A good pair of multipurpose shears is a must in any kitchen. Victorinox makes this pair with a very sharp tip, the better to snip chives from a windowsill pot or cut cilantro leaves off the stem. Use the serrated inner rim of the handles as a bottle opener, clip recipes out of a magazine, or cut the skin off a chicken-the shears can do just about anything, although Victorinox makes another pair especially for cutting poultry into pieces. Lightweight and reasonably priced, the shears are constructed of blades stamped from high-carbon stainless steel and hand-finished in Switzerland, while the polypropylene handles, available in a choice of colors, suit either left- or right-handed users. --- MY PROBLEMS WITH OTHER SHEARS OF LOWER QUALITY ---
I have purchased many different shears over the past 5 years, and most have let me down. Consistently, I would find that, A) the steel used is of low-quality & has a poor heat treatment, which means the blade lacks toughness & dulls faster than I would prefer; B) the shears do not come apart easily (or at all), which can present a sanitary issue if cutting raw meat, not to mention this makes sharpening unnecessarily difficult; C) the product quality of most shears I own (most of them larger, known names) that were made in China, Korea, Indonesia, Vietnam, etc. have been inconsistent & unimpressive; D) the blades have poor edge geometry, which accelerates dulling and creates a need for more physical effort (the elbow grease kind) to accomplish the same cutting task compared to shears with good geometric design; or/and E) the joint used to bind the two blades is unusually weak, putting the shears at risk of failure when cutting something with force (ex: thin bones.) Luckily, this Victorinox addresses every one of these issues I have encountered and that is why I highly recommend these shears over others!
--- DESCRIPTION OF THE VICTORINOX 87770 4-INCH SHEARS ---
Victorinox currently offers something in the ballpark of 5-8 different scissors/shears. Some of them are specialty-usage products (ex: poultry shears), and others are general-purpose shears. Simply referred to as, " 4" Shears " by Victorinox, the model number is 87770 (note that a nearly-identical 3-inch version is also offered.) Designed as general-purpose shears that can multi-task, these come with lifetime warranty. These do have a slightly smaller form-factor than many other brands, and this makes them more nimble and better-suited for fine detail/prep work. Simultaneously, the capability for heavy-duty tasks or professional usage is still there.
Measurements-wise, these have a 4 inch total blade length (that is, from the tip to exactly where the blade meets the molded handle), with a cutting area (that is, the sharpened portion of the blade that will do the cutting) that is a little over 3 inches long, and a total length of about 8 inches. The inner dimensions of the handle cutouts are about 2.25 inches in length, and a little over an inch in width (at its widest point.) The thickness of the handles is about 2.25 inches and slightly tapered. The weight is about 3.2 ounces, which is reasonably lightweight.
The handles are molded hard plastic and, while they are a little on the small side, they work well for most sized hands. And while they do not have the soft rubberized molding/inlays that some other shears have, they are still very comfortable to use and this helps maintain the compact form-factor. Available with both a black and red handle (both have a brushed stainless blade), I originally purchased one in black, but later had to get one in red since it's Victorinox's signature color! (plus having two of these are functionally-useful for me.)
Unlike most shears, these are NOT made in China, Vietnam, or Korea, but rather in Germany. With there usually being a GIGANTIC difference in the quality of German steel versus Chinese steel, the superior quality & performance of the Victorinox is immediately and dramatically apparent.
The fit & finish is extremely consistent, and by that I mean there are no deformities in the molded handle, the handles are very solidly bonded to the blades, the brush lines on the steel are consistent & without defect, the engraving is legible & durable, the grind lines are very even, and there are no sharp or rough edges on the non-sharpened angles. Even more importantly, there is absolutely, positively, ZERO space between the two blades, and this makes a MASSIVE difference in cutting performance, especially when cutting paper or other fibrous objects.
The design of the [larger-sized] hardware is ingenuous and it will give these shears an even longer service life. This hardware uses a steel screw that screws into a polymer backing, and the polymer backing is the portion that rotates. This reduces metal-on-metal pivot friction, and it not only makes operation much smoother, but it practically alleviates the need for lubrication and will dramatically reduce friction wear (therefore increasing the service life.) This polymer backing is plenty strong.
--- THE STEEL ---
The heart & soul of a pair of shears is the steel, and the steel used on Victorinox's shears is superior to almost every other set of shears I have used, and superior by a substantial margin. Hardened to 55 HRC, this steel is harder than what is being used on many other shears. This allows the blades to hold a more aggressive angle, resulting in more aggressive cutting and longer edge-holding. At the same time, the use of good quality steel and a good heat treatment gives these blades substantial toughness & resistance to bending. These blades can withstand heavy usage that would damage the blades on many of my other shears. While the steel has reasonably-good corrosion resistance, in order to avoid spotting/oxidation, it is important to rise these off after being used to cut a material that can encourage rusting/staining, and then to (immediately) dry them afterwards. Like the steels used on other Victorinox cutlery products, this steel is extremely easy to sharpen.
--- THE EDGE GEOMETRY ---
You can have the best steel in the world, but edge geometry has the final say on how well an edged tool does (or does not) cut. Victorinox comes through here again. As you can see in the pictures, the bevel is super, super consistent and the finishing is consistent. This makes these cut with minimal force, and it avoids the need for force variation that lesser products of poor edge geometry have. Between the harder steel and the excellent edge geometry, these stay sharp for a long time, and even if you are cutting abrasive objects that can rapidly dull knives (such as cardboard, which is brutal on edges.) This difference this quality steel and quality edge geometry makes is pronounced as well: these can easily go 3 times the duration between sharpening than my KitchenAid shears can!
--- THE PROOF IS IN THE PICTURES ---
I have uploaded various images, some of which show items that have been cut using the Victorinox Shears. As you can see in the close-ups, the cuts this thing can make are very, very, very clean, and clean regardless of the material being cut. Whether it is super-thin toilet paper, plastic bags, or receipts, super-thick plastic or 600lb test paracord, or highly-abrasive cardboard, these Victorinox shears can handle it like a champ. That sort of versatility is very useful in a kitchen where you could use a set of shears for a million and one different tasks.

The quality and functional design of these Victorinox shears makes them one of my favorite kitchen tools and my go-to for a general-use cutting tool.
