About the origin of dried shiitake mushrooms
Shiitake mushrooms are one of the most popular ingredients in Chinese cuisine. There are two types of shiitake mushrooms, the first being dried and the other fresh. They’re quite different for obvious reasons but we equally love both types of shiitake mushroom.
The earliest historical record of shiitake cultivation is from the Southern Song dynasty in the book Records of Longquan County. This book is compiled by He Zhan. This book was referenced many times and even adapted in the first book of shiitake mushroom cultivation in Japan.
Dried shiitake mushrooms and fresh shiitake mushrooms have very different aromas and flavors. Dried shiitake mushroom has a much stronger aroma and flavor compared to fresh shiitake mushroom.
You can prepare dried shiitake mushrooms with many different methods in Chinese cooking, such as adding it to your soup, stir-fry, stew, braise, steam and more.
Health Benefits of Dried Shiitake Mushroom
In the East, people believe shiitake mushrooms are not only rich in flavor but they are also high in nutrition and have a number of health benefits. They are loaded with protein and contain vitamins B2 and B12.

How to rehydrated quickly?
We recommend soaking them while in warm or nearly hot water. Make sure they are covered as they take up the water. using a pair of scissors to cut off the stems as close to the mushroom cap as possible, they will now reconstitute much faster without the stem. This stem is edible, but it absorbs water slowly. If you are worried about affecting the taste, it is best to reduce it. After an hour, absorption is complete.
Russian Dried Mushroom Soup Recipe
Instructions
- Wash the mushrooms under running water.
- Soak them in water for 1 hour.
- Chop the mushroom in small pieces and reserve the water.
- Transfer the chopped mushroom in a pan along with the water they were soaked in.
- Add vegetable broth, salt, pepper and barley in the pan and bring the soup to a boil.
- Cover the pan and cook the soup on low heat for 30 minutes.
- Add the potato and carrots and cook covered for another 30 minutes.
- Heat olive oil in another pan.
- Add onions and fry until they turn slightly brown.
- Pour the onion over the soup and serve hot.

- 5 cups Vegetable Broth
- Salt & Pepper, 2 tbsp Olive Oil
- 1/4 cup Barley, 1/2 cup Onion Finely Chopped
- 1 cup Potato Cubed
- 1 cup Carrot Cubed
- 2-3 cloves Garlic Crushed

As for hydrating these mushrooms, I would recommend soaking them in cool water, after rinsing, for at least 24 hours to get the best flavor. You can hydrate them in hot water for less time, but the flavor and texture won't be quite as good. The soaking water smells wonderful and is good to use as a mushroom broth. It also adds a lot of flavor to broths and gravies. The mushroom broth (soaking water) can be frozen in containers for later use. To use these mushrooms after soaking they should to be cooked either by sautéing them or adding them to a recipe. I like them best when sliced and sautéed after they have been hydrated.
I used these mushrooms tonight, and sautéed them with onions and portabellas to go with steak. These mushrooms were very similar to the portabellas in flavor and texture, and the taste exactly very close to the fresh shiitake mushrooms I used to grow. I would recommend these mushrooms as long as you dehydrate them long enough and remove the tough stems. Since shiitake mushrooms are very dense, they take much longer to hydrate than most dehydrated foods. In my opinion, nothing beats fresh, but these mushrooms are a very good alternative when fresh is not available.

The taste is mediocre at best. I bought them to get through pandemic cooking. They probably caused me trouble before now but I've only used a max of 1 or 2 of these per serving previously. A few days ago, however, I based an entire mushroomy meal on them trying to not waste food, and ate much more in one serving, I'm guessing 8 or 9, than I had previously. A disabling headache that caused blurry vision and throbbing teeth had me in bed with a blanket over my head hiding from the light for 36 hours after. Only sulphites cause me that specific kind of trouble.
The flavor isn't great. I've been at a loss to figure out how to use these in any meal because of the poor flavor and rubbery texture issues. I thought perhaps, as a last resort, they could be used as a mushroom gravy base but the flavor isn't right for that so regrettably I'm going to throw them out.
Costco sells dried mushrooms made in the USA. Will try those next time.
