Bought this to bring back the life to our kitchen knives and touch up our pocketknives. The instructions are extremely easy, this is possibly why people are making mistakes and feel they can just gloss over them. I would say there are 3 sets of instructions on how you can sharpen a blade; I prefer the ones located on the cardboard table. This system has already paid for itself since my husband and I did not need to buy new kitchen knives and or take them in on occasion. The construction is very solid and can turn the most novice knife sharpener into a pro if judging the blade edge. If you want to have razor sharp knifes on a moments notice this will exceed your expectations. Only thing I warn is yes the old saying is correct “A dull knife is more dangerous than a sharp one”. However, I would add a razor sharp blade is not as forgiving as a sharpened blade. After sharpening with this system be very careful your knives, they will be scary (in a pleasant way) sharp; more so than from the factory! Some tips below I've picked up that have helped me sharpen my blades quick, precise and without mishap:1. Tape the Blade Up: I place some masking tape on then peel it carefully over the edge to cut a silhouette 1x per side. I peel off then place it aside then with both silhouettes I place them back on just revealing the blade where is will make contact with the belt. This protects the blade while learning efficiently without having to fatting up the knife with tape.2. Practice With a Cheap Knife: The real skill is when to let go of the trigger so that is does not grind more on the tip of the blade than the recommended "1 inch per second" and following the contour of the knife edge while maintaining proper contact with the belt.3. It Can Make a Mess: After sharpening 8 or so blades I noticed my dining table (live in an studio so no man cave garage here) covered in shavings and whatnot. I later noticed it was all to the right of the sharpener. So I placed it to the left of my kitchen sink after making sure there was no water and whatnot on my counter. This made most of the shavings fall in the sink making for easy cleanup.4. Wear Eye Protection: I noticed (thankfully while wearing eye pro) that left grind shoots debris shoots straight up in your face if you're like me watching closely if the knife is properly being inserted and pulled. It would really suck to get that in your eyes and looking back after sharpening 14+ knives. I also wished I had a face mask for the first marathon since you will be looking and making excuses to sharpen every blade in the house to make it pass the paper test.5. Master the Marathon: I noticed that the main difference between say a kitchen knife and pocket knife is the angle since they both use the same main 3 belt grits (coarse, medium and fine). If I’m going to have a sharpening marathon I separate my kitchen and pocket knifes yet use the same belts instead changing the belts per group of knives. The only thing I change is the angle degree. This helps speed up the process instead of changing everything out for each pile or worse per knife.6. Check For Crooked Burrs While Keeping Count: I’ve noticed the best way to ruin your edge is losing count or what side went in last, thus causing an annoying crooked burr. My method is the right side is “odd” numbers while the left is “even” to help with remembering where to start. I count to the total number of strokes ie if it calls for 10 I count to 20 total. This also means I go to right to left until I reach 10 which would be 5 per side and good time to check for burrs. Then 10 more starting at 11 so the “right” side of the system. With this method I have yet to notice burrs ever occurring thus speeding through the process precisely.Thank you I hope this helped, I wouldn’t have spent the time to write this if I didn’t feel this Worksharp didn’t impress me as it did.

I typically sharpen my knives with stones and they always came out great but never as sharp as when I got them. Since I haven't worked in restaurants in nearly a decade now, I don't sharpen my knives as frequently and my skill with the stones has diminished. Now getting stones out to sharpen knives is a hassle, not to mention friends and family come to me to sharpen their knives, so there's a volume issue as well.

So with Thanksgiving coming up I decided to get this tool after seeing some reviews and hearing from professional knife makers who use it. I want my knives to be razor sharp for the dinner we have planned.

It arrived yesterday and was really quick to set up. It comes pre-loaded with a low-grit band and comes with several other bands up to around 6000 grit. You can get additional bands online with additional grits. I lowered the motor speed to the lowest possible as recommended by the instructions.

The directions are very simple to follow: set the angle, place the knife inside and pull gently as the motor runs. It gives you a guide for different types of knives, from kitchen knives, utility knives, scissors, etc. It can even be modified out of the box to work as an angle grinder for especially large or thick knives if you prefer. The bands are easy to remove and replace

After about 5 minutes with my knife, a simple Victorinox 8" work horse, the results were really incredible. I went on to sharpen every kitchen knife we have including my $250 Togiharu gyuto from my restaurant days and they're all spectacularly sharp, some of them even sharper than when I got them.

