Is this whole 30 approved? The simple answer is "Yes" - but I have to qualify it. If your goal is simply to stick with whole foods, which is what I now try to do, there is nothing in the ingredients that (in my understanding) disqualify this product. The ingredients are Avocado Oil, Organic Cage-Free Eggs, Organic Egg Yolks, Organic Vinegar, Water, Salt, Organic Lime Juice Concentrate, Chipotle Powder, Lime Granules, Organic Chives, Organic Rosemary Extract. Furthermore the product is Primal & Paleo Approved, Sugar Free, Soy and Canola Free, Dairy Free, and Gluten & Grain Free.
However, whole 30 also encourages people NOT to think in terms of replacing foods that are off limits (e.g., ordinary mayonnaise, ketchup, etc.), and frankly speaking, that's exactly what I was doing with this sauce. Having said that, I could probably not have lasted on whole foods without this sauce because it made many of my favorite whole foods (tuna and salmon, turkey burgers, many kinds of veggies) even more delicious than they were with ketchup and/or mayonnaise. So people who make one of their goals to change their thinking about food completely, which is a good goal - they may choose to avoid this sauce because for them it is a substitute for something they can no longer have under whole 30. And that way of thinking is to be avoided according to whole 30.
The bottom line is that I think this is a great product, and the 12oz jars go farther than you might think. It is expensive, but it is now a permanent resident in my refrigerator at home, and in the lunchroom refrigerator at work. I really enjoy this product. If you are doing whole 30, best wishes to you - it's nice to be able to include products like this in a healthy diet.
The taste for me was amazing. Taste is always a matter of individual tastes, and this is different than usual store-bought mayonnaises I’ve had over the years, but this is so much better. This tastes more like fresh home made mayo. I also really like the chipotle lime flavor for burgers; I use the original flavor for chicken and tuna and most other uses.
There was a small amount of oil separation in one of the jars. I spooned this out along with the mayo on burger buns and this was really no problem, no affect on taste or texture or flavor blend into the burger. This is now my favorite mayo.
As for the taste, I like it, though it is a bit strong on the vinegar. It's rich and creamy and you do pick up on the avacado. The aftertaste lingers for a while...I haven't decided yet if it lingers pleasantly or not. Also, it causes a slight puckering reaction. It probably goes on the more accessible end of the "acquired taste" shelf.
Until the price drops I won't be buying more.
P.S. I found that mixing this with canola mayonnaise not only makes it go farther--good at this price--but it also moderated the vinegariness and aftertaste. Then I made some tartar sauce with the combine mayonnaise, relish, a dash of garlic and onion powder. Delicious! The best tartar sauce I've ever had. The hint of avacado gives it a depth and richness that can't be beat.
