I have been hesitating on the IP for a long time. I was waiting for the Ultra 3qt to come back, but it seems like that's not going to happen. SO I finally caved to peer pressure (ah!) and got this one instead.
And oh, my. YES. SO MUCH YES.
I haven't done much yet, but the simple fact that I can finally steam veggies as much as I want to with zero fuss, next to zero dishes, and with barely any work, have more than sold it on me. In a week, I've eaten stuff I love but almost never cook.
Steamed cauliflower and broccoli? Check.
Steamed whole artichoke? Check.
Favorite French beef stew that I only ever get to eat when I go back home? Check.
Chicken soup? Check.
Very few dishes? Check.
Clean kitchen? Check.
Food prep in the morning because you can delay the start or slow cook with no supervision? Check.
This little baby is now my Air Fryer's best friend, and the rest of my cookware hates them. My stovetop too. I cook a whole meal and end up with one pot to clean (or two if I used the steamer basket) that doesn't need actual scrubbing, plus the air fryer's basket, and the cutting board. That's it.
All that being said, I wish it had a few things it doesn't:
- Ability to set the temperature lower (in yogurt mode) so I could make fromage blanc ( a cross between yogurt and fresh cultured soft cheese),
- Higher sauté temp. As it is, it's barely hot enough to sear anything.
Oh, and get yourself a steamer basket. It comes with a trivet that will hold big food chunks out of the water, but the keywork here is *big* chunks - and it's *below* the food, so good luck taking it all out. If you want to actually steam stuff, get a steaming basket. Also negates the need for a colander.
I also got the silicon lid, so I can put the leftovers in the fridge directly without having to transfer them. You will also need some kind of mitt because the pot can get hot and doesn't have a handle.
Good quality
For a long time, I wasn't a believer. I mean, I'm all for electronic gadgets in the kitchen. If I want to cook something for hours until its delicious and tender, I've got a traditional slow cooker. If I want to feel fancy when I'm preparing perfectly-cooked meats, I've got my Anova sous vide, and a wireless meat thermometer for the grill. But friends and family were always like, "Oh but you gotta get an Instant Pot!" But no, I didn't _have_ to get an Instant Pot.
Eventually, though, there was a sale, and I bought one. Now, I didn't really have any meaningful concept of the differences between the sizes and models. This 8 quart Duo Plus came up as a daily deal thing, and I bought it. It was a good price. And you know, it can make like 2 gallons of yogurt or porridge or something, so...great...whatever.
I'll be the first to admit that I didn't count on the sheer size of the thing. At the time, it was just my wife and I and our two-year-old daughter. When I unboxed this 8-quart monstrosity, I experienced a moment of trepidation, a fear of ridicule from my wife, who would point out that we don't need a really really ridiculously huge pressure cooker for just us. But I moved on from that anxiety, and I set about putting this thing to work.
The first time each of us used it, we felt what I'm sure every other pressure cooker rookie feels at first—the crippling fear that you're about to die in a horrific high-pressure home explosion, and that your family will always be embarrassed to explain that they were related to one of _those_ statistics. But, as I'm sure most pressure cooker owners do, we survived.
And it didn't take long before we realized (my wife especially, since she does a lot of the cooking) how fantastic this giant culinary autoclave really is. Cook an entire dinner of roast chicken with red beans & rice in one go? Done. Steam a whole mess 'o veggies when some friends show up with their gaggle of kids for dinner? Easy. Meatballs. Tamales. Artichokes. Corn on the cob. All quickly and (perhaps most significantly) very simple. And there's just a single pot to scrub at the end! Then just throw it back in the pantry until next time.
Last night I think I reached my true peak of giant Instant Pot appreciation. I cooked two racks of BBQ pork back ribs. I thought about just taking the meat to my dad's house and letting him do them in the smoker. But that would have taken like 10 hours! I could have tried the sous vide, but that would required me to cut up the ribs into ziploc-sized portions, to come up with a way to cook that much meat together in a bigger cooler than I usually use, and to then clean up the mess and cook for at least a few hours to get a good texture. And who has that kind of time when there's football to be watched and naps to be taken? Want to know how long I spent preparing this meal in the Instant Pot? We wanted to eat at 6pm. I boldly began my process at 5:00.
- Five minutes unwrapping and rubbing the meat and stuffing it all into my countertop sauna. I'll leave the visualization to you.
- Twenty minutes as the Instant Pot got up to cooking pressure.
- 25 minutes cooking + 2 minutes decompressing (and filling the house with delicious porky aroma)
- Five minutes painting on some sauce and letting everything sizzle on the grill.
Seriously. Delicious, perfectly cooked barbecue ribs—enough to feed at least eight people—ready in about an hour.
So yeah. I'm a fan. And even though it's comically large when we're just cooking for ourselves, I'm glad I got the 8 qt monster after all. I haven't even explored all of the fancy other options and space-age things it can do. But I will. If only because I can. Thanks, Instant Pot! <insert smile with tooth sparkle and "ding" sound>

I have been using stove top pressure cookers since I started cooking, my parents always had one as well.
I found that with 4 kids aged 6 and under, the stove top model became too nerve-wrecking to use, since it really does need to be babysat and you can’t just walk away from it.
The electric pressure cooker has been the perfect solution for this problem.
I really love the preset buttons, because you can essentially program them to the times you tend to use most.
For example, I make pot-in-pot oatmeal often, and I cook it for 10 minutes. If I just hit the “Porridge” button and set it to 10 minutes cooking time, this will be saved and I don’t have to adjust the time again.
I think the buttons are underrated. You can really make good use of them by setting the times to your individual needs.
The crevices and nooks of this appliance are not necessarily EASY to clean, but it’s also not particularly difficult.
Every so often you can run a short cycle with vinegar water, I don’t have a too big of a problem with odours sticking to the sealing ring that way — it’s not really a problem anyway because any odour from the ring won’t have an influence on the flavour of your food. I never had multiple sealing rings for my stove top models, either.
Bottom line: This product is a time saver, and a serious advantage when cooking for a family with several children.
The 8 quart model is perfect for my family.
The problem I find is that there are so many variations on the product that it is hard to know how to improvise when you have a product that does not have certain functions. For example, my product does not have a steam function. I don't know exactly how to use it for steaming. Do I use the PRESSURE COOK button on LOW? I have not found any equivalent explanations yet.
I am enjoying using this product. I have not yet found out what the default temperature setting is for making YOGHURT with the yoghurt setting. I tested water with a thermometer and it appears to heat up to 100 degrees F. I don't know if that is a faulty product or not, because research tells me that yoghurt is supposed to be incubated at 110 degrees F. There are all kinds of people on the internet showing how to make yoghurt but I don't think they are all very scientific. If you want the probiotics in a yoghurt to multiply, temperature is important.
I have ended up using the SOUS VIDE function on a 110 degree F setting so, for me, the YOGURT setting is unnecessary, especially as experts seem to recommend 110 degrees in order for the probiotics in a yoghurt to multiply. As my purchase only registers 100 degrees on the YOGHURT setting, I still don't know if it is a faulty setting or if it is the default setting, so I have not use for that setting.
I did contact the company because I also had a problem on the website registering my product. No instructions were provided about registration, by the way. It only occurred to me as an afterthought to look for the instructions on the internet about registering. The website malfunctioned, so I wrote to customer service twice, asking them to manually register if for me. They ignored me both times.
The reason it comes with two lid seals is that the silicone seals absorb cooking smells. I do have a stovetop pressure cooker. The seal is made from a different material and does not absorb smells. I would have thought that, with such a quality product, they could have found a seal that does not retain cooking smells.
