360 Cookware is made of three primary metals. The inside layer (what primarily touches your food) is T-304 Surgical Grade Stainless Steel and the range is 18/8 to 18/10. “Range” (18/8 and 18/10) refers to the percentage amount of chromium and nickel in the metal. In this case, it’s 18% chromium and 8% to 10% nickel. The outside layer (what touches the heat) is T-400 Series Stainless Steel which has a lower nickel content and high carbon steel content to interact on induction cooktops. These two layers of stainless steel surround a layer of aluminum, which ensures superior heat conduction.

What about layers? How many “plies” does it have?
If you’ve done a little cookware research, you’ve probably heard a few different terms relating to how many “layers” the cookware has. The fact is while stainless steel is a safe, non-porous surface that transfers no harmful chemicals into your food, it’s not a great conductor of heat. Aluminum conducts heat very well, but it can leach harmful metal into your food. Alone they have their own pros and cons, but put them together and WOW! It's a perfect combination!

I'm new to cooking with Stainless Steel. What's the best way to clean it?
White or light-colored stains are due to mineral deposits from certain foods. Use baking soda or a stainless steel cleaner and make a gritty paste. Work over the area to remove any stuck on stains. For stuck on food, you can add soapy water or a mixture of white vinegar & water to your pan and reheat over medium to help loosen any burnt on food.

I don't like to cook but I'm health-conscious and mindful of the increasingly well-known hazards of high-temperature cooking. I also wanted stainless steel, not ceramic, interior because ceramics can leach lead into the food. I initially balked at the price of this set and bought the only other SS interior pot I could find - a multifunction pressure cooker. But it took too long to figure out, and after it menacingly spewed scalding steam in my direction, I gave it up. Soooo.... I paid a premium for this slow cook-only, stainless steel interior pot and heating base. This cooker is EASY. It's so simple that it actually makes cooking enjoyable - you focus on the food, the spices, the aroma and texture, not the buttons, timers and valves. Most recipes take a very short amount of time to prepare, and then you just go about your business as tempting aromas slowly permeate the kitchen. I read the directions very carefully and probably avoided the few mistakes you can make, like putting dry foods in without any moisture. The pot cooks on vapor that forms inside the "seal", so if it is a dry item like pasta, you must rinse it to provide water for that steam. Naturally moist items like fruit, most vegetables and meats, seep out their own moisture and cook in it. I read that the pot burned meat for some reviewers and thought sure, food likes to stick to SS unless you smother it with grease. In fact, I replaced all my SS pans with cast iron for that very reason. But even when I "dry" seared beef cubes in it for boeuf bourguignon, just as the instructions said, the beef got stuck first but then loosened after it seared a bit. This made me start to believe that maybe the construction of this pot is special, as the advertising touts it. One thing I noticed deviating from the instructions is the cooking times. I have the small pot (1.3q) and if it cooked something on high for 6 or 8 hours, it would probably burn or melt into a saggy unappetizing mess. Meats cook easily on 3 within 3-4 hours, so do potatoes, and you have to throw other vegetables in for literally the last 15 min unless you want them overcooked.
I will be experimenting with other SS pots on this heating base to see whether you really need to pay the extra $$$ for the original pot. If I find out anything interesting, or experience any issues down the road, I may update my review. But so far I am loving this slow cooker
The stainless steel pot is heavy gauge and can be used on a stove. The cooker will prepare many items you may bake in an oven.
I have made meats and sweets in this cooker since purchase and find it to be the most used kitchen appliance in the house, aside from the coffee pot.
The price may stop you from giving this serious consideration, but if like me with a kitchen filled with LeCrueset, you will find it is worth the extra money! This kitchen gadget is perfect!
I love that this unit can go from stove top-gas in my case right to the crock heating unit, so you can speed up the heating of the pot, and brown your meat and onions. It's also a plus that the pot and lid are dishwasher safe. Storing the unit is nice for NYC sized apartments as you can flip the lid inside out and store the heating unit separately.
Check out all the You Tube clips if you need recipe ideas. I really do believe if you "spin" the lid as soon as the pot start to steam, you do lock in the flavors. Anyway, totally worth the ~$200 spent.
