I'll upgrade if IP ever comes out with a WiFi IP that can hold 7 quart jars and still reach 15psi. Otherwise, the Ultra does everything I need. I specifically chose this model for the "Ultra" function, which allows me to set temperature parameters other than the preset buttons. I don't need the WiFi IP because the Ultra has a time delay function...and who really needs to control or check their crockpot from a phone app? The whole reason you use a crockpot is to set it and forget it, right? Although I like the sous vide function and 15psi capability of the Max, the Ultra can still sous vide using the Ultra function. The Max isn't available in an 8qt size, so it can only fit 4 pint jars for canning, which is kind of useless. Plus, the reviews stated the Max takes too long to heat up compared to the other models, and the sous vide and 15psi functions were "suspect." So, I'll let IP work out those bugs before I upgrade. For the price point, the Ultra gives me the best value for my money.
PREVIOUSLY: I received my 8 qt Instant Pot Ultra five days earlier than expected. GREAT JOB shipping it quickly and safely! It's in perfect condition and all the extras were included.
I did the initial test run, as suggested. It worked well. I will be cooking sous vide steaks tonight using the Ultra function, yogurt tomorrow using the program button, and pressure cooking something from the IP cookbook tomorrow night. I'll update my review to let you know how it worked.
I'm so glad I chose the 8 qt over the 6 qt. even though we're empty nesters. It takes up less space than my previous crockpot. I plan on using my IP for weekly food prep and daily meals. This size will be perfect!
I plan on buying all the IP accessories rather than the offbrand ones due to some of the problems others have encountered. I'll update my review in a month or so to let you know how they all work.

Dear instant pot designer, cover it with plastic for safety reasons on the next model and improve the steaming rack. Apart from that, it’s a great pressure cooker, it looks elegant in my kitchen. I gave it 4.9/5 Stars.
The Instant Pot is ideal for replacing the slow cooker for most things, but in my case I still prefer my Tiger Thermal Magic Cooking Pot for soups, simply because the vegetables don't turn mushy at all. If I don't mind mushy vegetables in a soup, than the Instant Pot is fine. The Instant Pot is truly brilliant for cooking super tender and mouth watering meats in a very short period of time (tried Beef Short Ribs, Chicken Winglets & Drums - all fall off the bone, incredibly tender, but sometimes overly as too much meat falls off the bones and your left with a bit of a mushy mess).
I chose the Ultra series thinking I wanted the best that Instant Pot offers, but its not at all necessary. Why pay extra when all it gives you are additional programming, which you can easily manually set yourself. I still manually set the time on my Ultra, so there really isn't any advantage in the Ultra series versus the lower model series. All the other models (Duo, Duo Plus, Max, Lux) are all acceptable. So really the primary decision all comes down to what size you want, and though 6 Quarts is great, 8 Quarts is much better for my family. With 8 quarts, I can easily make enough to skip having to cook every day, and thats a big bonus.
The 8 Quart Instant Pot is quite big and heavy, but I love it. Out of the box it does look a bit intimidating, and pressure cooking has a history of scaring people, but this Instant Pot truly is very easy to work with. I quickly skimmed the owners manual, and was off cooking in no time, and I have yet to encounter a bad cooked meal. I search online for a variety of Instant Pot recipes and it makes it that much more fun, just to experiment, and to share recipes with other Instant Pot owners, which are growing in numbers very quickly.
I bought the 8qt Ultra and frequently make leftovers to store away in the fridge for days when cooking just isn't an option.
That said, the Instant Pot doesn't come without a learning curve, so let me share a few quick tips for anyone new to it.
1. Deglaze! After sauteing meat or veggies, there tends to be a little browning on the bottom of the pot. Add some water, broth, or other fluid depending on the recipe and scrape it up with a wooden or bamboo spatula! (You don't want to scratch up your nice, new pot.) Make sure you get all of the brown stuff up before adding more ingredients. No one likes a burn notice!
2. Is your pot reflecting rainbow lights from the bottom or does it have something a little stuck to it? Maybe it's just starting to lose its shine. Soak with white vinegar for a while, then wash it out. The pot will look like new.
3. If you have an 8qt pot, you're likely going to come across a lot of recipes intended for the 6qt. No problem, but this might result in liquid levels being a tad low. If you aren't sure, then add an additional 50% to the liquid levels and you'll be good. Better safe than burn notice.

I bought the 8qt Ultra and frequently make leftovers to store away in the fridge for days when cooking just isn't an option.
That said, the Instant Pot doesn't come without a learning curve, so let me share a few quick tips for anyone new to it.
1. Deglaze! After sauteing meat or veggies, there tends to be a little browning on the bottom of the pot. Add some water, broth, or other fluid depending on the recipe and scrape it up with a wooden or bamboo spatula! (You don't want to scratch up your nice, new pot.) Make sure you get all of the brown stuff up before adding more ingredients. No one likes a burn notice!
2. Is your pot reflecting rainbow lights from the bottom or does it have something a little stuck to it? Maybe it's just starting to lose its shine. Soak with white vinegar for a while, then wash it out. The pot will look like new.
3. If you have an 8qt pot, you're likely going to come across a lot of recipes intended for the 6qt. No problem, but this might result in liquid levels being a tad low. If you aren't sure, then add an additional 50% to the liquid levels and you'll be good. Better safe than burn notice.
