into the heated panCook on medium-low until brown on one side.Flip omelet over.Add sliced tomatoes and add vegan cheese if using.Fold one side of the omelet over to melt the cheese.Serve with breakfast potatoes, toast, and/or fruit
