I'm overweight and type 2 diabetic. I'm on a low carb diet and intermittent fasting. I recently gained 7 pounds on vacation because I stopped doing both of those. I'm back to intermittent fasting now and have lost all but one pound of what I gained on vacation. While I was naughty, I noticed I absolutely hurt all over after I would eat pizza or a sandwich. I have arthritis in my knees and it was made so much worse after eating bread. I knew about Einkorn flour but hadn't tried it because I was afraid my blood sugar would suffer.Today, I made my first loaf of Einkorn bread. I had a bit of trouble getting the bread to rise because it's a bit cold in my kitchen. My sister told me to put the bowl with the dough on top of a heating pad. I wrapped it tightly and waited an hour. Finally, it rose and I put it into a dutch oven which was preheated in a 425 degree oven. Twenty minutes later, I took off the lid and let it cook for an additional 15 minutes. What came out was beyond my expectations. I thumped it to make sure I heard a hallow sound. It was ready. I let it cook for about 15 minutes and then hacked off a couple of pieces. I put butter on a slice and made an open face sandwich with it. WOW! So crunchy on the outside and soft on the inside. The taste is sublime and almost tastes like sourdough. I thought this is too good tasting to not have my blood sugar go up. One hour later, I took my blood sugar. It had gone down?!?!?! what?!?!? This is huge for me. I can eat a sandwich now! I don't have that weird spaced out feeling I get after eating regular wheat. I don't hurt all over.I don't know if this flour is considered low carb but I'm not on a "no-carb" diet. I keep it under 100 a day. This is absolutely amazing to me. I will take my blood sugar in another hour and report back.Update: I took my blood sugar after two hours and it was 189. Kind of high but it went down quickly afterward. This morning I ate just one ounce of bread and my blood sugar was 169 two hours later. I will try mixing einkorn and almond flour and see what effect it has on my bs.

Einkorn is an ancient two chromosome version of wheat. It's a distant ancestor of the ultra hybrid mutated form that is 99% of cultivated wheat today. It was humanity's type of wheat until about 2,500-3,000 years ago and may have been the common type used in some parts of the world until the 1600-1750 time frame. Emmer Wheat is also a descendant which developed out of a hybrid with two other grasses around 3,000 years ago and became common in Egypt/middle east.

Einkorn has very little of the gluten proteins found in modern wheat and so it may be a preferred alternative for those who are sensitive to the glutens in modern wheat. Warning - it is not gluten free. Whether it is free of the "toxic" glutens (versus modern wheat) is a controversial subject and is largely unknown. My own opinion is that there is some truth to this, especially for those who have sensitivity. Einkorn dough products are is slightly less glycemic than modern whole wheat (lower carbs), even more so than Emmer Wheat which is usually touted as being less glycemic bread.

The glutens in Einkorn are not enough to hold together like regular wheat. If you make a pizza dough with it as I do, I age/ferment it with yeast for a day or two, then you need to make the pizza on a thin flat pan. The dough will not hold together for any handling like transferring it to a pizza stone. Seems to be fine once baked however.

Taste is like regular whole wheat, only slightly nuttier.

Einkorn wheat is not as productive as modern developed wheat. Modern developed wheat produces about 10x as much flour per acre, so you can see that Einkorn Wheat is always going to cost you more.

I'm only aware of two farms in the U.S. which grow Einkorn wheat and market Einkorn flour. Jovial seems to be a good one. How lucky we are to live in the age when we can get such a specialized product by pointing and clicking at Amazon! Maybe soon, Einkorn flour will be available commonly in places like Whole Foods, but for now, this is the only convenient way I know to get it.

I have only used this twice thus far and am still learning the adjustments I need to make in the recipes for my altitude as well as this flour. I have been looking for a wheat flour that was unaltered by man for some time and was excited to run across this on Amazon. I have ordered a cookbook for einkorn flour but it has not yet arrived, am waiting impatiently for it! The two batches of bread I have made from other online recipes have improved but still needing adjustments. I realize now that although it is classified as a wheat flour it is nothing like our standard wheat flour that I am so used to using; I use organic unbleached flour from Montana Grains. I like the flavor of this one, it is kind of nutty tasting. It is also more dense or heavy feeling than regular flour, it clumps together so sifting it improves using it. I hope the price will decrease as more people use it for a 2# bag (minus a cup) makes a standard loaf of bread which is quite expensive at these prices but understandable until there is more demand. I wish they sold this in bulk instead of just a 2# or 5# paper sac. I keep my flour in a food grade sealed 5 gallon bucket I bought from our local supermarket's bakery (much less expensive than buying it new online!!).
