Bought this in 2017, it's now 2024 Feb and I'm dropping a review.
I've used this in several applications:
1. Sushi Restaurant - High Volume. Used this on many higher end Japanese and German knives and when used properly it gives a razor edge that can slice paper clean on test cuts. After 7 years, this stone still has about 70-80% life on it
2. Home use - Excellent for sharpening anything around the home. Used for knives, scissors and everything in between. Japanese made quality that you just can't beat. Stores easily in a drawer when done, but I use it so often, it just sits on the countertop and looks decent doing so.
3. Woodworking - This is a new one in the past two years. I've been using this to sharpen chisels, which admittedly is something I'm new to. I have a standard, mid range set of chisels that were meh. After using the stone on these chisels, I literally have to be careful handling with them as they are so sharp I can cut my hand with ease. Cut through hard wood nice and through soft like butter.
The 1000/6000 combo is perfect and I really haven't felt the need to get anything in between. You probably don't want any rougher for delicate kitchen knives and the 6000 gives you a razor finish.
Buy once, buy REAL Japanese made products and never look back. Don't fall for the fake stuff out there.
