The secret is in the stopper. Make sure the stopper is firmly inserted before pouring the meat juices into the cup. I have found the strainer on top to be just right in that it keeps big chunks of meat or skin out of the cup but doesn't strain it enough to cause problems by getting clogged and causing overflows. If I find myself with too much solid matter in the broth, I just add a step: after the fat has floated to the top and I'm ready to pour out the stock, I remove the stopper and pour the broth through a finer sieve into whatever container or pan I'm going to use to make gravy, soup, whatever.
Now, I have a helpful hint: Never, ever grind up the stopper in your garbage disposer! While it is a "magic stopper" it isn't indestructible. But, if you should happen to destroy or lose your Magic Stopper do not fear. All is not lost! I found a listing for a wine bottle stopper:

It's called a "Metrokane 6119 Rabbit Wine Bottle Stopper". (I posted a link above to it's listing here, on Amazon, but apparently that got edited out.) It's made of silicone and stainless steel and will fit snugly in the spout of this product. I also use one as a stopper for the bottle of olive oil we use regularly - it fits and the oil doesn't leak all over the outside of the bottle as it does when putting the screw cap back on.
While I managed to catch my stopper *before* it was completely obliterated, my little near-accident caused me to think about what might happen if I lost it or my husband threw it away or something equally horrific occurred. I wondered how hard it would be to get a replacement stopper and, having just bought a pack of these for (of all things) wine, I thought I'd try it out just in case. It works.
Now I'm off to look for a smaller version of this thing since I cook mostly for just two people I find that this 4 cup unit is not as efficient as it could be for smaller volumes of liquid.

But yet, again and again, I encounter situations when I need to skim fat immediately--for example, when making a giblet gravy after roasting a chicken. The gravy is tasteless if you don't remove the fat, as I've found out a few times!
The concept of these separators is that fat rises rapidly to the top. The spout draws from the bottom, so the fat comes out last. You pour until you see you are about to pour out fat, then you stop and pour the fat into another receptacle--either the trash or a glass jar to use it to cook with. (The other fast method is to put your fluid in a tall glass and try to pour or siphon off the fat with a turkey baster. It works but it is awkward but inevitably ends up wasting a lot of good stuff.)
This inexpensive little item has the perfect design. It has a strainer on top, which eliminates the hassle of having to strain separately first. It has measure lines, which are handy. But most of all, it has this little stopper which creates air pressure in that keeps the fat from going up into your pour spout; if you don't use it (and I tried skipping it) the fat rises into the pour spout which defeats the purpose. You put in the spout, pour your fluid into the separator, then remove the stopper before pouring.
The stopper can be a little difficult to remove, especially if you have greasy fingers, but I'm not taking a star off for that as I like the item so much.
I would prefer glass if it were available. However, I did use this with fairly hot fluid--it had only cooled a minute or two after boiling--and it was fine.
I bought the two-cup thinking that I'd just use it for small amounts that need to be done immediately and use the refrigerator trick for larger amounts. But it works so well that I have decided to buy the four cup one too and just defat everything I make immediately.
Edited to add that this item is only useful when you have mostly drippings with a little fat in them. We found out the other day that it doesn't work well for removing a tiny amount of drippings in a large amount of fat, which happened when we cooked a duck on Christmas Day. The problem is if you have just a few drippings they actually end up not rising up to the level of the spout, so when you pour, you get just fat. To get out the few tablespoon-fulls of delicious drippings from the huge amount of fat, we needed to refrigerate all the liquid (I froze it to speed the process) and then scoop out the fat after it rose to the top and solidified.
