About this item

  • ULTRA-PREMIUM MATERIALS: Each Sasaki knife is produced utilizing cutting edge breakthrough technology and is precision forged from world famous 67 layered Japanese AUS-10 Steel. This incredibly durable stain and corrosion resistant material delivers incomparable performance. The addition of Molybdenum and Vanadium in AUS-10 steel dramatically increases wear resistance and edge retention.
  • EXPERTLY CRAFTED BLADE: Each knife is expertly crafted using a multi-step process. First the blade is heated to over 1900 degrees F, and liquid nitrogen cooled to harden the steel to over 62 Rockwell hardness. Each blade is then tempered at 600 degrees F for two hours to reduce brittleness. Takumi knives are particularly notable for their beautiful, yet functional hammered design that creates small air pockets to reduce cutting friction and help prevent food from adhering to the blade.
  • EXPERTLY CRAFTED HANDLE: The blade is hand mated to a full tang, triple riveted non-porous fiberglass handle which is exceptionally durable and provides a perfect weight balance.
  • CHEF KNIFE THAT’S DISTINCTLY DESIGNED: The Sasaki Chef knife places all the power in your hands with an edge that’s sharpened at a 10°-15° per side, ensuring a razor sharp blade edge. The long, wide blade of the chef knife is specifically designed with a curved edge, so it rocks back and forth on a cutting surface (preferred by professional cooks). Whether you need to mince herbs, finely chop vegetables, slice fruit, or cut meat, the chef knife is the ultimate multipurpose tool.
  • PROTECTIVE, LOCKING SHEATH: A premium quality locking sheath is provided to protect the blade when it is not in use.

Sasaki Takumi Japanese Steel Knives

Steeped in Japanese tradition, the stunning look and refined style of Sasaki cutlery is the result of a 60-day process that is intensively implemented and overseen.

The blade is precision forged from a single 67-layered Damascus high-carbon stainless steel piece with a cutting core made of Japanese AUS-10 'super steel.' To vastly increase the steel’s strength, flexibility, and hardness, it is heated at 1000 degrees Celsius, then cooled down to 200-300 degrees Celsius. This treatment results in an incredibly durable, stain- and corrosion-resistant blade that delivers incomparable performance and outstanding edge retention.

Building Beyond The Blade

Cutting doesn’t begin and end at the blade, and neither does the task of crafting the ideal cutlery for the job. Every aspect of a knife is crucial to its performance, so the utmost attention is given to each detail.

The bolster is specifically designed and weighted to encourage a proper pinch grip, (the correct form when holding the handle). The bolster leads to the beautifully structured, ergonomically designed, full tang handle. The handle is constructed of fiberglass, which is exceptionally durable and corrosion resistant. The incredible comfort, the superior control, and the sense that the knife is an extension of your hand and you are the master of your kitchen craft is no accident.

Chef Knife

The chef knife is named as such for a reason - it places all the power in your hands in the kitchen. Whether you need to mince herbs, finely chop vegetables, slice fruit, or cut meat, the chef knife is the ultimate multipurpose tool to take on the task. With an incredibly hard blade honed to a razor-sharp edge, it makes easy work of even dense-skinned vegetables and thick meats. The long, wide blade is specifically designed with a curved edge, so it rocks back and forth on a cutting surface. This allows you to smoothly slice all the way through food in a single line and with a swift, natural motion without having to lift the knife or drag the blade through the food. It also facilitates a sideways progression when cutting longer foods into slices.

Santoku Knife

The Santoku knife is utilized by Japanese cooks the same way the chef knife is by Western cooks. It is a versatile tool that cuts easily through meat, fish, and vegetables, and is becoming more widely used in kitchens around the globe due to its multiple capabilities: slicing, dicing, and mincing. The Santoku knife features a row of kullens that reduce cutting friction and prevent food from adhering to the blade The key to taking advantage of the Santoku knife’s flat edge is to cut straight down with a single motion for a clean slice that is free of food tearing.

Paring Knife

A paring knife is quite similar to a chef knife in form, although much smaller, and is the go-to tool for peeling the skin from fruits and vegetables. It has also become a staple in the kitchen, because it can be used for a multitude of quick and simple cutting tasks. While handy and versatile, the paring knife is actually an essential tool for intricate or delicate work, such as skinning, coring, or removing seeds from produce. Its compact size and light weight give the user complete control over the blade, allowing for precision cutting in the hand rather than on a chopping surface. Because the paring knife is easy to manage and manipulate, it is an invaluable tool for crafty cooks. Consider it the sculpting chisel of food preparation.

