I just got my VitaClay, and surprise! The inside of the cooker is made of aluminum. Health Risks of Aluminum -"A normal intake of aluminum is roughly 3 to 5 milligrams per day, but Americans may ingest up to 10 milligrams per day on average. Cooking and storing acidic foods in aluminum pots and pans is likely to release higher amounts of aluminum into the food. Research suggests that using aluminum and other types of nonstick cookware products can increase risks of cancer, respiratory problems, and other serious health problems in adults and children, including a possible link to Alzheimer’s disease in the elderly."So, the image is very deceitful because the outside is made of stainless steel but VitaClay does not mention that what gets heated is aluminum!Even though the cooking process takes part inside the clay pot, everything is porous.In this day and age, why do companies still use aluminum for cookware?

The Details:
The more I read about metal cookware, the more I'm convinced I need to stick to glass, lead-free clay and porcelain, not to mention the cheap clay pots that are painted with glazes that may contain lead among other toxins.

Actually, I'm all about Paleo, and I started reading about slow cooking as a very healthy way to cook your meat - it preserves the integrity of the fats, enzymes and proteins. Heating meat up above say 200 destroys a lot. Based on that reading, I looked quite a bit for a crock-pot I felt I could trust, to no avail. All of the earth based crock pots are glazed, and none say lead free on the box. I also read that some crockpots might be painted with toxic paint, so I didn't take any chances on buying any of these.

I knew about VitaClay about a year ago, but it was $100, so I didn't buy it. I was so excited to see this smaller, less expensive version available on Amazon. I did a quick read of the VitaClay website where I read they test for absense of lead in their clay, and then I bought it.

I just did my first beef stew in my mini VitaClay today. I just followed the Beef Stew recipe in the recipe book that comes with the pot. It was really easy. If you fill the pot to the top with meat and veggies, you'll be able to serve 3 to 4 people (depending on portion size). I put all the ingredients last night before going to bed. By mid morning I had my first taste. Delicious!!! It came out wonderfully. I only had a small bowl the morning, I left the rest in the pot on low until early evening, and now I am enjoying another bowl. The beef is still incredibly moist, though it's been on low heat for the past 18 or 20 hours. Oh, and here's the best part for you Paleo lovers, I'm eating the most tender beef ever, and I got the cheapest cut: bottom round. I could easily trade some t-bones, porterhouse, and even filet mignons for this, often enough.

I wanted to love this, but it is not a viable product. Many thanks to Amazon for their prompt and cheerful return of it. Here is what happened: I upacked it and washed the clay bowl before testing it. I tested it with plain water. I put it on High and left it to run all day to see what temperature it would run at. It leveled out at a maximum of 160 degrees Fahrenheit, after heating up for about 6 hours on high. This is not "high" by any slow cooker standards. Then I let it cool down and tried the yogurt setting. I started with water at 107 degrees from the tap. For the first two hours the temperature dropped steadily. Then in the third hour it started to make it's way back up but only reached 103.5 after 6 hours. I spoke to the manufacturer who told me that they have designed this to operate at 110 for yogurt. They also told me that both the high and the low setting will bring water to a boil but it takes the low setting twice as long to boil. My unit did not come close.
Another (totally separate) problem was also a show stopper. After several hours in the clay pot there was a layer of scum on the surface of the water. So that means every time you cook food in the cooker you will be getting a dose of the clay. Now this is made in china and I believe I read that the clay is actually mined in China. Without expensive testing I don't know if that scum layer contains anything toxic, but I am certainly not going to take the chance.
I called Amazon and they were wonderful. It's a bit of an inconvenience to have spent this much time on the purchase, the test and in shipping it back, but Amazon has made it as painless as possible.

I use this to make SCD yogurt where you need to incubate it at 110 degrees for 24 hours. The temperature does maintain at 110 degrees a couple of times I checked with a thermometer. The yogurt came out more sour than my usual method of wrapping a crock pot in towels and leaving it in the oven. I guess because this clay pot maintains a higher and more accurate temperature. The sourness problem is easily solved by changing the starter yogurt or culture.

I tried both heating up the yogurt in the unit and let cool to 110 degrees and heating up on the stove top with a saucepan. Both methods produce similar yogurt. The one in the clay pot just takes about 5 hours for the whole process of heating and cooling while the stove top method can be done within an hour.

I haven't tried making other food with it yet because I'm always making a new batch of yogurt. It makes a bit less than 2 quarts per batch.

Love the concept of a small crock pot, but this is way to small for other then simple dips. Well made though and love the clay pot!

I was skeptical of cooking in a terracotta like pot the looks unsealed. I was amazed the first time I made yogurt in here. Works perfect every time and makes the job way easier. Paid for itself in no time and much better yogurt than the store, plus i know what goes in it. Soak a little, use a gentle scraper of some sort and any baked on milk comes off and the terracotta pot looks clean again!

I've used this as a yogurt maker once a week for the past four weeks, and it's worked really well. Instructions are easy, and so is clean-up. I purchased the clay pot because it's more eco-friendly and probably healthier than the synthetically-lined slow cookers, and I've been pleased with the results. It stores easily on the counter or in a cabinet, and it's perfect for making smaller batches of food for one or two people.

I love the large size for stocks and it's a really great pot but read the directions carefully and follow them. Unfortunately I was careless. I tried cooking oatmeal and halved the recipe. The pot overheated and in my efforts to stop the food burning, I added very hot water but the pot cracked nevertheless. Expensive to replace just the pot plus shipping cost as Amazon doesn't seem to carry that pot alone.

. Sa capacité de 2 litres me donne environ 1/2 kg de fromage frais à consommer en quelques jours en plus du petit lait qui est bon à boire avec du citron, ainsi que pour faire des potages, pâtes, crêpes etc.;
. Son pot en céramique non toxique comme son couvercle en verre font mon bonheur à chaque utilisation qui est on ne peut plus simple,
