About our Teff Flour:
Teff could be called an ancient super grain - it’s been cultivated for thousands of years and is traditionally made into an Ethiopian flat bread called Injera. It’s full of fiber and protein and is a great substitute for wheat is oodles of recipes. Our teff flour is gluten-free and Vegan friendly!
High Fiber - An ounce of teff flour has nearly 2 grams of nutritious fiber - double that of all-purpose white flour! Use teff in your baking to boost the fiber content.
Nutrient-Dense - Teff packs quite the nutritional punch. It contains lots of vitamins and minerals such as calcium, iron, and thiamin, just to name a few!
Gluten-Free - Teff is a naturally gluten-free grain, and we take it step further by making sure our product is batch-tested gluten-free. Our teff flour is an awesome addition to any gluten-free pantry!
Great for Baking - Our teff flour has a mild, slightly nutty taste that is a great addition to baking and cooking. Try swapping it out for whole wheat flour in pancakes or muffins!
Teff Cacao Peanut Butter Mini Muffins
Ingredients:
- 1/3 cup peanut butter
- 1/3 cup Anthony's Organic Extra Virgin Coconut Oil, softened
- 1/4 cup maple syrup
- 2 tablespoons almond milk
- 2 tablespoons Anthony's Chia Seeds
- 1/4 cup Anthony's Teff Flour
- 2 tablespoons Anthony's Coconut Flour
- 1-1/2 tablespoons Anthony's Cacao Nibs
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Preheat the oven 350° F and grease a mini muffin tin.
- In a mixing bowl, cream together the peanut butter and coconut oil.
- Add the maple syrup, almond milk, and chia seeds. Let sit a minute or two.
- Add the teff flour, coconut flour, cacao nibs, baking soda, and salt. Mix well.
- Divide between 8 prepared mini muffin cups.
- Bake for 20-25 minutes.
- Cool most of the way; best enjoyed slightly warm.
Cook time: 25 minutes
Yield: 8 mini muffins
Teff Flour Molasses Cookies
Ingredients:
- 1/3 cup coconut oil (solid, not melted)
- 1/3 cup maple syrup
- 1/4 cup molasses
- 3 tablespoons pumpkin puree
- 1/2 cup plus 2 tablespoons Anthony's Teff Flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- Preheat oven to 350° F and grease a baking sheet with a bit of coconut oil.
- Cream together the coconut oil, maple syrup, molasses, and pumpkin.
- Mix in the teff flour, spices, salt, and baking soda.
- Drop by heaping tablespoonfuls onto the baking sheet and flatten out a bit.
- Bake for 20 minutes.
- Cool and enjoy!
Free Whole Grain Pancakes
Ingredients:
- 2 large eggs
- 3 tablespoons oil (melted coconut oil, grapeseed oil, etc.)
- 1/3 cup cashew milk (can use almond milk or coconut milk instead)
- 5 drops vanilla liquid stevia (or 1 tablespoon maple syrup)
- 1/2 cup Anthony's Brown Rice Flour
- 1/3 cup Anthony's Teff Flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon apple cider vinegar
- In a mixing bowl, whisk the eggs.
- Mix in the oil, cashew milk, and stevia or maple syrup.
- Add the rice flour, teff flour, baking soda, and apple cider vinegar and mix well.
- Cook on a hot greased skillet by 1/4 cupfuls until golden on each side.

- I've had whole/un-ground teff and really enjoy the flavor as well as the fluffy texture it givew to pancakes and baked items, but I've found it difficult to cook the whole Teff correctly so that the bran softens and loses any "grittiness". So, when I saw that Anthony's has teff *flour*, I chose to give it a try.
- I have not yet tried this in baked goods, but I've mixed it into my night-time oatmeal, and it has all of the nutty flavor of the whole Teff, but it cooks (and becomes tender) more quickly. Just note that, if you make it as a hot cereal, it needs to be stirred fairly often, since it *is* flour and can get lumpy if not stirred.
- Both its flavor and its texture harmonize really well (well, in my opinion, at least!) with almond flour, which is also offered by Anthony's, and oatmeal/oat flour. I personally think it's also good with Carob :)
- Nutritionally, I've read that Teff is actually a seed, like Buckwheat, rather than a grain, so its proteins should balance well with grains (such as oats!) and/or nuts. It has a fairly modest glycemic index and decent protein availability, and respectable levels of thiamine, calcium, magnesium, and phosphorus.
- Now I'll be looking for additional Teff recipes to try out! =:-D
