Ready to make your own, natural and fresh tortillas?
Start by making your masa dough according to the instructions on the package. For this example, we'll use Maseca: just mix 2 cups of Maseca, 1.25 cups of water, and a pinch of salt. Mix the dough until it has the consistency of Play Dough. Once ready, separate the dough into 16 small balls about 1.25 inch wide.
Setting up the plates
Pro tip! Cut a zip-top disposable plastic bag along the corners to make two square plastic sheets (usually the sandwich size is perfect). Place one of the plastic sheets on the bottom plate. Place a ball of dough slightly off-center, towards the closing hinge. Place the second plastic square on top. *(If you do not have zip-top bags, cling wrap or parchment paper can work too).
Press!
Close the top plate. The weight of the plate will help you press down, and the lever will help you finish the press firmly. Not too much force is necessary.
Peel and separate
Open the press, place the plastic covered tortilla on one hand, & peel off the top plastic with the other hand. Flip the tortilla over onto your other hand and now peel back the second plastic square. You can start putting your pressed tortillas directly on a hot griddle, or on a plate separated with sheets of parchment paper if you prefer to cook or freeze them later.

While it is quite pricey compared to what you can buy at your local Mexican grocers, it's also VERY impressive. It is a beautiful color and unlike anything I have ever seen in the stores. It's also significantly heavier than the cheapo versions I've seen in stores. It appears that this thing will last a lifetime and could get run over by a truck and still be able to crank out the tortillas! (I didn't try that, I'm just saying that this thing is darn sturdy!)
So overall, I could have gifted my son-in-law a flimsy cheap aluminum tortilla press, or I could have given him this very impressive built-to-last press. If you're giving a gift, I don't think there is an alternative. This one blew me away and was much nicer than any tortilla press I ever saw when I was living in Mexico. It's absolutely beautiful and I would never consider gifting any other one. I may even buy one too. It's stunning.
Sturdy with one exception. The pin that holds the pressing lever appears to be mode of aluminum and because we like our tortillas very thin the pin bent a bit and now is very difficult to remove. Will leave it for now, but will replace later with stainless steel pin. Overall, we love this press and I would recommend sizing the dough balls correctly so that the dough doesn't squish out beyond the press edges. Also using the round 8 inch parchment papers was a brilliant recommendation.
For corn tortillas, the water/masa ratio is critical, needs to be relatively soft. You need to use plastic to keep the dough from sticking, and I spray with a bit of Pam or swab with oil. DO NOT press too hard! The press can make very thin tortillas, but you don't want paper. This is a learning experience also. You want about 3/16ths of an inch thick. Or at least, I do. Once you get all the magic right, it works great. Don't blame the press for your bad technique!
As for wheat flour tortillas, these are more difficult. They will immediately shrink out of the press, and it's not the press, it's the gluten in the flour. I haven't totally figured this out yet, but a low-gluten flour and possibly a Chinese-style hot water dough would help. Or, long resting after pressing before opening the press, which really isn't practical. In any case, this is a really nice press, but remember it's cast iron, it will rust. If you wash it, be sure to dry it immediately and thoroughly.

Then into first pan. 15 seconds.Flip after 15 seconds onto second side for another 15 seconds. Then transfer onto the second hotter pan for 30-45 seconds. It will puff up. Then remove. Meantime prep another ball of dough onto press and have it ready for the transfers.Beautifully easy. You will be able to keep the assembly line rhythm once you get the hang of it. So easy and seamless. I found using a complete zip lock bag for each side makes it easier to make and peel off the tortilla. I suspect the double layer of plastic allows for movement without pinching the tortilla. Very pleased with this purchase. It’s a lifetime purchase and next I will try white and whole wheat tortillas. Washed complete press in very hot water and dried it off. Noted the beading of water on every part of this very well seasoned press. All edges nicely rounded and finished. Beautiful casting. I love cast iron cookware and have very fine and some very expensive pieces. This one is definitely a keeper.
This press I will experiment with drying flowers and stems. One or two layers. Cover each side with heavy plastic so no moisture rusts the press. Lock lever with an appropriate weight.
