I waited weeks to write this review.
After reading some of the negative reviews about the canner not working after a couple of batches, I decided I wanted to really put some jars through it before writing a review. I've done well over 100 jars in it - everything in both photos of finished product was done in this canner. I have done as small as one batch in one day, to as many as 7 batches in 2 days. I've also gone for a couple of weeks in between uses to see if setting made a difference. Some background for me: I am an experienced canner who has taken multiple courses on food preservation, and taught canning classes in a commercial kitchen. I really wanted to find out if this electric canner was worth the price compared to the usual way of canning.How many jars fit inside?15 regular mouth jelly jars.9 wide mouth jelly jars in a single layer, but if you have the divider to double stack, you can get 18 in.9 pint or quart jars.How fast is it?About as fast as a regular stove. It holds a lot of water and that takes a lot of time. I didn't notice it being particularly slower or faster.What are the benefits?It frees up a stove burner. This is especially important for people like me without two large burners in good positions. I cannot easily run both a canner and a large cooking pot for jam at the same time on my stove.It can allow you to run two canners at once. I used this feature with some of my raw pack jars.It's super easy to set it right next to the sink and stretch the faucet over. No more lugging heavy pots over to the stove.What are the cons?If you don't turn the temperature all the way up to "canning" the water will never boil. Fill it up hot, turn it all the way up, and do it all before you start laying out ingredients and getting ready to can.It's inconsistent heat. Just like an electric stove burner that turns off and back on again every few seconds. This doesn't affect the usability, just don't be surprised if you have the temperature lower when your food boils, stops, and boils again.To use the drain spout over a kitchen sink, you may need to raise the canner. This isn't a big deal - just stick a cutting board under it before you fill it up.Who would benefit from using this?Canners with limited stove spaceCanners with joint difficulties who would find moving a heavy canner difficultNew canners who struggle with maintaining a consistent boil.Does it work as a giant electric pot?Basically, but it's a pain in the butt to clean if you use it to make the Ball barbecue sauce recipe. So while you could use it to boil a giant batch of bone broth, chili, or soup for a potluck, ask yourself first if you really want to clean it afterwards, especially when it burns to the bottom of the pot.Overall: It works, it did seem to make the process easier, and I would buy it again.

I do a LOT of canning, all through the year. Some small batch, some large batch. My problems? I have a glass-top stove with only 4 burners of various size. By the time I get my huge pot on the stove for my quart-jar canning, my small pan with my lids, and whatever pot I am using to make whatever I am canning, my stove space is beyond maxed out and I worry about my glass-top stove. So when I saw that Ball was releasing this, I saved and saved and saved so I could jump on it as soon as it was released. And I am *so* glad I did!

I pretty much paid little attention to the instruction manual, other than a quick glance. It is fairly self-explanatory, except for the large metal disc with holes in it. It goes together easily, and is marked clearly for water limits inside the canner. I put it together, and immediately set about making some taco sauce from the Ball canning book.

The electric canner is a dream to use. It heats well, though it will not get to a full rolling boil unless you have it at the canning setting. It got to a full rolling boil in a little less time than what my pot would be on the stove (I tested it the night before, out of curiosity.). I put my jars inside the canner to the high setting and let it heat up while I made the taco sauce. This way, the jars were kept hot while I waited. Then I bumped it up to the canning setting about 10 minutes before I was ready to jar the sauce. From there, it was a simple matter to pull the jars, fill them as usual, and stick them back in the canner. As for the large metal disc? That is to help conduct heat within the pot during canning and to help diffuse the boiling water. You simply set it on the tops of the jars when they are loaded, and pull it out by the handle when they are done! I also noticed that this prevented the jars from rattling around within the canner, which I appreciate.

I loved having the pot by my sink, as that makes it so much easier to fill (and empty). My stove was less cluttered and more efficient, and the canner holds several more jars than my old pot. At this point, I don't have any cons - but it's a new piece of equipment, so I will be curious to see how well it holds up to lots of canning during the busy summer season.

In short - while I have not gotten any of the other FreshTech equipment, as I couldn't justify the price for the limited usage, this will truly be in fairly constant use in my house. If you are looking at any of their pieces, this would be the one I would recommend over any of the others. Throw in the steaming capacity and the ability to use it for drinks (summer parties!), and it really is an excellent piece of equipment for a good price.

Bought this in 2018 & just finally took it out of the box this year. I used it first to blanch some beans & couldn't even get it to boil. Online search told me it needed to be plugged into an outlet with nothing else on the circuit. Sadly, that means it’s nowhere near the sink or stove, so not very convenient. Once I found the right outlet, it worked (but still wouldn’t boil on the high setting, only on canning). It is still much nicer than the huge pot on the stove, as I was terrified to break my glass top. I will get a quote on putting the outlet by the sink on its own circuit for this. Everything I canned got a good seal, no problems. Easy clean up