I could not recommend this tool more. It's small, maybe a little bigger than a rectangular tissue box, meaning you can easily pack it away and pull it out when you need it. It's super easy to set up, just put it on a flat surface and plug it in. It's easy to use and takes almost no time at all to put a fantastic edge on an even completely dull knife. The belts are easy and fast to swap out, taking a few seconds to change. You can alter the angle to get the exact edge you want by simply turning a dial. Out of the box it comes with everything you would need for typical knives, though additional attachments exist as well.

For $140 the only issue I worry about is the motor burning out, but we'll see if that happens. Some pro knife makers I know swear by these and will often buy multiple and attach different bands to them so they have a quick and easy sharpening station from low to high grit.

I bought this after struggling for years with dull knives. I have a work sharp kit with graduated sharpening stones that will hold various angles and it does a great job to sharpen knives but it is time consuming. I use it on my pocket knives and it works great, but for everyday use knives like all my kitchen and steak knives it is way too much work to keep everything sharp. I've had mixed success with the different manual sharpeners, some would get a sharp knife edge, but the edge never lasted more than a few days of use. You basically have to sharpen prior to every use, goodbye blade. I then bought a Chef's Choice model 320. After a while to get the usage correct it did do a good job of sharpening. But again the edge would not hold. Use of a honing blade extended the knife use before re-sharpening was needed, but still a lot of time sharpening. So, I took a stab at the Ken Onion after reading reviews. So far I am delighted. It was easy to use with just a little reading of the quick start guide. Just a matter of minutes to sharpen a knife even following the instructions for a first sharpening. Re-sharpening will be even faster. Three weeks now and the edge is holding. I'm very pleased.

This machine is all about making a convex bevel. I have spent my entire life chasing a flatter and flatter bevel, Talking about sub micron level flatness tolerance. And here we have a machine that gets rave reviews for creating what I have always regarded as a dismally inferior edge. For sheer absolute cutting ability, hands down, no question, a precise flat bevel achieved and refined with a progression of grit ranges is in every way superior. There are times when a compound bevel is desired, such as on kitchen knives or on ordinary pocketknives that are sometimes used for things one would prefer to not be cutting with his personal blade. BUT, the faces for both primary and secondary bevel are to be flat. But here we have a machine touting a rounded bevel. Okay, I'll bite.

I just sharpened every kitchen knife in the house, first clearing the existing bevel shoulders at the 15deg setting, then setting a strong secondary bevel at 25deg. Am I happy with the edges? Absolutely. These edges are a superior edge for the kitchen. They just work.

Sharpened my Buck #110 folder and I wish I could say I am as happy with the edge. But my usual edge is created with 9u lapping film on a 3/4" thick cast acrylic block. This is the same way I set the bevel on a straight razor unless it needs serious edge repair. The bevel is about as flat as human hands can make it. Razors have the advantage of a built in angle guide, which is the spine. My pocketknives must be set by eye and experience but I still do pretty good, achieving a very tight reflection when turned in a strong light. I normally don't go any finer on the Buck but I occasionally progress to 3u, then 1u film. A draw cut is easier with a 1k or so edge, which is between 12u and 9u film or loose abrasive grit. A push cut is easier with a highly polished bevel that comes to a perfect apex. One has a certain toothiness. One is refined and polished.

If you hone a razor with a convex edge by lifting the spine, you will find that it WILL NOT GIVE YOU A GOOD SHAVE. This is the metric, for sharpness: absolute cutting ability with minimal force and lack of collateral damage. Such an edge, particularly given a very acute bevel angle, will not stand abuse, however. And here is where the compound bevel shines. The fine primary bevel provides relief and reduces the area of the secondary bevel. The secondary bevel, because it is small and well relieved, can cut well even though the bevel angle is relatively obtuse, and resists chipping or displacement better. This is the edge for general purpose cutting tools. Chisels, turning tools, plane irons, etc though some will argue the point on plane irons. And pocketknives that will see heavy use. Still, the actual bevel facets are FLAT. The convex bevel would seem at first glance to approximate this, but in reality it is a whole nother critter.

Kitchen knives operate in a different environment. They are used with considerable force in chopping, etc and here is where the WorkSharp setup really shines. I KNOW sharp and I KNOW sharpening. I shave every morning with my own edges taken to .1u diamond on lapped balsa. I have press cut a cherry tomato by dropping my pocketknife on it from a height of 1/2". For sheer cutting power in the press cut mode, a flat and well polished bevel that comes to a tight apex with no wire edge or other artifacts and no residual scratch pattern left by coarse grits after the finish, is the ultimate edge. For a working blade in a shop or outdoor environment, a compound bevel can be better. The kitchen is different.

