Guajillo chile peppers are very common to Mexican cooking. Along with anchos, they're the most commonly used chiles in Mexico. What the anchos are to 'deep' and 'rich', guajillos are to 'spicy' and 'dynamic'... a puree of toasted, rehydrated guajillo sings with a chorus of bright flavors that combine spiciness, tanginess (like cranberry), a slight smokiness and the warm flavor of a ripe, juicy, sweet tomato; the flavors go on and on. The Guajillo chile pepper rates between 2,500 and 4,000 Scoville units on the heat index. Its fruit is large and mild in flavor, with a small amount of heat. They are used to make salsa for tamales. The dried fruit is seeded, soaked, smashed to a thin paste, then cooked with salt and several other ingredients to produce a thick, red, flavorful sauce.

These peppers were fresh and flavorful. I had to buy online due to a foodie emergency and my inability to get to the Mexican market. This product is about 4x as expensive as the the market. The quality of the product is great. The price is excessive.
Very fresh and very good price. I love these for making fresh homemade red chile sauce for authentic Chilaquiles Iike I order for breakfast in Mexico. Or, I should day my Wife makes it and I enjoy it.
as advertised. delicious, tasty mild heat. initially used these in a simple salsa that i will definitely be making again. My friends agree, these are tasty. You can find the no-cook salsa using these by googling "Blend your salsa: a tale of two salsas". I have since used the soaking liquor and seeds to make a batch of mixed pickles (celery, carrots, red and green sweet peppers, onions, radish) with salt and cider vinegar, that is exceptionally awesome.
Definitely some of the better dried chiles I have gotten. They're slightly flexible and don't crack and shatter like over dryed chiles, which means you get a much better flavor from them.
