XOCOLATL MOLE BITTERS
Very Small Batch
Our original combination of cacao, cinnamon & spice. We recommend adding a dash to libations made with dark rum, aged tequila and any other dark spirits you may encounter.
Inspired by the classic Mole sauces of Mexico, this bitter was originally designed to pair with aged tequila, but we have found that it works beautifully with aged rum, bourbon and rye as well. We’re big fans of putting a dash in an Old Fashioned or Manhattan, and new classics like The Conference or the Latin Quarter just wouldn’t be the same without them.

This one goes really well with a richer syrup, such as Demerara or even 100% maple syrup. Garnish optional but it goes well with a slick of orange peel and/or a dark cherry.
The label says it also goes well with dark rum or even an aged tequila. I haven’t tried those yet, but I like the idea, as old fashions have been around since before ice was readily available (a long time). Back then, they just called them “cocktails” and there were certainly not limited to bourbon or rye. In fact, I ended up with some strange alcohol distilled from coconut palms that I didn’t like and didn’t know what to do with recently, but this turned even that into an old fashioned cocktail that was rather pleasant. It’s amazing how transformational a high quality bitters can be. And this is one bitters I’ll keep in stock.
As for taste it is definitely interesting. At first I tried it in a Xocolatl old fashioned and it was pretty dang good. It has a flavor I would describe as somewhat chocolate, slightly cinnamon and a few other spices and flavor profiles I cant 100% put my finger on. Will be buying this again when I run out.
