A Diagnosis and Decision
For months, Danielle suffered from drastic weight loss, joint pain, and malnutrition. After countless doctor visits, she was diagnosed with a severe form of ulcerative colitis at age 22, just two months after getting married. Despite her expansive array of medications and prednisone steroids, Danielle found herself hospitalized numerous times each year, admitted repeatedly for multiple blood transfusions due to morbidly low hemoglobin levels. Left with a choice between surgery or a life-long weekly treatment with harsh side effects, Danielle began her own research to explore other options. A friend’s success on the Specific Carbohydrate Diet (SCD) led Danielle to give it a try, only eating grain-free, sugar-free, starch-free, and unprocessed foods. Although no doctor would support a dietary change as a part of her treatment, Danielle realized that she could take things into her own hands to achieve real results.
Cooking by Necessity
Danielle noticed improvement, but committing to a new, drastically different diet was not easy. When her son was just nine months old, she had an extreme setback thatcaused her to be hospitalized yet again and required multiple blood transfusions. She began eliminating more food groups, including grains, lactose, and legumes, following a plan that closely mimicked the Paleo diet. Seeing drastic progress after just forty-eight hours, Danielle began dedicating her free time to creating delicious comfort foods that could be enjoyed on a restricted diet. She focuses on flavors and textures, refusing to feel deprived despite her limited food choices.

Danielle started her blog, Against All Grain, to help others suffering from similar ailments continue to enjoy food. With all that out of the way, I can state that I am very happy to have this book as a part of my cooking library. I've had the book about a week and have already made three recipes: the mexican chicken soup, the pulled pork, and the breakfast biscuits. The soup and pork turned out delicious and got raves from my BF, who devoured them. I did not share the biscuits with him :) they are very good though very rich--which is also good, because one doesn't need to eat a lot of them. Though I don't often turn to recipes for things like salad dressing, I find the basics in the back of the book very helpful and inspiration for creating my own spice rubs, barbecue sauce, and so on. For a long time my diet was based around my (very good, if I do say so myself) homemade bread and other baked goods, so cooking without grains is a big change for me. Danielle makes it easy and inspiring. I agree that in general her first cookbook is more innovative, but given that the title states that the emphasis here is "Simple", that's not surprising.
Highlights for me:
--The tidbits add a lot in terms of understanding recipe variations and techniques (eg, the quickest way to poach chicken for chicken salad)
--Throughout there are make-ahead suggestions, extremely valuable for busy people!
--I really appreciate the guidelines on how long things can be stored.
--I love the emphasis on cooking once for several meals. I try to think like this anyway, but sometimes having a guide is quite useful
--Though I am unlikely to use the meal plans as written, they are immensely valuable to me in seeing what a couple of months of paleo eating could look like.
--I don't have a slow cooker but I've recently started making the slow cooker recipes with a dutch oven in my oven. Put the pork in last night when I went to bed, woke up to delicious smells!
--Since I have family members with various allergies, I appreciate the icons for nut-free, dairy-free, etc, even though my diet is not that restrictive.
If you've been cooking meat your whole life you probably don't need this book. If you are an expert at cooking ahead and re-using leftovers, you may not find much new here. If you've been eating Paleo for a long time, there might not be anything in this book you haven't encountered already. But if you are new to any of these things, you will learn from this book. I'm very happy I bought it and it will soon be one of the most-used books in my kitchen.
So with the help of this book I have made delicious simple meals that are full of flavor and with built in ideas for the left overs. Danielle understands those of us that have low energy and need it all just made simple.
My family likes the recipes. For instance: The roast chicken is gourmet. We had it for a family gathering tonight. I use the bread recipe from her other book for sandwiches for lunch tomorrow. I have been following the week 2 menu for about 10 days now and I am able to get a meal on the table on time and everyone can eat the same food. Our son with the worst allergies frequently comments how much he likes just eating everything with everyone else. He volunteers to help me get the meals ready now! So I have simply put our whole family on the Paleo diet allergies or not to simplify my life and it is working.
This book is a game changer for our family. Plug it in and run! I love that we can all sit down together for dinner and all eat the same thing. It is simple enough I am going to give the kids each their own night to cook and have them learn how to cook for themselves too!
Update February 2015: So this was a wonderful springboard for me to figure out menus and getting the rest of the family cooking WITH me. I still use the Roast turkey for parties and family gatherings..even after a busy day I can now whip up a party quickly and my kids can also eat the food (I used to just order in Pizza to feed company now we all eat the same delicious thing.) I use her two books daily. I got them spiral bound at the printers with clear plastic covers and put stickers on the front with page numbers of my favorite recipes....the page numbers are REALLY small and the font is REALLY small for 1/2 etc measurments. I have gone in and written them bigger....on future editions perhaps those fonts could be enlarged. After 5 months it is still my basic go to....I am grateful.
March 2017. I roasted a couple of chickens today and thought of how I still use the recipes in this book..but now I have them memorized and I have used some as freezer meals etc. I was glad to see that Danielle has written another cookbook. I will order it....I need new ideas....and would love to try something new.
