What is the difference between cinnamon and real cinnamon?
What some of us don’t know is that cinnamon is most commonly found in two forms – Ceylon cinnamon and Cassia cinnamon. And to be exact, most of the times you’ll find the Cassia version in the market and cassia cinnamon is commonly known as cinnamon.
Ceylon cinnamon has a lighter color and smoother texture. Its taste is more delicate and slightly sweeter than Cassia cinnamon. Ceylon cinnamon sticks tend to be softer and crumblier than their Cassia counterparts. Did you know that Ceylon cinnamon is often referred to as the “true cinnamon” or “real cinnamon”? Ceylon cinnamon is primarily produced in Sri Lanka. Whereas the Cassia cinnamon is usually a mixture of many different types of cinnamon.
One of the biggest differences that Cassia and Ceylon cinnamons have, is that Ceylon cinnamon contains a lot less coumarin (less than 0.004%) compare to cassia. And this is a good thing! Coumarin is a natural compound found in cinnamon.

Coumarin is a naturally occurring chemical compound from the benzopyrene family. As mentioned above medical recaches believe high amount of coumarin consumption can cause health risks
What is Ceylon?
In 1948, the British Colony of Ceylon was granted independence as Ceylon. In 1972, the country became a republic within the Commonwealth, and its name was changed to Sri Lanka.

Until recently, I had no idea that there are two spices sold as cinnamon - cassia and true Ceylon cinnamon from Sri Lanka. The spice used and sold as cinnamon in the USA is Cassia.
Although cassia tastes and smells better, I will be using true Ceylon cinnamon from now on for the following reason.
My recent lab work revealed decreased kidney function, so I did research to find out what could cause a low GFR. That is when I discovered there are two types of cinnamon and that just 1 teaspoon of cassia (the cinnamon sold in the USA) can cause damage to your liver and kidneys. I had been taking 1/2 to 1 teaspoon of cinnamon (cassia) a day as a health supplement for about a month.
I immediarely threw out all my cinnamon purchased in the USA and ordered this true Ceylon cinnamon from Sri Lanka.
I have an appointment in a couple of weeks for another kidney function test, so I will soon know if discontinuing cassia makes a difference. Regardless of the results, I will be using only Ceylon cinnamon from now on.
The ways you can know the difference:
1. A stick of Ceylon cinnamon can easily be broken in two, whereas cassia is as hard as a rock.
2. On the end view of the cinnamon stick, Ceylon cinnamon appears layered (like a stack of crepe paper) and rolled; cassia looks like a scroll.
3. Ceylon cinnamon is tan; cassia is reddish brown.
4. Ceylon cinnamon has a mild fragrance and taste; cassia has a strong fragrance and taste.
5. Ceylon cinnamon comes from Sri Lanka (possibly south India); cinnamon grown anywhere else is cassia.
6. Ceylon cinnamon is MUCH more expensive than cassia.
Scent - almost like old medicine drawer. Not strong, just lacking freshness, 2/5
Freshness - just a okay. 3/5
Taste - mellow sweet with floral notes. With a touch of medicinal aftertaste. 4/5 (generous grading)
Hence the 3 stars out of 5 in overall grading. Satisfactory, but I will keep looking.
