PRODUCT USES
Using the Program Mode
If you'll be busy or away when your food is finished cooking, use the PROGRAM mode. It's easy. Simply input the amount of time your food needs to cook and select the HIGH or LOW heat setting. As food cooks, the illuminated display on the control panel will alternate between the heat setting and the remaining time. When the cooking cycle is complete, the Set & Forget Programmable Slow Cooker will automatically shift to WARM setting.
Using the Probe Mode
For many foods, especially large cuts of meat, the internal temperature is the best test for doneness. The temperature probe takes the guesswork out of slow cooking. Select the desired internal food temperature and the slow cooker will automatically shift to WARM once the temperature is reached. By using the cooking guide for the PROBE mode below, you can estimate the amount of time the food will need to cook:
Cooking Guide for Probe Mode:NOTE: For 6-quart slow cooker only. Adjust the size and weight of food. If cooking dense vegetables (such as potatoes or other root vegetables) with meats, check for doneness when desired meat temperature is reached. These types of vegetables may take longer to cook when cooked with meats/foods such as those listed in the Cooking Guide above.
Using the Manual Mode
On days when you want to keep things simple, you can simply select between the HIGH and LOW heat setting to cook your food. When your food is ready, turn the unit OFF or select the WARM setting until you're ready to serve your food.
SLOW COOKER TIPS
If you're not familiar with slow cooking, there are a few things you should know about this method of cooking. First, how high you fill the crock (sometimes called the insert pan, stoneware, cookware or vessel) is important. To prevent overcooking, the crock should be filled half-full to no more than one inch from the rim. However, this does not mean to fill the crock with liquid. If cooking soups or stews, leave a 2-inch (5 cm) space between the top of the crock and the food so the recipe can come to a simmer.
Secondly, if you lift the lid during cooking, your cooking time will increase due to heat loss. Unless your recipe specifically calls for stirring, resist lifting the lid. Last but not least, if you want to store leftovers after cooking, do NOT place the entire crock in the refrigerator since contents will take too long to cool. Instead, divide leftovers into smaller containers and place in the refrigerator.
Cooking Meat
A slow cooker is great for foods that are not naturally tender, such as meat with a lot of connective tissue. These are the least-expensive cuts but also the most flavorful. Like braising, slow cookers tenderize meat slowly as it cooks. If you choose cuts such as chuck roast, pork butt, short ribs or chicken thighs, you won't be disappointed with the results. If fat is an issue, refrigerate the contents after cooking and skim off the extra fat before serving. Note: you must thaw frozen meat and poultry before adding it to the slow cooker.
Cooking Side Dishes or Dessert
Main courses, soups and "one-pot" meals are not the only things that slow cookers are great for preparing. They are also perfect for making side dishes and dessert, especially when your main oven is full. Check out the recipes found at HamiltonBeach.com that were developed and tested by the culinary experts in the Hamilton Beach Test Kitchen.
How to Adapt Recipes
You can convert your favorite recipes to slow cooker recipes if you learn these important differences first:
- Liquids do not evaporate in a slow cooker. So unless you are cooking rice, pasta, or beans, reduce amount of liquid to 1/2 of the amount called for in your recipe.
- Fresh vegetables produce the most desirable results. Potatoes, carrots, onions and garlic should be washed and cut in uniform pieces, then placed in the bottom of the crock. Canned and frozen vegetables take less time to cook and can produce overcooked dishes.
- Ground beef should be browned and drained before slow cooking to remove grease.
- Tender foods such as pasta, asparagus and snow peas should be added in the last hour of cooking.
- Dairy products such as cheese, milk, and sour cream should be added in the last half hour of cooking.
- Seafood such as shrimp, scallops, and fish should be added in the last 15-30 minutes of cooking.
CARE AND CLEANING
The removable stoneware crock and the lid are dishwasher safe. To clean the base, unplug and let cool, and then wipe it down with a damp cloth. Do not immerse the cord, plug or base in any liquid. Some slow cookers have steam vent holes in their lids; the Set & Forget Programmable Slow Cooker has a probe hole. If you are not inserting the probe for using probe mode, leave the hole open and do not plug it with paper towels or other objects. Vent holes allow steam to escape and the wattage of the unit has been adjusted to compensate for any heat loss.

I must say it cooks a lot faster than my old crock pot. I've only used it twice, once on a pork roast and once on chicken breasts. Each time I cooked about 5 pounds of meat and it was done in under 5 hours using the temperature probe and low heat setting. The pork roast finished in exactly 4 hours and the chicken took 4.5 hours.