Product Description

The Takoma 8" Chef knife is an incredibly versatile kitchen tool ideal for a variety of everyday cutting tasks, including mincing herbs, finely slicing and chopping fruits and vegetables, or cutting thick meat. It is optimally balanced and weighted for maximum control while cutting, and the handle is contoured to provide a secure, comfortable grip. The dimples formed by the Hammered design on the Takoma artisan series knife blades are not only an exquisite design element, they also serve the same function as the dullens on the Santorum knife in the mast series; They create small air pockets that reduce cutting friction, which prevents food from sticking to the blade and dragging while slicing. Keep the Japanese Saia (sheath) on the blade and secured with the pin lock when not in use, both to protect the blade while in storage and for safety purposes. Hand-wash with warm water and a mild-detergent; rinse and dry immediately.

Beautiful Blade, Quality Versatile Knife

Beautiful Blade, Quality Versatile Knife
Let me just say straightaway that if someone were to give me a Sasaki knife, I'd be over the moon. It is a perfect present for a foodie or home chef. The Takumi Artisan series is their the higher-end collection and the products come exquisitely packaged. I almost hate to dispose of the box it comes in. If you're looking to impress with a gift merely based on the presentation, this is the way to go.The petite 3.5" Sasaki 5228200 Takumi Japanese AUS-10 Stainless Steel Paring Knife with Locking Sheath itself is nearly perfect. I have a number of quality paring knives and this one stands out. It feels just a touch small in my somewhat large hands, but it allows a level of control you can't achieve with a larger Santoku or Chef knife. The edge is razor fine and should stay that way with regular sharpening. The thickness at the back ridge is actually a touch wider than most of my other knives, but this probably allows for long term durability and is quite ergonomic. The 5228200 feels like an extension of my hand when in use. The layered Damascus steel band and dimpled mirror finish is gorgeous, and the finely crafted fiberglass handle with the company logo in the center completes the package. All things considered, you can't go wrong with the Sasaki Takumi Paring Knife. It is an ideal tool for delicate kitchen work and comes with a lockable sheath (saya) that protects both the blade and your fingers when not in use. With a full tang, it is well-balanced and hefty in my hand, allowing me to utilize it to its full potential. I've only employed it a few times thus far during food preparation, but I can't wait to get my hands on it to prepare my next meal. I give it 4.5 stars because at this price point I think it should be perfect, and I can't help but feel there are some minor ergonomic and design issues. Don't get me wrong though -- this is a knife I will treasure and use frequently for years to come.~ Kort

5.0 out of 5 stars My pictures do not do this beautiful knife justice!
Reviewed in the United States on March 12, 2019
The Sasaki 5236118 Takumi Japanese AUS-10 Stainless Steel Utlilty 5 1/2 inch Knife with Locking Sheath is a work of art. If you are familiar with Damascus steel, you are familiar with its beauty and strength. Damascus steel is made from several types of steel and iron slices welded together to form a billet which is then drawn out and folded giving the blade its unique look. There are a lot of fake Damascus steel knives available and some are so good that it is hard to tell if they are real or not.

The Sasaki 5236118, to the best of my ability to determine, looks to be real Damascus Steel as it is created today. It is a beautiful blade, and sharp and well crafted. It cuts very well and looks as if it will hold a sharpening for some time. The handle is exquisite and everything about the knife is top quality. It is a piece of art. I don't say that lightly, this is a knife you will be proud to have in your block.

And you don't have to keep it in a knife block if you don't want to because it comes with a very clever plastic sheath, that has a button that you press and it lines up the groove to remove the knife safely. This is a nice feature since you don't want a knife this sharp just popping out into your hand.

My iPhone photos do not do it justice. It is a beautiful knife. It isn't cheap, but you aren't buying a knife like this as a bargain hunter. You are looking for a specific quality and style of knife. I would recommend this knife for anyone looking for a beautiful, real Damascus steel knife for their kitchen. I would not recommend this knife for the casual chef. I would also recommend this knife for a great gift for someone who takes their cooking seriously. I think they would be pretty impressed and pleased to get a knife of this quality as a gift. It is a great gift for that "person who has everything!"

I hope you find this to be a helpful review. If there is anything more you would like to know, please ask. I try to check my reviews for comments and respond to them right away. If you ask something and I don't get back quickly, please check my profile page and email me and I will try to respond as soon as I see it. I think it is important for fellow shoppers on Amazon to look out for one another by letting each other know if a product is good, or if it is a stinker. I promise, this product is not a stinker - I really like it a lot!!! I take reviewing very seriously and try to be helpful. Thank you!
