With a folded paper towel I scooped a bit of Crisco each time to wipe over the plates. Be certain to have enough folded paper towel in doing this so you do not burn yourself. Discard several of the first made pizzelles. I like my pizzelles to be a light golden color so I peek just a bit while timing them so they don't become too brown. The pizzelle iron worked beautifully. While the pizzelle iron was operating, it made a few clicking sounds that I do not remember my old one making. I called their customer service number, left a message, and the following day I got a return call. The rep said that the clicking sound is the adjustment being made in its thermostat, and that was normal. I just wiped down the plates after they cooled, placed a folded paper towel between the plates and stored it in its original box. While the booklet does contain some pizzelle recipes, there are many others online. I use vegetable oil in the making of mine and not Crisco or butter. My Italian mother-in-law always used vegetable oil, anise flavoring along with some lemon zest and lemon extract. I do the same, and they are delicious. It is easy to experiment with any recipe as well as how large to make your pizzelle. I tend to make mine about 3 1/2 inches in diameter scooping a bit up in a teaspoon. Using another teaspoon, I off load the dough from the other teaspoon to the middle of the plate. Best wishes in using your Palmer pizzelle iron --- you will love it. I am happy and proud that it is made in my state of Pennsylvania.
I'd also like to add that there is no indicator light for "doneness," but that is not a negative. Each recipe takes a differing time, so you need a little trial and error to see just how long each one takes for you. I sometimes lift up the iron a little and peak to see how they look. Just be careful you don't move the pizzelle or it will mess up the pattern on it (but still be edible). My family likes to eat the "mistakes" as soon as I make them!
