I'm a "smart device" fan, in and out of the kitchen. A lot of other "smart" cooking devices are slow and clunky to get them to work the way you want them to. You say, "cook this at this temperature for this amount of time," and the thing hesitates or the app is horrible.
This device's app is refreshingly easy to use and quick to respond. So that's a very good thing. Most apps for most devices are marginal, at best.
Prior to purchasing this, I read reviews about how easy the knobs break. I hesitated to buy based on this, however I ultimately decided to pull the trigger on it due to the brand's reputation overall and my research into all the different options.
So here's the deal on the knobs, if you're worried about it: They are PLASTIC. You have to be careful and gentle with anything plastic. You can't go cranking them down super tight and expect them not to break. This is true not only with this device, but with anything made out of plastic anywhere. Just turn them until they're barely snug, and they will hold everything in place without breaking. Easy.
But, in case you're not wise enough to realize that plastic is brittle, just read the manual. It tells you what you should already know: do not over-tighten.
It's possible that other reviewers got a bad knob, or something, but seriously. Plastic breaks. Don't over-tighten and you'll be fine. This is a great product.
All of that said, I don't love that they used plastic for this stuff for that reason. And every time I use it, I'm worried that I'm going to break it or that I'm not tightening it enough and it's going to tip over and fall in the water, or something. But I've never had a failure yet, and I just barely snug the knobs. It stays in place surprisingly well.
So, unless, in all my paranoid carefulness, the plastic knobs do break, this remains a five-star product. If they do break (and I'm very careful about it), I'll come back and update this review. But until then, I don't think anyone should worry about those other reviews. I'm betting it's more user error than it is a flaw in the product. This thing is great.
I'll say I'm very impressed. With zero prior experience, I was up and cooking in 10 minutes and had perfectly cooked meat just an hour later. I didn't mess with the app at all - just filled a pot, slapped in some vac sealed meat and hit go.
Storage is easy as the unit itself is tiny (the pot is large, but its something we already had - so nothing new added there). Cleanup is super easy as all of the mess is contained in the bag - the only stuff on the cooker / in the pot is clean water.
Very happy with our purchase.
The Pros are that Anova is a huge name in the world of Souse Vide and this unit is well built with metal parts and a high-wattage heating element that can tackle just about anything you throw at it. I gave it a test run and it heated about 6 gallons of water from ~60F to 160F in under an hour and I verified that it held the set temperature very accurately. In its basic form it's very easy to use as well, and the clamp provides a good attachment mechanism to secure the circulator in place.
Things I have not tested: WiFi since I don't care about it and have no intention of ever using it. I prefer manual control and that works fine [WiFi is *not* necessary for using this thing out of the box], but check other reviews for WiFi pros/cons.
My only minor con here is that the while the clamp arm makes it easy to attach the Anova to most containers, it tends to ride high in the container, meaning that you have to put a whole lot of water into the container to meet the minimum fill level for it to operate. For example, I have a regular 28qt Coleman cooler that I like to use for a lot of my cooks and I have an older Sansaire sous vide circulator that stands upright in the bottom of the cooler. I need to put in at least twice the water to get to the minimum fill level for the Anova compared to even the maximum amount of water that I can use with the Sansaire, and there's plenty of water in the cooler for all of my cooks using the Sansaire. Apparently Anova makes a special base for the regular circulator that allows it to stand up in the water bath to solve this problem, but ironically this base does *not* work with the higher-end Anova Pro since the end-cap of the Anova Pro tube is a non-removable metal instead of a threaded plastic cap of the plain Anova. It's certainly not a show-stopper but it is something to consider when planning how you want to use this unit.
