I started using shallots again and forgot how handy they are. So many times all I need is small amount of onion-like flavor for a dish or garnish and I don't like cutting a large onion only to have the rest of it sit around loosing its freshness. These shallots are mild and slightly sweet. They are perfect for using fresh on salads with out being overpowering.
Shallots are delicious and organic veggies are even better if your budget allows. I like to use shallots along with pepper when making scrambled eggs. Another application could be if you are making a pan sauce or salad dressing. Overall if you like onion but have concerns that the flavor of a red or white onion may over power the other flavors of your food give shallots a shot, you may never go back to regular for certain dishes again
Use shallots for all "onion" recipes and they are really good and good for you. Lately, they are so small and when I used to go shopping to Whole Foods store, I used to get nice big shallots but then they seem to have gotten a lot smaller now. I still buy them because they are so healthy.
So often I peel back the layers to find mold. Impossible to tell before buying if they're going to be edible or not. They're great when they're edible, but so disappointing when you're preparing for a meal and have to scrap them AND sanitize your knife and cutting board before figuring out a substitute for your recipe.
The shallots were great to use in the shepherds pie that I made with Christmas leftover meat. Charlottes are easy to use in the food processor and don’t create as many tears as onions. The taste was wonderful.
