A Diagnosis and Decision
For months, Danielle suffered from drastic weight loss, joint pain, and malnutrition. After countless doctor visits, she was diagnosed with a severe form of ulcerative colitis at age 22, just two months after getting married. I absolutely love this cookbook! It has changed my life! We have been following the Wheat Belly blog/protocol for a little over a year now but it wasn't until I got this book for Christmas that I really started to enjoy cooking again and feeling like I could master all these grain-free (complicated) recipes. Plus, the flavor of the meals is unbelievable-we don't feel like we are eating restricted at all. Every meal I've made is a home run for the whole family. Hallelujah!My only reason for not giving it 5 stars is that the quality of the actual book kinda stinks. The binding has completely split and pages are already falling out. I've never bent it backwards or anything harsh, just day to day wear and tear (told you we love it) so that's kinda disappointing and a real inconvenience but doesn't take away how awesome she is at grain free kitchen life!

First, let me give some context for this review: I eliminated processed food from my diet decades ago. I have been cooking longer than that--I am by no means a gourmet cook, but I'm reasonably competent at turning out a decent meal. I am very picky about books and don't often buy cookbooks because ime they rarely add anything to my knowledge base and the references already on my shelf. I only recently discovered Paleo and while I am entirely on board with the elimination of processed foods and sugar and understand the many benefits of eliminating grains, I am not at all a "strict" Paleo follower and some of the arguments about why people should eat this way are not well founded imho. Also, for many years of my life I was a vegetarian and so cooking meat, especially red meat, is relatively new to me.

With all that out of the way, I can state that I am very happy to have this book as a part of my cooking library. I've had the book about a week and have already made three recipes: the mexican chicken soup, the pulled pork, and the breakfast biscuits. The soup and pork turned out delicious and got raves from my BF, who devoured them. I did not share the biscuits with him :) they are very good though very rich--which is also good, because one doesn't need to eat a lot of them. Though I don't often turn to recipes for things like salad dressing, I find the basics in the back of the book very helpful and inspiration for creating my own spice rubs, barbecue sauce, and so on. For a long time my diet was based around my (very good, if I do say so myself) homemade bread and other baked goods, so cooking without grains is a big change for me. Danielle makes it easy and inspiring. I agree that in general her first cookbook is more innovative, but given that the title states that the emphasis here is "Simple", that's not surprising.

Highlights for me:
--The tidbits add a lot in terms of understanding recipe variations and techniques (eg, the quickest way to poach chicken for chicken salad)
--Throughout there are make-ahead suggestions, extremely valuable for busy people!
--I really appreciate the guidelines on how long things can be stored.
--I love the emphasis on cooking once for several meals. I try to think like this anyway, but sometimes having a guide is quite useful
--Though I am unlikely to use the meal plans as written, they are immensely valuable to me in seeing what a couple of months of paleo eating could look like.
--I don't have a slow cooker but I've recently started making the slow cooker recipes with a dutch oven in my oven. Put the pork in last night when I went to bed, woke up to delicious smells!
--Since I have family members with various allergies, I appreciate the icons for nut-free, dairy-free, etc, even though my diet is not that restrictive.

If you've been cooking meat your whole life you probably don't need this book. If you are an expert at cooking ahead and re-using leftovers, you may not find much new here. If you've been eating Paleo for a long time, there might not be anything in this book you haven't encountered already. But if you are new to any of these things, you will learn from this book. I'm very happy I bought it and it will soon be one of the most-used books in my kitchen.

The intended audience for the book is those who need help in planning and executing meals for the long run. I would fit into that category and am so grateful to have it thought out for me. I am not an organizer or a good cook. Cooking and planning meals overwhelms me because of all the brain work necessary. We have 3 different special diets in our house. I can juggle them all with her recipes and only have to fix one version of a meal not 3. (She provides lists for substitutions and lists for which recipes include eggs etc.) I am weary of looking up recipes on the internet and trying to make up a menu with 3 different diets! Not that I haven't tried.

So with the help of this book I have made delicious simple meals that are full of flavor and with built in ideas for the left overs. Danielle understands those of us that have low energy and need it all just made simple.

My family likes the recipes. For instance: The roast chicken is gourmet. We had it for a family gathering tonight. I use the bread recipe from her other book for sandwiches for lunch tomorrow. I have been following the week 2 menu for about 10 days now and I am able to get a meal on the table on time and everyone can eat the same food. Our son with the worst allergies frequently comments how much he likes just eating everything with everyone else. He volunteers to help me get the meals ready now! So I have simply put our whole family on the Paleo diet allergies or not to simplify my life and it is working.

This book is a game changer for our family. Plug it in and run! I love that we can all sit down together for dinner and all eat the same thing. It is simple enough I am going to give the kids each their own night to cook and have them learn how to cook for themselves too!

Update February 2015: So this was a wonderful springboard for me to figure out menus and getting the rest of the family cooking WITH me. I still use the Roast turkey for parties and family gatherings..even after a busy day I can now whip up a party quickly and my kids can also eat the food (I used to just order in Pizza to feed company now we all eat the same delicious thing.) I use her two books daily. I got them spiral bound at the printers with clear plastic covers and put stickers on the front with page numbers of my favorite recipes....the page numbers are REALLY small and the font is REALLY small for 1/2 etc measurments. I have gone in and written them bigger....on future editions perhaps those fonts could be enlarged. After 5 months it is still my basic go to....I am grateful.

March 2017. I roasted a couple of chickens today and thought of how I still use the recipes in this book..but now I have them memorized and I have used some as freezer meals etc. I was glad to see that Danielle has written another cookbook. I will order it....I need new ideas....and would love to try something new.

I’ve used this cookbook consistently for the last 7 years and its recipes are straight forward and fairly simple. Several of the recipes I have altered or further simplified without any negative feedback from the family. Some of the winners include: Mexican Chicken Soup, Chicken Waldorf Salad, Hawaiian Chicken Burgers, California Chicken Wraps, Slow Cooker Thai Beef Stew, Maple Dijon Pork Tenderloin and Creamy Dill Salmon.

If you’re just beginning to look for nutrient dense and uncomplicated healthy food, you should be able to find it here with her meal plans and other information as your starting point. Two thumbs up and a satisfied stomach!

I am new to the Paleo lifestyle and this book is PERFECT FOR BEGINNERS! She explains everything in detail, including tips and tricks and even storing options. We have made some delicious recipes with this book and I will definitely buy another one of her cookbooks.
