Prepare the PanUsing a pastry brush, grease the pan thoroughly with solid shortening and dust with flour. Or, use a baking spray that does not contain lecithin. Be sure to coat all the crevices in the pan so the cake will release easily and the design will be sharply defined. |
Filling the PanSpoon the batter into the pan slowly to prevent the formation of air bubbles. Tap the pan 3 times gently on a work surface to release any bubbles that may have developed and ensure the batter reaches all crevices in the design. Using a rubber or silicone spatula, spread the batter so the sides are slightly higher than the center. The cake will bake more evenly and be less likely to form peaks. |
Baking the CakeBake in a pre-heated oven for the time indicated on the recipe. |
Removing the Cake from the PanTransfer the pan to a wire rack and let the cake cool upright in the pan for 10 minutes. Then tap the pan firmly a few times and shake it gently to help loosen the cake. Invert the pan onto a cooling rack and allow to cool completely. |

How It's Made
Our beloved Bundts are produced with lots of hand touch and care, ensuring that they will last for a lifetime. We've perfected this process over the past seven decades--there is a lot of science behind created the best Bundts on earth! At the die casting facility, molten aluminum at temperatures of over 1200 degrees F is ladled into a chamber where an arm rapidly pushes the liquid aluminum into the die (mold). This takes place in a fraction of a second, and the aluminum solidifies as it hits the cooler mold. The two halves of the mold open up, releasing a very hot but solid aluminum Bundt pan.
The pans have razor sharp 'flash', or left over aluminum, that is protruding from the perimeter of each pan. The flash is trimmed to a rough perimeter before the pans are sent to our main processing facility. There, they undergo a series of secondary finishing processes, including vibratory deburring in a chamber of ceramic pebble, shot blasting with stainless media to 'roughen' the parts, and a perimeter routing in a CNC machine to smooth the edges and trim out handles. Next, they are thoroughly washed, and then sent to coatings to be sprayed and cured with PFOA-free premium nonstick. By the time a Bundt pan has left our factory, it has been touched by nearly two dozen sets of hands, ensure that you're receiving the best Bundt pan in the world.

Next point, you must HAND wash this with mild soap and warm water. The manufacturer tells you so. Why? Because it has a coating on it. Use a gentle sponge. Those who claim that the cake came out easily the first time, but not in subsequent uses probably did not properly HAND wash the pan and messed up the coating. I recommend NOT using a knife or other metal utensil to loosen the cake. Use a spatula so you don’t scratch the coating.
This is a wonderful pan that, if properly cared for, should become a family heirloom.
The manufacturer says it is best to apply butter (or other grease) with a silicone brush and ensure you generously coat all the crevices. Don’t forget the center. I also greased the rim. See my picture of a properly greased pan. They also recommend flouring the pan. I didn’t find it necessary. I find flouring messy and harder to clean. Your choice. I cooled the cake for about half an hour and it readily came out. Place a plate on top of the cake in the pan and turn it upside down. You can see from my picture that the batter rose to the very top of the pan. It came out perfectly.
I believe the max heat it can handle is 400 degrees Fahrenheit.
It may look full-size in the pictures. It is HALF the size of a regular Bundt pan. Highly recommended.

I had been avoiding baking my favorite Bundt-style cakes because the cakes were simply too large to use up in a reasonable amount of time. Now with two of these mini-pans I can make one recipe, dividing the batter evenly between them and end up with one small cake to freeze or give away and another for immediate use. Perfect! It wouldn't be difficult to halve a recipe to make only enough batter for one cake as an alternative.
The first cake I tried baking in these was a chocolate pound cake (check verybestbaking.com and search for Rich Chocolate Pound Cake if you'd like the recipe) and they came out beautifully. The cakes released from the pans easily without damage after cooling and looked terrific. Just remember to adjust the baking times to account for less batter. I found for this pound cake, for example, 35-40 minutes in a 350 degree (Fahrenheit) oven was perfect as opposed to the 55 to 65 minutes for a full sized cake as suggested in the recipe.
The first time I used these, the cakes came out slick as a ribbon--no sticking. Sprayed the pans with Baker's Joy, baked for 45 minutes, let cool for 10 minutes on a wire rack, turned them out, and presto, two beautiful mini cakes. One small cake makes a better and prettier presentation for sharing then just cutting a cake in half. I'm delighted to find these--didn't know Nordic made this size. Was in Destin, Florida, and my daughter just happend to find two of these (the last two they had) in a kitchen store. I came home, looked on Amazon, and sure enough, found them, just as I thought I might--and at a better price! (Made in the USA, too)

Am Anfang habe ich wie vom Hersteller beschrieben die Form mit Butter eingereibt, dann mit Mehl bestreuet. Mittlerweile besprühe ich die Form nur mit dem ganz einfachem Backtrennspay, klappt auch sehr gut, nur ein Tick nicht so perfekt wie mit Butter und Mehl.
Ich werde definitiv weitere Formen von NordicWare kaufen.

Turned to Chowhound for community advice and seemed like this isn't the standard. Returning this.
