Always remove cookware from the stovetop after cooking. Pre-Seasoned Seasoned for a natural, easy-release finish that improves with use. Seasoning is a necessary step in using cast iron cookware. Oil is baked into the pores of the iron at the foundry to prevent rusting and to eventually provide a natural, non-stick cooking surface. Unlike synthetically coated cookware, it is possible to restore the cooking surface of cast iron. Lodge uses a proprietary soy-based vegetable oil to season our cookware. The oil contains no animal fat or peanut oil. The seasoning is functional application and slight inconsistencies may appear in the seasoning finish. The inconsistencies will not affect cooking performance. Easy to Care for Easy: hand wash, dry, rub with cooking oil. It is very important to replenish the seasoning of your cast iron cookware by applying a thin layer of oil after each cleaning. Seasoning is an on-going process. The more you use cast iron, the seasoning is improved. Superior Cooking PerformanceUsing Your Lodge Cast Iron Rinse with hot water (do not use soap), and dry thoroughly. Before cooking, apply vegetable oil to the cooking surface of your pan and pre-heat the pan slowly (always start on low heat, increasing the temperature slowly). Once the utensil is properly pre-heated, you are ready to cook. TIP: Avoid cooking very cold food in the pan, as this can promote sticking. PLEASE REMEMBER: Handles will become very hot in the oven, and on the stovetop. Always use an oven mitt to prevent burns when removing pans from oven or stovetop. Care and Cleaning of your Lodge Cast Iron After cooking, clean utensil with a stiff nylon brush and hot water. Using soap is not recommended, and harsh detergents should never be used. (Avoid putting a hot utensil into cold water. Thermal shock can occur causing the metal to warp or crack). If you are having trouble removing stuck-on food, boil some water in your pan for a few minutes to loosen residue, making it easier to remove. Towel dry immediately and apply a light coating of oil to the utensil while it is still warm. TIP: Do not let your cast iron air dry, as this can promote rust. Store in a cool, dry place. If you have a cover, or lid, for your utensil, place a folded paper towel in between lid and utensil allowing air to circulate. This prevents moisture from collecting inside the utensil, which can cause rust. TIP: The oven is a great place to store your cast iron; just remember to remove it before turning on the oven. NEVER wash in dishwasher. If for some reason your utensil develops a metallic smell or taste, or perhaps rust spots (maybe a well-meaning relative washed your utensil in the dishwasher or with soap thinking they were being helpful), never fear. Simply scour off the rust using a very fine grade of sandpaper or steel wool and refer to our section on re-seasoning. Re-Seasoning your Lodge Cast Iron While maintaining the seasoning should keep your Cast Iron in good condition, at some point you may need to repeat the seasoning process. If food sticks to the surface, or you notice a dull, gray color, repeat the seasoning process: Wash the cookware with hot, soapy water and a stiff brush. (It is okay to use soap this time because you are preparing to re-season the cookware). Rinse and dry completely. Apply a thin, even coating of MELTED solid vegetable shortening (or cooking oil of your choice) to the cookware (inside and out). Place aluminum foil on the bottom rack of the oven to catch any dripping. Set oven temperature to 350 � 400 degrees F. Place cookware upside down on the top rack of the oven. Bake the cookware for at least one hour. After the hour, turn the oven off and let the cookware cool in the oven. Store the cookware uncovered, in a dry place when cooled. We measure from outside rim to outside rim across the top of the cookware, not the bottom. What type utensils are recommended to be used with Lodge products? We recommend using wood or silicone utensils to avoid scratching. Why should soap or detergent not be used to clean cast iron cookware? Soap and detergent are used to break down and remove oils. Since the seasoning of your cast iron consists of oil, cleaning with soap will strip or remove the seasoning from cookware. Are there any types of food that are not recommended to be cooked in cast iron cookware? Foods which are very acidic (i.e. beans, tomatoes, citrus juices, etc.) should not be cooked in a cast iron utensil until the cookware is highly seasoned. The high acidity of these foods will strip the seasoning and result in discoloration and metallic tasting food. Wait until cast iron is better seasoned to cook these types of foods. Lodge is now producing cast iron cookware that is pre-seasoned, saving you the step of seasoning it before using for the first time. A quick rinse and dry right out of the box and I was cooking. I did a chicken pot pie recipe that was super easy and used refrigerated crescent rolls, rolled out flat, for the crust. A fair amount of coals underneath at first to crank up the heat and pre-cook the chicken and then saute the onions and start the potatoes. Throw in the rest of the ingredients and get to a boil, stirring occasionally, then take a few of the bottom coals and put them on the lid, lowering the bottom heat and getting that important top heat going, then just place the unrolled crescent rolls on top, cover and let it bake. So-o-o-o good!!! Last night I did tamale pie for a party we went to. With hamburger and some homemade Chilean Langaniza sausage I'd made, I added some corn, Ortegas, olives, bell pepper, enchilada sauce, garlic, freshly ground coarse black pepper and chili powder. That cooked for a while and I mixed up some corn meal with milk and eggs, poured it over the hot food, covered with shredded cheese and cooked until done. Outstanding! The pot was emptied while all the rest of the food got token pickings. There is something about cast iron-cooked food... and it's healthier for you than Teflon.
I love barbecue, cooking "low and slow" to get that tenderness and smoky flavor into my 'cue, and this oven allows that same principle to be incorporated (without the smoke, of course) in just about any meal. You need to nurture the coals during any cooking session, so someone must be there to tend them if you cook at really low temps, but that's about the only drawback, and most people will never do that anyway. I bought the metal table with windbreaker sides from Lodge and can't wait to use it. I cooked my first meal on my concrete patio and, while it worked great, it will be nice to get the oven up so I don't have to stoop to the ground to tend coals and stir/check contents, etc. I cooked the second meal under the shade of my canopy as it was sunny and warm, and I threw down a concrete paver that is about 2' x 2' and it worked great too... but I really want to use that new table!
Cooking a huge amount? I got the 12" oven and it'll cook enough food for at least ten people in one swoop, and you can always buy the 12 qt. oven that will supply a single pot of food for a huge group but if you need to cook with multiple ovens at the same time, simply stack them. Once you get used to the cleanup method of NO SOAP and get your process down, it is really easy to clean up after cooking too. These products are simply incredible and I wish I had known more details about them before. They last for generations; people actually pass them on to their children. Looking forward to a long relationship with this product!

