The rise of Middle Eastern recipes like hummus and falafel have introduced many people to chickpeas and chickpea flour. This power flour is a naturally dense flour that has good binding tendencies with a high protein and iron content. Use Anthony’s Organic Chickpea Flour for gluten free baking, to thicken sauces, soups and gravies, or to increase the fiber, protein and iron content of foods. First and foremost, the fact that it is organic and non-GMO brings me peace of mind. I appreciate Anthony's commitment to providing a wholesome and clean product that I can trust. It's wonderful to know that the chickpea flour I'm using is free from unwanted chemicals or genetically modified ingredients.
The taste and texture of this chickpea flour are exceptional. It adds a subtle nutty flavor to my baked goods, which I absolutely love. It's incredibly versatile and can be used in a wide range of recipes, including pancakes, bread, cookies, and even as a thickening agent in sauces or soups. I love making dumplings and stuffed pasta such as ravioli.
I found a basic recipe that called for chickpea flour and thought I'd try this on my Chinese dumplings.
When I opened the package I thought "This isn't going to work at all." due to the odor.
After cooking, as much as I tried I could not detect any odor or flavor from the chickpea flour.
The dumplings came out great, the dough was "stretchy" enough to allow me to cut, form, fill and seal the dumpling. Here is the recipe for the dough for the dumpling wrapper. You can modify it a bit for other types of pasta.
150 g Chickpea flour
125 g Tapioca starch
125 g Sweet rice flour
3 or 4 g Xanthan gum (a little more than a teaspoon)
1 cup of warm Water
Mix the dry ingredients together and add most of the water. Knead for about 5 minutes. The dough should not stick to your hands and should not fall apart when stretched; it should be a bit plastic such as the Play-Doh that you played with as a kid (or still do).
You can always add more water if needed (a teaspoon goes a very long way, don't add more than that each time or it'll get too wet).
NOTE: Only use SWEET rice flour. Sweet rice flour is what is used to make mochi if you're familiar with that. It is often called mochiko or glutinous rice but that just means it's glue-like, it does not contain gluten. Other rice flours do not contain the same amount of amylopectin and so they don't have the stretchy quality needed for this.

This chickpea flour comes in a strong, resealable bag and will become a staple item in my kitchen for my gluten-free recipes. Highly recommended.
