Take the heat up a notch and add more flavor to your meat with the Masterbuilt 30-Inch Propane Smoker. With 4 chrome coated racks, you'll be able to cook up to 80 pounds of food. This smoker has enough space to hold up to 2 whole turkeys, 6 whole chickens, 4 racks of ribs, or 4 pork shoulders. Well B. Correia.........based on the review you post on 3-20-2010, I went ahead and ordered this smoker through AMAZON.COM. thinking I too would get the "new and improved model" you cited. TOO BAD I DIDN'T!!! My MODEL PLAINLY READS "20070106" ....NOT.....20070110 as you said yours shows!!! BTW.......THE 20070110 has a GLASS WINDOW on the front of the door and retails for $399!!!So, you must have gotten the "luck of the Irish" and was shipped the wrong model by mistake.I expect I blew $190. on a piece of junk that will eventually burn out after about 10 uses. Congratulations on getting the NEW IMPROVED MODEL B. Correia......... but AMAZON SURE DIDN'T SEND ONE OF THOSE TO ME.July 24, 2010 Smoker UPDATE........ Tried the smoker for the first time since purchasing. Smoked Lake Trout and Steelhead. Had no idea smoking fish was such a chore. No wonder it costs an arm and a leg if you can find it. Anyway, I think I produced a pretty good product the first time out. I was concerned because the temp the unit was showing was 10-14 degrees LESS than what the Maverick Redi-Temp remote probe (purchased through Amazon) was showing. Another concern was the "lack of visible smoke", but I could SMELL smoke. I'm told that huge amounts of visible smoke is NOT what you want to see. That creates bitter flavors. I guess you're looking for the unit to produce a thin blue smoke. I was also told, if you can SMELL smoke, then it's working. Some say NOT to soak chips....some say TO soak. I soaked my chips but started out LOW at 100 degrees, then 140, then 160 and 180 over 4 hours. I suspect I didn't get "smoke" because of the low temps. When I "seasoned" the smoker, it produced plenty of smoke at 270 with soaked chips. Today I bought a oven thermometer then mounted that AND the Maverick probe to the upper left side of the unit, where the Mastercraft's temp probe is located. I set the Mastercraft temp to heat to 250 for 1 hour. The Maverick probe readout showed 251. The Oven thermometer read 250 on the button. I think the Mastercraft digital temp probe might have problems with lower temp accuracy. I'll use the Mastercraft, the Maverick and the oven thermometer to keep an eye on temps in the future.If and when this unit goes bad, I'll either go for the newer 30" model.....or......the 40" that has a 1200 watt element. This 30" only has 650 watts. That might be one of the reasons the heating element doesn't last long.Mastercraft was out of the 30" covers.....so I bought the one Bradley makes, also sold through Amazon. It fits the this unit like a glove PLUS it was cheaper too.One last note. For those who may have had problems with non burning chips or lack of smoke. I think the first time I didn't get smoke or a good burn was I didn't insert the wood chip holder properly. The directions dont show how it's suppose to be installed in relation to the heating element. I insert the wood chip tray so the bottom of the tray slid UNDER the heating element, and the box where the chips fall into was sitting directly ON TOP of the heating element. My first patch of chips never burned. I re-inserted it as I described above, and the second batch of chips burned perfectly. I dont know if this is right or not......but I'm sticking to inserting it this way.*******************************************************May 10, 2016 a 6 YEAR UPDATE***************************************************************I'm INTO YEAR 6 with the same unit and have never replaced anything. Making up a batch of Coho Salmon as you can see by the photo.... So Maybe it was me who got the luck of the Irish !!!! I see the price has dropped by over $100 bucks since I first bought mine. I do unplug and remove the digital timer/temp unit and put tape around the ends. I also keep it stored inside the shed and covered. My only question is if the digital temp/timer is really accurate or is reading low. My Maverick remote display read 140 yet my Mastercraft display says 120. Will have to get an oven probe and put it inside to determine which is correct.

It's been a dream of mine to smoke my own meats and cheeses. I wanted an electric smoker because I didn't want to hassle with refilling the charcoal grate all the time. I did my research and saw that, for the economically-minded, the best unit out there was this one. Delivery was fast and setup was easy. My only complaint is that there were cosmetic flaws on the exterior--white streaks and such where it looked like the black enamel or powder coating had been abraded off by poor handling at the factory in China. Someday I might spray over those areas with black enamel paint, too lazy to it so far.

I've smoked brisket and then spareribs in this thing and the results were amazing. Nice smoky flavors and really good bark. The one thing I learned is that you can't get a smoke ring with an electric water smoker, which was disappointing but I'll live with it for the price I paid for the MES. Clean up is fairly easy, too. General opinion is to clean the parts that food rests or drips on, but to leave the interior alone unless it gets moldy. A lot of guys cover the areas that can be dripped on with foil.

