Bob’s Red Mills One to one (Blue Bag) flour is my preferred gluten free flour for recipes that call for eggs especially. I have used it for all kinds of recipes, just regular recipes that I just happen to make gluten free and most of the time they turn out great. I have made various cakes, batters, sauces, different types of desserts with this flour and it has been well received by both those who normally eat gluten free and those with regular diets. Actually I hosted an event awhile back where I labeled it gluten free and I had people asking me where my ‘usual’ cake was, and I was like, um, that’s how I always make it. The one person has been eating it that way for years and apparently she’s never noticed it was gluten free.
