I'd also like to recommend the chocolate chip cookies and the lasagna soup...winters in Montana make me crave hearty and warm foods, and these really hit the spot. :)
I ABSOLUTELY LOVE THIS BOOK!
This was my first cookbook to ever purchase and I was a little hesitant to do so just because I wasn’t very good at cooking. I was scared that having written out instructions (vs her YouTube videos) wouldn’t be as straight forward, I was wrong. It’s so simple to understand and the recipes are so easy to follow yet so delicious (they never lack flavor). I purchased this book in hopes to get new ideas on what to cook on a daily basis and it helped me out so much more. Now I love to cook and try new food! I was very close minded when it came to food but this definitely helped me overcome that. I have a toddler and with that being said I think we can all assume sometimes it’s not easy finding something delicious yet nutritious that they will eat. This book also helped me out tremendously with that. I was a boot hesitant that I’d spend so much effort on one of the recipes and my son not like it/try it but he absolutely LOVES all the recipes I’ve made for him! His favorites include the tofu dippers (we call them tofu nuggets),the classic marinara sauce 🍅 (with pasta 🍝 of course), and the famous lasagna soup. 🥣 I would definitely recommend this book if you’re just getting into cooking or have years of experience, either way you will not be disappointed! 🥬🥒🥗🍪🥧🍰
I made her Maple Curry Pasta the other day and added some veggie burger to help bulk it up. I fed it to my family-- notorious red meat and dairy eaters who consider vegan food to be rabbit food. They were raving about the pasta and even had leftovers the next day! When I told them it was vegan, they thought I was joking. I showed them how it was made and they were stunned! Now they want at least one family meal a week to be vegan! So if it can convert my meat loving family, I can assure it will have something tasty for you to try. :)

I would especially recommend this cook book to people who are new to veganism— or just learning to cook in general— because of the simplicity of techniques yet deliciousness of the meals.