One interesting tidbit is that the USDA says poultry should cook until it is 165 degrees F. but the directions that come with this cooker says 180 F when using the temperature probe. I cooked the chicken to 170 F and saw no pink left in the middle of the breasts. I thaw them in the refrigerator, trim them and rinse. I put them in whole and coat with BBQ sauce. Set and forget. Later they are tender and seem done to me. They came out as good as what I used to produce in 7 hours cooking in the older pot. I really hate white chicken meat when it dries out.
On my old 4.5 quart slow cooker, I had no temperature probe, never used a thermometer and saw pink at times. Never got sick. Maybe I was lucky. I always cooked them for 7 hours on low and I had it loaded! Most of the recipes called for 7 hours, but were not intended for 5 to 6 pounds of meat. Lucky me. -:)
I never thought much about it until the last time I tried to use the old cooker it seemed to be taking forever to heat up. I checked out this old one using 2 quarts of water at 90 degrees, on low for two hours. It only got to 140 degrees, which is too low. Should be 165 to be safe.
I don't know why but I used 3 quarts of water on the "Set & Forget" before I cooked in it. I started at 92 degrees on low and in 2 hours it was up to 154 degrees. If it had been 2 quarts of water, I suspect the temperature would have been well above the 165 degrees we were looking for.
Part of the reason I bought this slow cooker is because of the digital readout and temperature probe. I hate to say it is impossible to burn your food. (someone will figure a way) But using the probe and of course with a little liquid in the pot, it appears that one would have to try, unless their unit is defective.
THE MAIN REASON I purchased this slow cooker is because it seemed to have more 5 star reviews than any other slow cooker I could find on the Internet.
Programming is very easy. Just RTFM, (read the fine manual). Hey, I'm a guy, but I read manuals. -:)
I can see how using this cooker could be a problem for people who work and have to leave if they have power outages. Even just short ones. Yes, it will loose it's memory and shut off. That is in the design. So far the companies (apparently) do not see the need to produce a more expensive product with a battery back-up memory / timer. So if you have power problems, then go with a less expensive cooker that will come right back on when the power comes back. This is the only problem I see with the "Set & Forget".
If you stay you can always just re-program it when the power comes back on. That is normally my case. But at least you don't have to baby sit slow cookers. Set & Forget.... Nice name...
Although I have not really experimented with the meat probe, for my purposes I could not ask for a better slow-cooker. I have made some truly amazing meals for friends and family alike - everything from pulled pork that literally fell off the bone, ribs that were so tender the bone actually started to crumble a bit, beans, lasagna, veggie stew and even a peach tapioca dessert!
The programming options are a breeze. Turn it on and select time. Hit enter. Select high or low. Hit enter. Viola, you are slow-cooking.
At 6-quarts, it is generously sized but handles small batches of whatever it is you are preparing with equal grace. The lid rests easily on the soft gasket when not locked down, and snaps tightly down with the side clips, but has never been difficult to remove or lock into place.
I absolutely love the serving spoon with its oh-so-handy spot built into the lid handle - no need to hunt for your ladle! The interior container and brushed metal exterior clean up ridiculously well and with virtually no effort, no matter what you throw at it. Cooled, melted sugar sitting for hours? Cheese and grease and beans? No problem!
Yes, this -is- a big slow-cooker, however it has a fairly efficient footprint. For the size, this it not a bulky, awkward thing to lug about or have to store. I live in an apartment and keep it right on the counter without any issue.
I live in Louisiana, and we occasionally get some pretty interesting winds and rainstorms and have lost power three times mid-cook. Each time, with the power returning up to fifteen minutes after loss, I have turned the pot back on and it remembered the settings and time left.
I love this thing!
It does heat up the food quite quickly on high. The one thing I have found is that if I am going to be away for several hours longer than it would take for the meat to reach the right temperature, I set the probe to about 5 degrees lower than I want the meat to reach because it continues to rise in temp after the crock switches to the warm setting.
If you are looking for the meat to cook so long that it falls off the bone, you can do that too. Just use the manual setting.
So versatile! So easy! So effective.
The only reason I didn't give this a five star is because the clasps on the side are a bit hard to clip on to the lid. But they hold the lid tight for sure. (probably should give it a 5 star as this isn't that big of a deal. You just have to fuss with it a little bit.)
I love that you can clip on the lid, attach the spoon/ladle that comes with it and be off to your potluck or wherever you need to go.
I do recommend this product and I hope I never have to go back to a hot pot with out the probe!