Skip the silicone handle as that is NOT reliable at all -- started falling apart after just a couple months of usage. I just use a towel to hold the hot handle.
Lid is a must for camping. I also like the Lodge "A5-11" tool to lift the lid with.

Then scrub with metal (chainmail scrubber) or wood to get the gunk off. Drain, rinse, heat up again to evaporate all the water, then apply a thin film of oil.

Skip the silicone handle as that is NOT reliable at all -- started falling apart after just a couple months of usage. I just use a towel to hold the hot handle.
Lid is a must for camping. I also like the Lodge "A5-11" tool to lift the lid with.
If you're going to use it at a primitive campsite, I recommend picking up (or making) a tripod system where you can hang it by a chain over the fire. We cooked all our meals that way and it worked perfectly. The lipped lid is great too - you can take some coals from the fire and put them on top to help speed the process.
Do yourself a favor and get yourself a lid lifter, a good pair of fire gloves, a plastic scrub brush and a whisk broom for brushing the lid off (you don't want ashes spoiling your hard earned dinner!). Also, read the manual that comes with it so you understand how to take care of, and use, your oven. I also recommend joining the Dutch Oven Cooking group on yahoo. You'll get great information on how to spin the lids for a tight fit, cook in them, hook up with other like-minded Dutch Oven folks in your area, etc.
Now for the negative: I did have to send the first one back as the lid rocked quite a bit (about 1/8"). A bit too much for a Dutch Oven, and a bit disappointing based on what I read about Lodge's reputation. You want the lid to fit pretty good so that you can build up a bit of pressure inside the pot and, more importantly, not lose your cooking heat. In the outdoors, efficiency is important!
All-in-all, though, you can't beat Lodge for overall quality, and you can't beat Amazon for customer service. The return process was pretty effortless and the second oven had a lid that fit with very good tolerance (like 1/16" or less). Read carefully: A little bit of lid rocking is okay!!!
Following the trip, a scrub down with water and a brush, followed by drying and applying a light coat of olive oil, made it look brand new - even after it had been exposed to open flames and hot coals directly on the lid.
So, aside from having to do a what I think was a little quality control for Lodge, I'm very happy with my purchase and recommend this product. I'm giving it 5 stars because, in the end, I got great customer service and an affordable (dare I say beautiful? Yeah, I love it!) oven that will last *literally* for generations!
