Tangy barbecue sauce
Yield: 2 cups
- 11⁄4 cups brown sugar
- 1 cup ketchup
- 1 tablespoon dry mustard
- 2 tablespoons Worcestershire sauce
- 2 tablespoons vinegar
- 1 cup strong coffee
- 1⁄2 cup finely chopped onion
- 1 teaspoon salt
- 1⁄8 teaspoon pepper
Steps
Combine all ingredients in a heavy saucepan. Mix well and cook over medium heat
10 minutes, stirring occasionally. Reduce heat and simmer 30 minutes. Cool sauce
and store covered in refrigerator until needed.
Meatball hors D’oeuvres
Yield: 30 meatballs
Grind 1 pound of beef
2 egg yolks
1⁄3 cup dry bread crumbs
1⁄3 cup Parmesan cheese
2 tablespoons chopped parsley
3⁄4 teaspoon garlic salt
1⁄2 teaspoon oregano / 1⁄4 teaspoon pepper
2 tablespoons chopped stuffed olives / 1⁄4 cup olive oil
Steps
Place ground beef, egg yolks, bread crumbs, Parmesan cheese, parsley, garlic salt, oregano, pepper, and olives in mixer bowl. Attach bowl and flat beater to mixer.
Turn to Speed 2 and mix for 1 minute. Form mixture into 30 (1-inch) balls and fry in olive oil until well browned. Drain on paper towels. Warm Tangy Barbecue Sauce and pour over meatballs. Serve warm from chafing dish.

If we were into sausage making or something like that in a big time way there is no doubt that we would invest in an appliance specifically meant for that usage. It should be remembered that this is an "attachment" to a small appliance and I suspect that it was not meant for industrial or professional use. It was made for home kitchens, which is what we have, and is more than up to the job. I suspect that if you tried to run 20 or 30 pounds of meat through it during one session that it would probably overload the appliance...this is merely speculation on my part.
As it stands, we use ours for homemade sandwitches such as ham salad, beef salad, and the like. It works perfectly for the smaller jobs.
We have not had the problem with "iron filings" or "dirty substances" in the end product as some have noted. I do not know the reason this is happening to some folk...it has not happened to us.
This grinder does the job in far, far less time than using the old cast iron grinder we have used for years. It is much easier to clean and hook-up is a snap. I do note that it is much more effective if you feed the thing in moderation and not try to "force" more meat into it than is prudent.
We are very happy with this product and could not ask for more...next...the pasta maker!

With regards to it being plastic: it's very heavy duty, and while it will doubtless crack long-term, that won't happen quickly unless I drop it on my hard tile floor repeatedly. It goes through the dishwasher well, a big plus in this household. I didn't like the fact that many commenters said that the metal ones cannot go through the dishwasher, and that they will rust unless they are oiled. (I don't store things oiled; I abhor ants, and oil seems to attract them.)
Do have the meat partially frozen for easiest grinding.
Do run it at medium speed. I started out at 2 or 3 on the speed control, and it didn't work very well. It was very efficient when I set the control at 5 or 6, and I had no problem grinding my way through 3 pounds of partially thawed turkey one night, and beef another night.
The instruction booklet is a little vague, and the recipes are pretty nonexistent, so don't expect much help there. Kitchenaid is an American company, and this item is made in America, so I was a little surprised at how poor the instructions were. That was my only complaint with this grinder.

E' sicuramente un'ottima soluzione per chi vuole comprare direttamente alla fonte senza lavorazione e permette di risparmiare molto sulla lavorazione che altrimenti sarebbe stata pagata in macelleria per il trattamento della carne.
E cosa più importante ci permette di sapere sempre cosa andiamo a mettere nel piatto nostro e dei nostri figli evitando spiacevoli sorprese che possono capitare comprando carne già pronta o già macinata. Il prezzo è veramente buono tra l'altro vista l'utilità dell'accessorio.
