About our Confectioner's Erythritol:
Erythritol is a sugar substitute also referred to as a sugar alcohol. The sugar alcohols are counted as carbohydrates in the nutrition label. Their caloric effect on the body is lower than that of a normal carb which is why it has zero calories.
For every 1 tsp (3g) there are 3 grams of carbohydrates and zero sugars. Being a sugar alcohol, erythritol does not affect blood sugar making it suitable for a low-carb diet! Even though there are 3 grams of carbohydrates in erythritol you would subtract them from the total carb count because they are just ingested and then excreted by our bodies. Our bodies simply cannot metabolize it or use it for energy.
Anthony’s Confectioner’s Erythritol is Gluten Free and Non-GMO, with no other additives. This sweetener is 70% as sweet as table sugar without the calories. What is crazy is I can’t find it at the market (when I need it). Just gonna comeback when I need. I’m very happy this purchase!
I don't like that it was already clumpy-Lumpy in the bag before I even opened it. I could feel huge hard chunks the size of my fist through the bag. I hope you have a sifter. I had to put it into my Magic Bullet just to get it back to powder consistency consistently. I have also just rubbed the lump against a cheap wire mesh strainer, and it turned back into a fine powder very easily.
I don't like that the zipper that is supposed to seal the bag after opening tore away from the bag during opening so there is now no way to seal the bag. I'm going to have to transfer it to mason jars IF I don't want it to become even MORE Lumpy, LOL!
I'm wondering if I should invest in some oxygen sealing desiccants or something cause I'm starting out with already clumped product which probably means it has too much moisture already?
NOTE: It is easy to underestimate how much you need. If your recipe calls for say 1/2 cup sweetener then powdered, 1/2 cup of this powdered sweetener is NOT the same. you will need to measure by weight, or just taste your product to make sure it is sweet enough.
Erythritol is about 70% less sweet than sugar so don't be surprised that it tastes "not as sweet" as other brands that contain Erythritol. If the other blends claim to be, by volume, as sweet as sugar, it means that they have some other ingredient (like Monk Fruit extract) added that is also sweet that boosts the sweetness with the Erythritol. This product is Pure Erythritol only.
I got this to use for homemade chocolate molds to avoid the gritty texture of crystal sweetener. I used it in a pumpkin cake recipe, and it turned out well. Less sweet than I anticipated, but sweet enough, nonetheless. I'll come back and comment on how it works in an oil-based recipe that doesn't have water to dissolve.
I used this powder sweetener in an ice cream recipe with Allulose sweetener and a pinch of pure monk fruit extract and it made a very sweet ice cream that was soft serve at the end of churning and still scoopable from the freezer overnight. I was told the Erythritol alone would harden solid, but the Allulose keeps it soft. So I could probably use less Erythritol or Monk Fruit since all three together makes a really sweet combo.
I'm on my second bag of this stuff.
Anhony's brand is my go to for quality.
The powdered sugar has some chunks, but it's easy sift right into your batter.
I will continue to purchase from this company.
