A Classic Copper Pan that Transforms Homemade into Artisan

Like all traditional French jam pans, the Mauviel M'Passion Jam Pan is made of heat-responsive copper in a wide, shallow design that is ideal for making jam, caramel and other high-sugar delights. The unlined 1.2mm gauge copper promotes extremely even heat distribution and a rapid boil, which helps develop natural fruit pectin.

Copper will develop a rich patina over time which will not affect the pan's performance. To keep the exterior looking new, use Copperbrill cleaner.

I hesitated to spend this kind of money on....well, anything really. I read reviews of all different kinds for hours. I own and operate a small farm with about 100 diversified fruit trees and I hate seeing wasted food. So all the imperfect fruits go into my summer preserves for friends and family. I'm picky about my jams, I use the classic pectin-free methods recommended by Blue Chair Fruit Co. in Oakland, CA.....who in turn endorse these pans. It is not unusual for me to face needing to process 30 lbs of fruit at a time, week after week, in summer. I have been scalded by hot jams over and over as I cooked batches on aluminum, steel, Calphalon, teflon pans or pots. The final straw came when a splash of scalding jam missed my eye by a quarter inch. I ordered this. Yes there were cheaper kinds out there, but I realized after researching that the price was directly related to the amount of copper in the pan, and therefore how heavy and conductive the cooking surface would be. When this came, I already had a macerated batch of fruit ready to go. I simply could not believe it. For the first time ever the recipe behaved as the cookbooks said it should. I could stir gently and consistently with zero splashing, all I had to do was get the gas setting on the burner just right. I processed four batches in a row in the time it took me usually to make two....and the flavor was better, and the color of the fruit was brighter because the cooking time was reduced so much. When the batch was finished, not a whisper of a hint of a scorch mark on the bottom, as shown in the photos. This was an unusually large batch, one that I did as an experiment. The handles do heat up but they heated up on the other kinds of pans as well, use oven mitts. I ordered the 15 qt size because of the volumes with which I work. Perhaps for a more occasional cook, the 11 qt model would suit fine. I cannot recommend this beautiful and functional piece of cookware enough, it has transformed a summertime job from misery to joy.

While I cannot speak to this products jam making abilities, I will say it blew away my expectations when it came to candy making!

This pan is very well made. It's a very heavy pan with a thick bottom and distributes heat evenly. If properly cared for I can see this lasting generations.

IMHO the best aspect of this pan is the size. It allowed me to make 6-10 batches of candy at once, literally saving me days of cooking!

If your an amateur candy maker this is a must have for your kitchen!

È bellissima e pesante.
Davvero grande: nella foto è accanto a una bottiglia d'acqua da 1 litro e mezzo, per rendere l'idea.
Per me, fin troppo grande. Vero che non riempirla del tutto consente di evitare gli schizzi, ma ci vuole davvero una grande quantità di frutta per riempirla anche solo a metà.
Quattro stelle perché, anche se mi piace molto e non intendo restituirla, è ammaccata, per fortuna non sul fondo, ma in corrispondenza della maniglia, come se fosse caduta sulla maniglia e si fosse deformata verso l'interno. Niente di grave ma, unitamente al fatto che in molte altre recensioni si denunciano ammaccature, mi fa pensare che Amazon stia vendendo pezzi di vecchie produzioni Mauviel (la serie attuale ha le maniglie diverse e il marchio impresso per esteso sulla maniglia) che non hanno passato il controllo qualità.
In ogni caso, ripeto, una pentola davvero bella.
