WHY WOULD I WANT ANODIZED BAKEWARE?
Natural aluminum is porous like a sponge and absorbs the fats, sugar, oil, dish soap and detergents that it comes in contact with. Anodizing aluminum creates a durable, non-reactive surface which allows you to bake a wider-variety of ingredients like citrus fruits and tomato-based foods and sauces. Typically, ingredients that react poorly with ‘natural aluminum’ and ‘aluminized steel’ products and can actually leach unwanted flavors, and even aluminum, back into your baking. Anodizing ‘safe-seals’ the natural pores of aluminum creating a smoother, thicker, completely sealed and more versatile baking surface.

The issue of cracking cheesecakes would be resolved with a water bath. But despite using extra wide, heavy duty foil I was always fearful of water seeping into the cheesecake. So I just never bothered and learns to ignore the crack. Decorative fruit compote or ganache can help camouflage the crack. 😉. But I decided to invest in a round cake pan that could accommodate the springform pan. But the wider diameter of the Fat Daddio base plate made it tricky to find a cake pan that could fit the springform pan. I found the PMR 13 inch round cake pan on Amazon. The sides are 4 inches high and the springform pan fit beautifully. I was a bit worried that the gap between the springform pan and the wall of the cake pan would be a problem. But my fears were unfounded. My two cheesecakes baked with this new system turned out perfect!
So not only do I recommend the springform pan, but I recommend the PME cake pan as well for a worry free water bath to bake your cheesecakes.

But I decided to invest in a round cake pan that could accommodate the springform pan. But the wider diameter of the Fat Daddio base plate made it tricky to find a cake pan that could fit the springform pan. I found the PMR 13 inch round cake pan on Amazon. The sides are 4 inches high and the springform pan fit beautifully. I was a bit worried that the gap between the springform pan and the wall of the cake pan would be a problem. So not only do I recommend the springform pan, but I recommend the PME cake pan as well for a worry free water bath to bake your cheesecakes.
It is not even close to leak proof; not sure why anyone even cares if it is. Wrapping it in tinfoil is a bit dumb because of that external lip, but also anything that gets past your tinfoil (if it's a slow leak) takes a long time to get high enough to get to the contents. If you REALLY want to, you can ensure you don't have more water than about 1/2-5/8" (haven't measured it) and the bottom of this pan is above that.

The "Ricpwit Smash Burger Press, 5.9 inch Round Hamburger Press" pairs well with Fat Daddio's PSF-63 as well to make 6 inch patties, but it's more than 1/10th of an inch smaller, it's more along the lines of 3/16ths, which lets just a little ground beef through the cracks (although it still works out).
Fat Daddio's PSF-63 pairs perfectly to the "bodkar Smash Burger Press 6 Inch Round Stainless" to make 6in burger patties. To get it all the way in, so if you have the means put it to a wire wheel or something to smooth it up. My only complaint is cleaning as where the handle screws down to the flat plate, a bit of ground beef can become not so easy to remove.

I just made a Deep-Dish Quiche Lorraine and as soon as I poured the filling in the pan it flooded at the bottom. Thank goodness I had it sitting on a baking sheet (per recipe directions). Now it is baking with the filling all over the baking pan: heavy whipping cream, Le Gruyere Cheese, and free ranch organic eggs. As you can imagine it is baked on hard and will be more than a challenge to clean the mess. Not to mention the loss of money in losing a part of the filling. I have baked and cooked for 35 years and never had a dreadful experience like this. I spent this money to now repeat the purchase of a different 9 inch springform pan that is 3 inches deep. Hopefully I can help one of you out there.
PS When reading reviews, most were good however, a person did mention about the leakage and gave the product a substandard mark. I should have listened.
Importantly, I have made this same quiche dish with another different size springform pan ( 10 inch wide 2 inch deep) and never had leakage problems. It is not the recipe!

As you know, no springform is leakproof.
But this one is nice because the minimal leaks settle into the base.
Speaking of the base, it is easy to move the pan around due to the extra ledge.
