Global Knives have two most innovative features - their edge and the way they are balanced. The most important feature of any knife is its edge. The blade is made from one of the finest steels- CROMOVA 18 stainless steel. This special steel is ice-tempered and hardened to a Rockwell Hardness of 56-58, which remains razor sharp longer than any other steel and resists rust, stains and corrosion. The blade edge is ground on both sides of the blade like western style blades; however the edge is ground to a straight point rather than a beveled edge which results in a razor sharp edge that will stay sharper longer. To balance the blade, all Global knives have a unique hollow handle filled with the right amount of sand to create the perfect balance. Global knives are truly unique. Made in Japan.

I heard a lot about global knives for many years. Typically I’ve always had German knives like Henkel or Wusthof. Switching to Global was a little tough at first, the blade is light and well balanced, and the edge is a much sharper v angle. With this said, you’ll have to change how you use you knives for food prep. The knife tends to roll when cutting if you aren’t careful.
Cutting hard skinned fruits and veggies is much easier. Global goes through tomatoes and apples far easier, but get used to a gentle pull and push like it serrated to accomplish cutting more easily. Precise cutting is much nicer with global knives, you can cut meat and onions paper thin. I’ve also found the process of chopping is faster as a result of a lighter blade and the finger support under the blade.
The 8” chef knife is the most versatile Knife you can own. You can live without the paring knife, BUT I use it all the time. I use the paring knife to work on detailed work like separating a lobster tail from its carapace and or cutting meat away from a bone like mutton. It’s also good for coring apples.
The steel is a little softer than German knives. I usually had to sharpen my German knives every 3 months, but the global knives needed to be sharpened ever 1.5 months. On the bright side, sharpening is easier on a global knife. My German knives need a wet stone and a lot of elbow grease, and the Global need a ceramic rod and takes a lot less time to sharpen compared to my German knives. I still have my German knives, but I use them way less frequently than my Global knives. Honestly I am converted the Global knives are just all around better chef’s tool.
