The addition of Molybdenum and Vanadium in AUS-10 steel dramatically increases wear resistance and edge retention.
- EXPERTLY CRAFTED BLADE: Each knife is expertly crafted using a multi-step process. First the blade is heated to over 1900 degrees F, and liquid nitrogen cooled to harden the steel to over 62 Rockwell hardness. Each blade is then tempered at 600 degrees F for two hours to reduce brittleness. Takumi knives are particularly notable for their beautiful, yet functional hammered design that creates small air pockets to reduce cutting friction and help prevent food from adhering to the blade.

Steeped in Japanese tradition, the stunning look and refined style of Sasaki cutlery is the result of a 60-day process that is intensively implemented and overseen.
The blade is precision forged from a single 67-layered Damascus high-carbon stainless steel piece with a cutting core made of Japanese AUS-10 'super steel.' To vastly increase the steel’s strength, flexibility, and hardness, it is heated at 1000 degrees Celsius, then cooled down to 200-300 degrees Celsius. This treatment results in an incredibly durable, stain- and corrosion-resistant blade that delivers incomparable performance and outstanding edge retention.
Building Beyond The Blade

The Takoma 8" Chef knife is an incredibly versatile kitchen tool ideal for a variety of everyday cutting tasks, including mincing herbs, finely slicing and chopping fruits and vegetables, or cutting thick meat. It is optimally balanced and weighted for maximum control while cutting, and the handle is contoured to provide a secure, comfortable grip. The dimples formed by the Hammered design on the Takoma artisan series knife blades are not only an exquisite design element, they also serve the same function as the dullens on the Santorum knife in the mast series; They create small air pockets that reduce cutting friction, which prevents food from sticking to the blade and dragging while slicing. Keep the Japanese Saia (sheath) on the blade and secured with the pin lock when not in use, both to protect the blade while in storage and for safety purposes. Hand-wash with warm water and a mild-detergent; rinse and dry immediately.

The Sasaki Takumi Japanese AUS-10 Stainless Steel Santoku Knife comes beautifully packaged in a box that could double as a gift box. The knife itself is beautiful, with a shiny blade and the shallow depressions to help the cutting process. Using the Sasaki has been a joy. I reviewed by comparing the Sasaki Santoku knife with a Wusthof Classic Ikon 7-Inch Santoku knife that I have owned for over 6 years. It is my go to knife for most cooking duties.
I like using my Wusthof Santoku better when cutting onions, broccoli, and Brussel sprouts. I found the Sasaki cut a little easier than the Wusthof on denser things like sweet potatoes. The front of the Wusthof cut more easily than the front of the Sasaki blade. The rear of the blade, when chopping, was more of a wash.
The Sasaki feels heftier than the Wusthof. Feeling more like my chef knives than my santoku. Granted, both have sturdy blades, the Wusthof just seems thinner (visually I couldn’t tell). The Sasaki knife is perfectly balanced at point where blade meets the handle (or the bolster). Between the two knives, I prefer the Wusthof Santoku (which is almost twice the price of the Sasaki).
I am a fan of the sheath that was included with the knife. The sheath locks on securely with a simple to use push pin near the handle that you can lock and unlock with your thumb. Sometimes I’ve traveled to friends’ homes with knives and having a sheath like this is perfect. Especially if the knife is stored in a drawer with other knives.
A small detail only about perfection and zero impact to function.. the insignia for Sasaki is on both sides of the handle as the middle rivet. With my knife, the insignias are rotated slightly and not the oriented exactly same. See.. small detail only.
Questions about the Sasaki brand that puzzled me. I searched the internet for reviews of Sasaki by cooking magazines, blogs, websites. I found zero reviews other than those by individuals on Amazon and similar sites. Most big player brands of knives have in-depth reviews discuss manufacturing processes and other points. I also was puzzled by the company tracing itself back to the tradition of famous Japanese Damascus blade makers and making the knives in China.
My outstanding question is, how will the steel truly last over the years. Sasaki claim to be a high quality brand and have certainly priced themselves in that range. Time will tell.
Overall out of the box, this is a comfortable, sharp, and very functional knife. Oh, it looks great as well. Only questions are how it will endure over the years. Sasaki seems to be new so no track record to go on.
The Sasaki 5236118, to the best of my ability to determine, looks to be real Damascus Steel as it is created today. It is a beautiful blade, and sharp and well crafted. It cuts very well and looks as if it will hold a sharpening for some time. The handle is exquisite and everything about the knife is top quality. It is a piece of art. I don't say that lightly, this is a knife you will be proud to have in your block.
And you don't have to keep it in a knife block if you don't want to because it comes with a very clever plastic sheath, that has a button that you press and it lines up the groove to remove the knife safely. This is a nice feature since you don't want a knife this sharp just popping out into your hand.
My iPhone photos do not do it justice. It is a beautiful knife. It isn't cheap, but you aren't buying a knife like this as a bargain hunter. You are looking for a specific quality and style of knife. I would recommend this knife for anyone looking for a beautiful, real Damascus steel knife for their kitchen. I would not recommend this knife for the casual chef. I would also recommend this knife for a great gift for someone who takes their cooking seriously. I think they would be pretty impressed and pleased to get a knife of this quality as a gift. It is a great gift for that "person who has everything!"
