This pan is amazing! It performed wonderfully! The cheesecake baked just as beautifully as the one in the other pan. And when it came time to release the bottom, this one came off much easier. It was also easier to clean.

** EDIT: it's been a year since my purchase, and this pan STILL performs way better than my much more expensive spring form pan, even a year on! Here are all the reasons why this springform pan my hands down favorite:
1) The bottom is still tightly held in place when the pan is latched. The bottom pans on some of my smaller ones have become pretty loose. I don't have to worry about that at all with this one.
2) Compared to my more expensive springform, this one has taller walls. (PIC 2) It helps me ensure I don't have to worry about the top accidentally adhering to foil or worry about overspill.
3) And I also get a consistently more beautiful, even coloring on top of my cheesecakes with this pan! (PIC 1). Im guessing it's probably because the walls are taller?
4) While some of my other springform pans have shown some signs of wear and tear, this one still looks brand new! And this one is actually easier to clean than the more expensive springform! Less elbow grease is a WIN in my book!
5) Opening the springform isn't difficult! I have some smaller, terrible cheap pans that I got on Amazon, and they are extremely difficult to slide open. I can't tell you how unbelievably frustrating that is! I'm going to toss them out the window after I replace them with more Wilton pans. This one has shown me that there is quality in sticking with the name Wilton!
6) Wilton actually thought about a part of the design that others do not. On the inside of each springform pan are 2 grommets that connect the latch to the pan (PIC 3). The black pan's grommets have holes. Those holes trap food particles, so it takes longer to clean that out. On the Wilton pan, the grommets are flat, so food particles can't go in and get trapped inside.

If there is a better surface for baking than aluminum, I don't know about it, and Wilton is a truly reliable company. I bake absolutely everything from scratch, and less a couple of items I've received as gifts, my collection of baking pans is exclusively Wilton aluminum. Even in my old, needed-to-be-replaced-5-years-ago oven, this pan produced an evenly cooked, perfectly creamy New York style cheesecake.

Très déçue par ce moule car il n'est pas étanche du tout (j'utilise des moules d'une marque allemande depuis plus de 10 ans mais elles ont vieillis, des moules stables, sans raccord, finitions impeccables et 100 % étanches, pas de fuite bref le top mais je ne les retrouve plus sur le marché acheté à l'époque à moins de 7 euros le moule de 25 cm).
Le moule n'est visiblement pas adapté à d'autres gâteaux que le cheesecake (car il y a une base biscuit... et encore vous ne pouvez pas faire de cheesecake au bain marie, bref un moule pas polyvalent car pas étanche. Je viens de faire un gâteau au chocolat, la pâte a fuit de partout...une vraie catastrophe.
Moule que j'aurai bien rendu mais il fallait ouvrir l'emballage et le tester pour en connaître les défauts...
