Anyone used to standard supermarket cinnamon will smell this and think it's weak because the scent is quiet and subtle in comparison. However Ceylon cinnamon, a.k.a "true cinnamon" is, in many folks' opinions, far superior in flavor, sweetness, and how beautifully it grinds & crumbles. Supermarket cinnamon sticks, for instance, are hard as a rock and you almost need a hammer to break a stick into pieces whereas you can easily crush a stick of Ceylon in the palm of your hand. The two types of cinnamon come from completely different trees. They're both the bark of the trees and since Cassia (supermarket) peels off in thicker and stronger smelling rolls and maintains its shape through crazy transport conditions, it's considered more attractive and shelf stable than Ceylon. Ceylon is a lighter color overall, but with variations in shade (cassia is always the same color & shade), it comes off the tree in a much thinner and more fragile roll, and the scent is comparatively mild.
But the flavor!! I'm in love with Ceylon cinnamon and have been since the first time I tasted it in warm maple-cinnamon milk... it was like all of the sweet, spicy flavor of a Cinnabon cinnamon roll but in a mug.
I was so happy to find this cinnamon in a jar, ground. Usually, it's in bulk bags and more expensive than a bag of an equal weight of Cassia. Finding this was so awesome and I've already made a small dish of cinnamon sugar with it. So good on hot, buttered (melted in) toast!
