Creamy Cauliflower & Chorizo Soup

6 Servings, 15 Mins, 30 Mins

Hearty and warming, this sweet-and-spicy soup matches keto-friendly cauliflower with robust, meaty chorizo in a fantastic one-bowl meal.

Directions

Wash the cauliflower and cut it into small florets. Peel and

slice the garlic and onion. Heat 2 tablespoons (30 g/1.1 oz) of the ghee in a large pot and then sautée the onion and garlic over medium heat for about 10 minutes or until lightly browned, stirring frequently.

Add the cauliflower florets, salt, black pepper, and the chicken stock. Cover and simmer for about 15 minutes.

Meanwhile, finely slice or dice the chorizo and chop the rosemary. Heat the remaining ghee in a separate pan and add the chorizo and rosemary. Cook for about 5 minutes until the chorizo is crispy and set aside.

When the cauliflower is tender, remove the soup from the heat and set aside for 5 minutes. Blend with a hand blender to make the soup smooth and creamy or pour into a food processor and pulse. Ladle into serving bowls. Garnish each with the crisp chorizo and rosemary and drizzle in some of the chorizo juice.

  • 2 cloves garlic
  • 1 medium (110 g/3.9 oz) white onion

  • 4 cups (about 1 liter/33.8 oz) chicken stock (page 128) or Bone Broth (page 30)
  • 1 large (200 g/7.1 oz) Spanish chorizo
  • Leaves from 1 to 2 sprigs fresh rosemary, chopped

Hi, I'm Martina - welcome to my page and thanks for stopping by!

I currently live in the UK. I hold a degree in Economics and worked in auditing, but I have always been passionate about nutrition and healthy living. I love food, science, photography and creating new recipes and I am a firm believer in low-carb living and regular exercise. As a science geek, I base my views on valid research and I have first-hand experience of what it is to be on a low-carb diet. Both are reflected on my blog, in my apps and cookbooks.

I changed the way I ate in 2011, when I was diagnosed with Hashimoto’s, an autoimmune disease that affects the thyroid. I had no energy, and I found it more and more difficult to maintain a healthy weight.

The irony was that, like so many other people, I used to follow what I believed to be a healthy, balanced diet. I avoided most fatty foods in fear of clogging my arteries and putting on weight. I based my diet around whole grains and vegetables, and limited my intake of animal products. I did exactly what the general dietary recommendations advised: I exercised more and ate less. Still, nothing worked. Finally, I got tired of dieting all the time, and I was determined to regain my health by following a different approach.

That’s when I decided to quit sugar, grains, and processed foods, and to start following a whole-foods-based ketogenic approach to food.

After we witnessed the incredible benefits of low-carb eating firsthand, my partner and I created KetoDiet, a tracking and planning application with hundreds of low-carb recipes, which is now one of the bestselling apps on the App Store and Google Play. Then, in 2012, I launched the KetoDiet blog, which helps over 2 million monthly visitors follow a whole-foods-based, low-carb, ketogenic lifestyle.

Since 2016, I've authored 10 low-carb & keto books to help people follow a healthy diet and to show them that this way of eating doesn't have to be complicated or boring.

When creating recipes for KetoDiet, I don't focus just on the carbohydrate content: you won't find any processed foods, unhealthy vegetable oils or artificial sweeteners. My recipes are all grain-free, sugar-free and gluten-free. Most of my recipes are paleo-friendly or include paleo-friendly alternatives. I always opt for grass-fed beef and butter, raw hormone-free dairy and healthy fats like coconut oil.

I got this book from the keto group in my community. It gets handed down between new keto-ees, because it is a great book! It really helped me learn how to cook keto. It has great recipies, and I've tried more of them than any other book I have.That's partly because there are a lot of really appetizing recipies, and partly because our keto group tend to bring items from it to community get-togethers. So far everything has been great. I since bought a couple of other keto cookbooks but I was unimpressed by them as compared to this one.The instructions of the book are usually pretty easy to follow, however, one thing I really don't like is that the ingredients are separated into wet ingredients and dry, instead of being listed in order of use. I prefer them to go in order of use, because once I've made a recipie for the first time, I tend to no longer read the steps. She also lists eggs awkwardly. I'd rather a recipie say: "6 egg whites and 4 egg yolks," but this one words it: "4 eggs whole [plus] 2 egg whites."Those two things are minor compared to the pure gold this book is. From the way she writes it is easy to see how to tweak staple recipies for variety, and make them your own. And there are really so many fantastically appetizing things to try. The one problem I have, is that I tend to keep making the same things, because once I make a recipie and I love it, I tend to want to make it again. I have to resist that temptation, so I can try more new things. As, I'm reminded each time a friend tries something new and drops some off to share.The first thing I made is also a favorite. It was a keto bread that is chewy and seems like real bread, and very good real bread at that. Excellent chewy texture. I've made it my base recipie, and have since tried changing the flavours to produce several great regular staples. The author often leaves hints and suggestions for tweaks, which really help me learn to become my own keto cook.Imagine my surprise when, prepared to post raves about this book highlighting my favorite bread, it's called "Fluffy Grain-Free Sunflower Bread," I was surprised to see it (my bread) being trashed in the number one negative review of this book. It is supposed to be impossible to make. Hmmm. I had ZERO trouble with the instructions -- I was only briefly confused by the weird way the eggs are listed mentioned above, and the cream of tartar listed with dry ingredients, instead of next to the eggs was a little off putting, but the instructions were pretty easy, and pretty complete.Curious, I took a closer look at that review (the one condemning my favorite bread). There was another recipie referenced in the same review. It's a review titled "Say What??" It says quote:"a pork curry recipe... The recipe says to squeeze in the juice of two limes then put the lime halves in the pot and remove when it's done (6 hours on low). It smelled amazing but was so unbelievably bitter!" "There are some good recipes but this book is getting benched. "-end quotesHaving never made that recipie, I looked it up. And it doesn't say to do that. The instructions call for "finely grated lime zest. "The ingredient list says: "juice and zest from two limes." The reviewer cut two whole limes cut in half and put them into the pot, pith and all.See photos for the ingredient-list of the pork curry, and the instructions for the Sunflower Bread.

