About the Author

JOEL MacCHARLES and DANA HARRISON created WellPreserved.ca in 2008. The site has more than 1,800 articles and 700 recipes on preserving, local food, small farming, food security, sustainability, food politics, hunting and more. Dana has been a graphic designer for 20 years and focuses on the look and feel of the project. Joel is a lifelong home cook who writes and speaks on their shared passions. Batch is their first cookbook.

This is a great book unlike many (most) of the other canning and preserving books out there. I loved the formatting and new way of presenting the materials. It expands your ideas of preserving to add smoking, using salts, fermenting in unusual ways and other things I cant remember right now... there was so much to think about with this book. It then had a large portion f space at the end dedicated to recipes using the techniques they wrote about earlier on... and many of the recipes were things I hadn't seen in typical preserving and canning books. Many of the recipes were for things that were very simple... but very useful. Like they talk about 4 or 5 ways to use a lemon to preserve lemon flavors... great ideas to not waste the lemons but also to make something useful to add to dishes (like fish) without much effort. I've been canning and preserving for quite a while but I learned a lot of new things by reading this book. If you think this is just "another canning book" you are wrong... get it and you be inspired to see things differently.

Love this book-- it goes beyond canning to smoking, fermenting, and salting. It is my new go-to wedding gift cookbook. I honestly haven't made too many yet, but the quality of the book and descriptions is great, and I'm impressed by the variety. It has great recipes for preserving all kinds of things, combined with main courses to serve them with. The difficulty is clearly rated, so its a safe bet for beginners and seasoned canners alike. There is an entire section on meats. Did I mention its very well organized and has the best illustrations.

Yeah!!!! What a fabulous addition to my cook book library..Whether you are new to preserving or have lots of practice you will benefit from the ideas and procedures created by this amazing team. Batch is fun, informative, gorgeous and provides the knowledge and experience to help you create delicious homemade wonders even in a small space with great results. Buy a copy for your self right away as this is the time our gardens start to give up their bounty, better yet buy one or more copies for your food loving friends. They will thank you many times over as I am thanking Joel and Dana for this beautiful and useful tool!!!

Loved the pictures, organization, & easy to understand directions, but I did notice a couple of times where a detail was left out. Maybe just get a good editor next time to go through it with a fine tooth comb for errors of omission. Otherwise, this is a fantastic book for a refresher course or for someone who is new to the whole food preservation movement. I especially liked that it contains some modern recipes & it covers many different methods, not just canning. Great job, beautiful book!

Beautifully written, gorgeous pictures. Easy to follow steps, wonderful explanations and love the detailed bits about equipment. My sister saw this and immediately had to order one for herself and one for each of her three daughters and two daughters inlaw.

Batch is a hip book of practical preserve recipes. Every recipe is written clearly with obvious attention to detail that will inform those new to putting up food and inspire those of us who have been filling the larder for years.

Batch includes careful descriptions of preserving techniques with modern twists on classic recipes arranged by ingredient. Delightful illustrations and whimsical pictures are interspersed throughout.

Thorough conversions and helpful sourcing hints make Batch useful for cooks around the world.

Didn't give clear directions was kind of of course with ingredients the ideas in the book are great but more help with amount of ingredients would of been helpful it's a nice addition to my library

As a sometime water bath canner, I enjoyed the information on other types of preserving and the ideas on flavors from the bloggers of We'll Preserved. Joel's voice and Dana's artwork created a fun read, and I anticipate much fun trying out their recipes. I bought this book after reading a review on another blog by Marisa McClellan, of Food in Jars. This book is laid out wonderfully. It goes through 25 very practical foods and multiple ways to preserve them using the entire food, even doing multiple types of preserving at the same time with little to no extra effort. I can’t wait to preserve my way through this book. Traditional preservation and modern flavors unite.

I love this cookbook! It has an easy-to-use and tidy setup that I appreciate a lot!! The recipes are clear and easy to follow! I’ve made a couple things to far with more to come. It’s a great addition to my cookbook library. Highly recommend this book!!! It has everything!

Buying the cookbook BATCH is the best money I've ever spent on Amazon.
Written by a young couple who started canning with their parents then realized it was also fun, plus, a healthier way of eating. I've enjoyed the easy recipes and already ordered three more for Xmas gifts for my children.
I could not put the book down. The illustrations are also fantastic. So easy to follow.

This book does give lots of info for all kinds of batching. My only complaint, is it only focuses on 27 fruits and vegetables. I wanted to pickle some Orka, and it is not one of the 27.
