About the Author

Born in India, Madhu Gadia is a registered dietitian and a certified diabetes educator. She received her Master of Science in Foods and Nutrition from the University of Illinois. She lives in Ames, Iowa, where she works as a clinical dietitian at an outpatient clinic. Madhu also teaches the art of Indian cooking and has appeared on local television, as well as local and national radio.

I am a cookbook junky. I probably own about 100 regular cookbooks and about 30 vegan cookbooks. I have never used a cookbook more than this one. Since becoming a vegetarian/vegan I have been floundering around trying to figure out what to cook, that is healthy and easy. While before, vegetarian food seemed bland, now I know that vegetarian can be gourmet and tastes better than anything I made when I was eating meat. While alot of other vegetarian books specialize in making food that is an imitation of typical meat dishes, this book rarely uses any form of imitation meat. Indian cooking was developed over thousands of years and they have figured vegetarian out. Their food is not designed to be a imitation of meat. You will never notice the meat missing. The food tastes so good you or your guests will never think "wheres the meat". My husband who is a very reluctant vegetarian, a true meat and potatoes man, loves this food. Not only does it taste great but she has Americanized it enough where I can understand the basics of Indian cooking easily. She has laid the book out in a way that makes it easy to understand and includes both the Indian and English words for many regularly used items, which is necessary if you are shopping in an unfamiliar Indian grocery store. One of the best part of this type of cooking is that you can buy the basics and then you just need one or two items to make a dish, and these are usually vegetables. Not only has she made the recipes very healthy, she is a nutritionist, but she has listed the main nutrition info at the end of each recipe. My friends can't believe how low in calories many of the dishes are specially how gourmet they taste. I recently started the new weight watchers plan and it is easy to plug in the nutrition info to come up with the points used for the day with each recipe. I am always full when I eat this food and I don't feel like I have pigged out on unnecessary low nutrient food. Many times I felt when eating vegetarian before I wasn't getting the proper nutrients, not anymore with Indian Food. Some of the previous complaints are true of the book, some of the ingredients in the recipes are not shown where to be used and some of the times do seem to be off but don't let those things put you off to this book it is fantastic. My only real complaint was that the binding broke the first week that i got it and I hadn't even used it by then. I plan to buy another one, because I am tired of running up and down the stairs to find this book. I carry it around and am constantly researching it, that way I can have one for research and one for cooking. If you are vegan and struggling with the lifestyle, no where to eat out, too much time to make the food, start eating Indian food. It is what I have been searching for, low cost, nutritious, easy and great taste without a lot of effort. Buy one of those stainless Indian spice boxes and this book and you will be on your way to the best food you have ever had. Your friends will think you are a gourmet cook even if you are a lousy cook like myself.

We are taking on the challenge to eat vegetarian once a week and so far we have loved every recipe! The author provides an in-a-hurry menu with 2 or 3 recipes to try at once. We have really enjoyed them. They have been filling and flavorful and easy to make. We've even had to leave out ingredients on occasion (cabbage, my spouse can't digest) and the recipes have still had good results. Remember to cook the rice, as it isn't included in the recipes. The only difficult ingredients to find can be purchased easily on Amazon. The author lives in Iowa (according to the cookbook), so most ingredients can be found even if you don't live on one of the coasts. I highly recommend this cookbook!

I got this cookbook about 6 weeks ago, and have been mostly eating recipes out of it since then. I have found it to be a very good introduction to Indian cooking, and the recipes have been easy to follow. She does a very good job of explaining basic Indian cooking techniques so that they are understandable and easy to follow. I really like the section entitled A Month of Meals, it is great for planning meals, and a grocery list. I also like the sections with charts showing and explaining the different ingredients, with the Indian names and the English names. That makes it much easier to find ingredients in the store. I have only had to order one ingredient online, the rest I have been able to find at the local Indian and Asian grocery stores in my community. I had to order the asafetida, because the commonly found asafetida has wheat in it. I am both gluten and lactose intolerant, and a near vegetarian, and really tired of vegetarian recipes that just try to mimic meat recipes, that mostly don't succeed. So, I thought I would see if a vegan Indian cookbook could add some variety to my diet, taste good, without ingredients that I can not eat. The nice thing about Indian cooking is that it does not try to imitate meat dishes. It stands on its own. 70% of the world's vegetarians live in India, and they have the technique of delicious vegetarian food down to an art. The recipes are labeled as GF and/or LF, which makes it easy to select the ones that I can eat. There are many recipes in this book that are gluten free, and almost all of them are lactose free, although she does call for the use of butter or ghee in some recipes, and ghee is derived from butter. However, butter has very little lactose in it, and I am able to eat it without reacting, so I personally don't mind that. I have found several recipes in this cookbook that are really good, and none of them have been difficult to make. All of the recipes that I have tried have resulted in really good food, most of it delicious, even at first when I was missing a few ingredients. The spinach sambhar is excellent. I do have to agree with other reviewers, though, that the measurements seem off with respect to the liquids. I have used a pressure cooker for 40+ years, and never used as much water in a pressure cooker as the recipes call for in this cookbook. I have been cutting the water in half for the pressure cooker. The author also does not tell you what pressure setting to use on the gauge. I have been using 10 with good success. Those criticisms of this cookbook are why I marked it with 4 stars instead of 5. However, I heartily recommend this cookbook, particularly for someone new to Indian cooking as I am.

I purchased this book to provide some different recipes for my Instapot. I was not disappointed. They even provided recipes for spice mixes. Would definitely recommend for anyone who loves Indian food.

good book- but for an indian person some stuff is very basic indian cooking . More stuff on soy or other vegan substitues would have been appreciated

I absolutely adored this book when I first bought it. I spent a full weekend making most of the vegetable, bean and lentil dishes. Delicious! Just one negative - when you make so many all together, you realise they're all the same recipe, just repeated! Still love it though and will make everything again.

I bought this cook book for my husband for Christmas and we cook recipes from this cook book 3x a week. My kids love it and when we have people over this is our go to cook book. We are not vegetarians but we really enjoy these meatless healthy meals.