The digital thermos, is inaccurate--dislaying anywhere from a couple of degrees to 40 degrees higher than actual temp. I use a separate therm that's been calibrated which solved the problem. I can now compensate for that inaccuracy by adjusting the smoker target temp.

I learned that Masterbuilt offers a free, larger wood chip tray upgrade. I called customer service and it was delivered within two weeks. I haven't installed it yet but it looks pretty easy. I've read some complaints about Masterbuilt's poor customer service and unavailability of parts. All I can say is that I contacted them once for a part and I quickly got what I wanted.

I joined a smoking meat forum and found out about a wood pellet smoker that many people prefer to wood chips since it gives better smoke and you can cold smoke with it. I bought it and highly advise anyone buying this smokehouse get the wood pellet smoker and wood pellets too. With this little thing, I can experiment smoking meats and cheese using either wood chips or wood pellets to find out the difference in flavors they lend to what I'm smoking and which I prefer. It just gives you more flexibility and makes smoking all the more fun.

The owners manual is woefully inadequate, though. You'll need to join the forum I mentioned, buy at least 1 or 2 smoking books, and find some good recipes and tips online to decide what you want to make. Using the MES30 is trial and error, you'll learn each time you use it. Some people insist on using the water bowl while others advise not to use it. I personally use it. Some people have complained there are poor door seals that allow smoke to leak out; haven't had that problem with mine.

So, I don't know if my MES30 will last more than two years. I do know that sometimes people just get a trouble-prone model of anything they might buy, whether it's a smoker, a car, a fridge, a color TV, or whatever. But so far so good.

Like I said, I did my research and if you're looking for an affordable electric water smoker this is the one to buy. They also make it in a 40-inch model, which is more expensive. My 30-inch suits my needs just fine. Also, this and the MES40 both come with glass window in the door options so you can visually monitor what you're cooking. I didn't need that since the time and temp displays are more than adequate for me.

After reading several complaints about the heating elements failing in these units and the inability to replace these elements, I was very leery about buying one.

But I finally jumped in and made the purchase and could not be happier. First off, the Model number listed in the amazon listing, #20070106, is not the unit you receive. You actually receive Model 20070110. The newer model you can swap out the heating element if it fails. A huge plus.

I have had this unit for 4 weeks now and have made briskets, pork shoulder, and ribs. The unit is super simple to operate. Turn it on, set the time and temp, and add a small amount of wood chips every hour or two.

The smoker is well insulated. On a 40 degree day, it heated up to 275 degrees in about 40 minutes. I added my meat, lowered the temp to 225 degrees, and it easily maintained a temperature range of 215 to 225 for the entire 12 hour cooking period. On a 60 degree day, it preheated to 275 in about 20 minutes and again easily maintained temp even though it was very windy out. It also recovers quickly when you open the door to check on your food. The built in electronic thermometer is a nice touch. Shows you what the current smoker temp is. You can also run a remote temp probe through the vent in the top of the unit to monitor your meats internal temperature as it cooks.

The smoker puts out a moderate amount of smoke with a very small amount of wood chips. And it uses wood chips, no expensive wood disks. I choose to clean out the chip tray every 3 hours or so just to keep them from piling up in it. The smoker does a great job of hanging onto smoke too. You son't get a smoke ring, mainly because there is not enough carbon monoxide generated from the chips to pink up the outer layer of meat. Only wood and charcoal smokers will get you that. But the smoke ring offers no more flavor, just a smoke ring.

So far all the food I have made in this smoker has come out fantastic. Nice smoky flavor with very little work. You basically set it and add wood chips every now and then. The water pan keeps things nice and moist and the heating element keeps a nice even heat. Clean up is not too bad if you prep a bit first. Place foil in the water pan and in the drip pan. This will allow you to just take the foil off and give it a quick wash with soap and water. The racks do require a bit of scrubbing, nut that is to be expected. Just don't foil your racks. The interior is just wiped out with clean water, no soap.

So if you live in a colder climate, and are looking for an electric smoker, I would not hesitate to purchase this unit.

Is it smoking that is wonderful or this machine? The only critique is on the wood burning pan that is somewhat small. The four grilles are super efficient. I love the temperature and timing programming. This is a great starter's smoker for chicken, pork and beef (all tried).

This is the first electric smoker I used so far. The smoking is good and uniform. The process takes some practice and your first times might turn out too salty or dry however with some practice this does wonders. This smokers works well for making large batches of food.

Pros:
- strong build / durable
- proper cooking
- lots of room and precise thermometer
- no smoke loss
- decent humidity control

Cons:
- serious pain for cleaning thus smoking large amounts works best
- screen is tough to read in the sunlight

overall great device for its price