This book is an awesome accompaniment to the author's website and her "ketodietapp" app. Her recipes are easy to follow and come out pretty great. I think any diet that can be hard to follow will have some recipes you love and some that fall flat, but none of the ones I tried in this book really sucked. Sure, some were just okay, but you're talking about a diet that is extremely LOW CARB and can challenge anyone trying it for the first time. The beauty of this book is its simplicity, it's recommendations for products and in how it helps you plan your food days in advance. I bought this one and found an online 14 day menu plan that went with it. Just perfect for trying this diet for the first time!

Excellent resource for my patients! I am a functional medicine provider and work with patients who have chronic diseases, mitochondrial dysfunction and want to lose a little inflammatory weight. I love everything that comes from Martina, including this FIRST of MANY books for her. Her online resource is ridiculously in-depth, her apps are so beautiful and thorough, and her attention to each detail in each step of her recipes is so wonderful. I love how she links many of the products she uses to amazon so I can order them asap. I am in the USA and she is in the UK but she makes it easy to bridge the gap of working for the same cause across many thousands of miles. We have preordered her FAT BOMBS book and keeping many on hand in our office for patient resources.

I like the book because it has recipes without almond flour, since I am allergic to it. The book intended for beginners, and doesn't have a lot of recipes. The best chapter is about homemade basics, like bread, nut butter, condiments.

I am enjoying making the recipes in this cookbook! So far, the recipes I have tried have come out far better than I expected-and delicious! It has clear instructions and beautiful pictures.
If you already follow the LowCarbHighFat way of eating you probably already have all of the ingredients needed for making the recipes in this cookbook. If you are looking for more comprehensive information on the Keto/Low Carb way of eating and method, this is not that book. While there is info on, and how to follow a Keto/Low Carb diet, that information is basic--it is primarily what is states, a cookbook.
It is a very good, easy to follow cookbook for anyone wanting recipes that follow the Keto/Low Carb way of eating.

Well organized, creative, variety of foods not just for low carb eaters... So it eliminates the extra work when one person is on an eating plan and others are not. My carb tolerant spouse loves all the items I've been making👍
I also get tired of the paleo and low carb books that try to make American comfort food using "substitutes" so it tastes like food now "off limits"
These recipes are delicious and a real adventure for the palate and yet familiar enough and easy to make. Bravo! Her Keto Ap is also the easiest I've ever used to easily log meals.

Here's the thing about this recipe book. Every recipe would require that I order ingredients in order to make them. I just feel like there are a lot of ways to accomplish the goal without requiring me to fail at finding the strange ingredients in a local shop, then order them online, only to discover that the next recipe requires the same routine.

Busy people don't have time to stock up on a plethora of obscure ingredients in order to cook dinner every night.

I tried to like this book. It's very nice, with high quality prints and excellent instructions, but because I have to plan each meal a week in advance, I can't justify giving it a higher rating.

The recipes are wonderful and so easy to follow and they turned great. I am glad I purchase it and so is my husband who is a pickey eater and we both have lost a lot of weight following this lifestyle diet. I also like that there are beautiful photos to see what the finish items should look like

Martina's web site and blog and this cookbook have been a wonderful resource for my wife an me. We have lost weight, to be sure, but that is really a side effect. The significant improvement is in energy level, mental clarity and a sense of well-being. This is hard to put into words.

In 2011 my wife was attacked by an auto-immune disease that affected her lungs. Treatment was an anti-cancer drug that compromised her immune system. Under the treatment she has made steady improvement but was tired. Everything was an effort, both mental and physical.

We found Martina's web site and started the Keto diet in mid February. Each have lost 30 pounds, but my wife's general health is so much better. Her Physician says that it's a bit early yet, but he may want to consider the "C" word (Cure). Of course the Keto diet did not bring about a cure. However it has certainly changed the quality of life.

Thank you Martina for the cookbook, the Fat Bomb book and the Ketodietapp.

This is one of the best low carb books I have come across in both range of dishes, ease of preparation and most importantly great tasting dishes.
The intro section is very informative if you want to get in the very soul of a Keto lifestyle. The savoury snacks and desserts are my particular favourite but be aware if are new to this type of cooking you will have to stock up on items your average supermarket doesn't stock. I went to Holland and Barrett for most of the items and good old Amazon for the rest. Tom Kerridge's low carb book started me off but this book for me this is a much better range of dishes and is simpler to prepare. Also bought as an ebook for the cooking process - saves the page getting full of food!

This is a great cookbook, some reviewers have noted strange ingredients, but the only one that is seemingly hard to find is macadamia nuts, which are used in a lot of these recipes. I've just ordered a large bag from amazon. I went through each recipe last night after I received this book and must say I'm dying to try these recipes out! In particular, the bread and granola look amazing! Bang on keto breakdown for each recipe. Very satisfied. Will try to post an update after using a few recipes.

The book has a few good ideas, however I found many of the drystore ingredients are quite expensive and not friendly for your shopping bill. Healthy eating is not cheap which I accepted years ago, however a lot of recipes just aren’t cost effective for the end result that you eat.
