Since 1850, Emile Henry has produced in France a large range of high quality ceramic cooking utensils. With a 10 year guarantee, our products are made from natural materials and have been designed and manufactured in France, in Southern Burgundy. Controlled production, without waste, is part of our daily commitment: the CO2 expelled from our workshops is particularly low thanks to our modern firing techniques that require less energy. The waste in general is recycled and the water used in production is filtered and used again in the production process.Our dishes have always been produced in France, in Marcigny in the south of Burgundy: it is a tradition and savoir-faire which has been handed down from generation to generation. I received the item on time and early in the morning. I already had a dough ball rising. I went with a recipe I bake pretty often. Honey oat, 550g recipe. After the second rise I shaped and placed into the baker for the final rise before baking. I brushed the loaf with water and sprinkled with oats. Placed into my oven that had been pre heated to 450F baked for 35 minutes then a final 5 minutes with lid off. The bread came out nice but the bottom burnt. So I’ll need to experiment with time/ temp.

I am a new, but serious, bread baker. I make good/sometimes great focaccia and hearth breads & just started sandwich loaves. This baker is perfect for my new experiments. The first attempt stuck to the bottom badly because I did not prep the pan correctly. Today I oiled the top & bottom, used a duster ball to apply even layer of flour, and used parchment which I cut to size. I made King Arthur’s Harvest Grains Bread. The oven spring pushed up the top of the baker! Took top off for last 5 minutes. Tonight I have a beautiful, delicious sandwich loaf with perfect crust and the Emile Henry baker contributed greatly to the results. And the baker is so beautiful that I keep it on my stove or counter. Well worth the money if you regularly bake bread.

I'd read some excellent reviews of this baker on King Arthur Flour website and Amazon so I took a chance, despite some naysayers concerned about lack of handles on the lower half. I've been using it for three months now and have made more than 10 loaves of various kinds of whole grain bread, and it is wonderful. I do follow the instructions to lightly spray the interior of top and bottom with veg. oil, then dust with flour before putting in the dough. Even when I didn't do that a few times at the beginning, the bread came out of the ceramic baker, albeit with some encouragement. When you oil/dust flour, the bread falls out easily.
The quality of the bread depends on how you prepare the dough of course--I'm using a mixer to knead the bread, and that tends to result in a decent rise, even with 100% whole grain breads. The baker is easily cleaned after baking. The only precautions needed are those discussed in the brochure and are common sense--with the cardinal rule being don't allow water to come in contact with the baker when its very hot after removing from the oven. The holes at the top allow moisture to escape but also create a good environment for browning loaves without having to remove the cover.

I was given the Emil Henri bread mould as a Christmas present and I have used it twice, once to make plain bread and once for a loaf with pecan and cranberry, and the results in both cases are perfect. I baked the plain loaf alongside one baked in an ordinary loaf tin and The Emil Henri loaf came out softer and more moist but with a firm crust. This is obviously not a cheap item when compared to the cost of a loaf tin but the results are incomparably better. It is easy to use, easy to clean, no Issues when used as directed.
