This celiac disease business can be tough. I mean most of the time I have no problem avoiding gluten, and can keep a good attitude because I was already at an advanced age when the troubles struck. So I am grateful to have been able to enjoy normal breads for many years.

But sometimes foods I loved and associated with good times just call out to me. I was with an old friend and he was buying smoked salmon. This triggered that memory of NYC and bagels and lox. Ten days later I was still thinking about them so I gave in and bought smoked salmon and cream cheese. I did recall that gluten-free bagels could be found in the supermarket freezer section. Sure enough, got 'em.

So I pried off half of one from its frozen bottom, plopped on a plate and zapped in my low-power microwave for about 50 seconds. (Microwave users discover, often by trial and error, to be cautious about over-microwaving any bread product lest it become leather.) Spread on cream cheese, applied the lox, chomped down and was delighted. Just as good as ever. Here's what you want to know: the bagel does not have exactly the texture of a normal bagel which would be dense and considerably chewy to the point that sometimes they are a bit of a challenge to tear. Instead, this bagel has a porous texture, very moderate chewiness and surprising flavor. Now mind you, the bagel's flavor doesn't compete with the toppings - it's not supposed to - it just tastes really great, at least as good as a wheaten bagel. Maybe better. I recommend trying these even though they are expensive compared to normal bagels. I paid four bucks which the sign said was a dollar off the regular price.
