The Blade
VG-10 Steel Core
VG-10 is a Japanese stainless steel that is often utilized in high end Japanese cutlery. It has a hardness, or a HRC level, that exceeds that of most other stainless steel cutlery on the market. Its exceptional hardness means that the cutting edge can be constructed thinner, and therefore sharper, allowing the blade to seamlessly cut through almost any ingredient placed in front of it.
Hammer clad Damascus steel
The hard VG-10 steel is clad in a softer Damascus steel in order to give the blade an added toughness and durability. The hammered texture of the blade eliminates friction and keeps food from sticking to the blade.
Care & Sharpening
Traditional Japanese knife making values a sharp edge, which requires attention and care. Sharpening and honing should be done with only water whetstones. Update: If you have two cooks in the kitchen you need two nakiris... For slicing almost anything that doesn't have bones or hardness that might damage a blade, these are now the go-to knives. My wife found a Shun Classic Nakiri on sale and bought it. Now we can do a contrast and compare. The Shun is a little larger and a bit heavier and on sale it cost less... That said I prefer the Yoshihiro. It is well balanced, comfortable in the hand and overall more attractive. Both are quality Japanese knives, but this looks and feels more handmade than the Shun. (That could be because I am so used to the Shun Classic patterns. There are other more expensive Shun lines.) In any event, if you want something that makes you smile when you take it out of the block and use it, I recommend this one.

It still cuts really well though. 99% of people will think it's the sharpest knife they've owned, unless they're coming from a pro knife. With a little honing though this knife gets insanely sharp, insanely fast. Like cut the tip of your finger off without noticing sharp. The good news is that it also appears to hold an edge well for such a thing knife.
Durability: so far, I'm really impressed with the durability. You can cut all of your food and wash it, dry it and repeat without any need to straighten the blade. As long as you keep it clean and tube it up once in a while, this knife will be solid for a long time.
Overall: I've quickly replaced my Henckles santoku for this knife and the only thing I wonder is why it took so long. This knife is gorgeous, sharp and sized in such a way that it can do nearly anything. If you cook reasonably often this knife is a must purchase.

I haven't been able to play with it long, but here are my first impressions:
1. It's well built. No noticeable edges or gaps. The handle feels good. The blade looked good. It looks like like the picture. So, it's obviously a western style handle.
2. The blade is crazy sharp. I only cut carrots so far, but it was pretty effortless. It came with a great edge. I didn't need to fix it.
3. Price is great. I mean, Shun gets all the love, but seriously look at the prices between the two brands for Hammered Damascus VG-10 steel. I actually work in a lab, so if it will fit, I may just get the blade tested in the SEM to verify the material. ;)
I can't wait to cook more things with it. I'm honestly just looking for excuses to use it. I'll update more later after a week or two of use.
11/12/12 Update. Just was cooking chicken breast in the pan and I had to butterfly the chicken breast to cook it all the way through. This knife cut it like butter. I never have used a knife that cut so well. I applied almost no pressure. Very easy to control the cut.