For the kitchen, this belt-delivered bevel is surprisingly good and I recommend this highly for any cook or chef, home or pro. You will be hitting a steel with it anyway, a usually very imprecise operation, so a flat bevel is just wasted. The process is fast, fast enough to sharpen all your kitchen knives in a few minutes every day, and always have a great edge whether it is for chopping or slicing. Let's face it... the kitchen is no place to have a Jnat and a collection of nagura, or a 1k-12k progression of Naniwas, or an assortment of lapping films and acrylic blocks or calibrated granite plates. This thing is way better than a twirly wheely setup like the Chef's Choice its cheap knockoffs. Way better than carbide pullthroughs though I do like the Lansky Quadsharp.

Bottom line... for workbench, man up and get some serious rocks (and keep them lapped) or lapping film. For kitchen, if you don't have one of these you don't know what you are missing. This thing is fast, simple, and I am really liking the edge for chopping stuff. If it holds up and doesn't fall apart, I can say I made a good purchase.

Me animé a comprarlo por los buenos comentarios. Puedes sacar un muy buen filo en muy poco tiempo, lo malo es que los repuestos de bandas son algo caras y afilar las puntas de navajas es algo complicado ya que tiene su maña.

I purchased this and immediately upon receiving it began to sharpen all of my knives. I am very particular about my knives so I never let them get dull or chipped. I have been using several different types of sharpeners over the years however I love this one. I have now put 38 different types of knives (total of 60 knives) through this sharpener now. My hunting knives were slightly dull before starting and the rest were of fairly good sharpness. Below are my impressions.

PROS:
Very consistent edge angle that is VERY easy to duplicate every time. The angle adjuster is so simple to use, it never moved on its own and is very easy to see and feel.
The machine motor stays consistent RPM and does not slow or minutely vary in speed when pulling a blade through.
The belts are super easy to change and having the belt centering adjuster is a great feature that is much appreciated.
The knife angle guide is super easy to remove when doing gut-hook edges and then to re-install afterwards.

CONS:
The little plastic roller wheel on each pull-through guide are of a soft plastic that the knives will cut into even with light pressure.
The speed adjuster is not in a good spot, every time I pull and release the trigger it slightly creeps up in RPM as the wheel ever-so-slightly rotates when I place my finger back on and pull the trigger. It should be a 4 or 5 indexed speed setting wheel on the motor housing somewhere, no need for it to be on the trigger and it would greatly help if indexed.
I personally found the angle of the handle to be very flat and after an hour of using this tool my wrist started to feel the strain due to the angle. I do realize that many will not spend over an hour straight using this tool and I typically won't either however I wanted to put this tool through its paces.

I read that many people had issues with it scratching their knives, this I can only assume is do to improper use. I was initially a bit worried about it scratching my knives due to so many comments about it, so I started with a few hunting knives. I carefully followed the simple included use instructions and I never so much as put the faintest of scratches on any of my knives. I have a really expensive set of Wustof kitchen knives that I sharpened every one with this tool and just like all other knives I put through, they came out the same as when first purchased from the manufacturer. I used the 6000 grit belt to finish off the edges on all of my knives as I like an incredibly sharp edge on every type of knife I own and the edge looks like polished chrome this does such a good job. Even sharpening the gut hook on several of my hunting knives was a quick and easy task that now has them razor sharp again. I also read about many people rounding the tips off their knives, again, if you read and carefully follow the instructions you will always end up with razor sharp pointed tips. Even on my fish filet knives the tips are still like a needle, you just need to stop the belt before pulling the blade completely off the belt. I gladly give this a 5 star rating and not only would I buy this again I have already been recommending this to friends and family. Worth the price considering what just a good set of sharpening stones will cost and those are much more labor intensive to use correctly.

Habe jetzt schon mehrere Messer geschärft und jedes wurde rasiermesserscharf.
Natürlich kommt es auch auf den Stahl an und deswegen werde ich das eine Billigmesser daß ich noch habe entsorgen, natürlich wird es scharf... aber nicht lang.
Der Work Sharp, ein Traum zum Messer schärfen, exakt immer im gleichen Winkel schleifen, zuerst grob vor schleifen dann mit dem mittleren Band und zum Schluß das Messer polieren mit dem feinen Band.
