I was able to remove the extra bolster so that the knives now rest flat on a cutting board, but I wanted her to experience the joy of a Japanese knife that has no bolster and is made of excellent steel that holds an edge well. So I bought her one of these MAC knives. Although this model is not a high-end MAC, it is still an excellent alternative to German steel, and she is very happy with its performance. MAC is not as well known a name as, say, Shun, but it is favored by many chefs. I own a MAC petty knife that is my go-to knife for such things as slicing tomatoes. Once you use a Japanese knife, you realize that you do not need a serrated knife for tomatoes - just a sharp Japanese knife such as a MAC like this.
I would definitely buy this again. In fact, because of it, I am looking at the MAC 8" chef knife, too.
