Seven Generations of Stewardship
Since the mid-1800’s, the Coombs family has been acting as responsible stewards of the forest, following a ‘sustainable’ approach to agriculture long before anyone had a specific name for it – or could conceive of any other way to farm. As part of a fabric of nearly 8000 maple farmers who are all preserving maple forests, Coombs Family Farms is doing more than making maple. We are helping to preserve crucial habitat for thousands of distinct plants and animals that need large intact tracts of forest to survive.
Get Real - Taste the Truth
In 1887, the first breakfast syrup that wasn’t pure maple was introduced. It was made of 45% maple syrup and 55% corn syrup. Its price compared to real maple syrup made it an instant hit. By the 1990s, most imitation syrup brands had eliminated maple syrup from their products entirely, opting to use high fructose corn syrup (HFCS), artificial flavorings and artificial colors instead. As a result, labeling laws in the United States were enacted to prohibit artificial syrups from using the word maple in their names.

This smells lightly of maple, and sweetens things really well. It's slightly less sweet than white cane sugar and much less sweet than agave, and doesn't leave a residue on your teeth in the same way those do. I'd say to use a well-rounded tsp for every flat tsp of cane sugar, if you want to know the like-for-like sweetness level.
I switched to using this in my coffee when I read it was the most efficient sugar to metabolize (so your glucose levels don't jump as high as with other sugars, supposedly). I'd been using agave before and was disturbed to learn the fructose content in agave is really fast to process, so your body ends up absorbing more, which negates the fact that it's 30% glycemic than cane sugar. Maple sugar has a less cloying flavor than agave and you can't detect it in coffee the way you sometimes can with agave.
Anyway, it tastes similar to light brown sugar - but not as strong - and the taste completely disappears in my daily cappuccino (I'm a bit of a coffee snob who likes a strong coffee, but I think you wouldn't detect any flavor in drip coffee either). It does dissolve in liquid completely, but it takes a bit longer and requires more stirring than cane sugar, so you might also try to dissolve in room temp or warm liquid first before adding it to something (I usually dissolve it into my first shot of espresso, then add another one on top). I'd say the granules have that freeze dried crumbly texture, similar to powdered honey. It's easier to dissolve than coconut sugar and has less aftertaste - coconut/palm sugar is what I substitute for brown sugar in recipes, because it's richer in flavor.
Anyway, try it and you'll be pleasantly surprised. I've tried just about every type of natural sugar substitute, and besides the outrageously expensive Japanese brand Lacanto (which has zero calories and contains fruit alcohol and monk fruit extract), this is the best.
Don't like or don't want to use crap arti sweeteners? Try this! Don't like or want to use reg crap sugar? Try this! Don't want to use Stevia because deep down you know that any store bought or advertised Stevia really isn't a true, raw product? Try this!
This is by FAR the healthiest "sugar" you can put in your body, in my researched opinion. Low glycemic, organic, tastes great.
I use in my coffee, and in my teas. I sprinkle on my oat bran cereal and on my ghee soaked GF multi grain bread. Admittedly, I am not a baker so can't attest to how this works for that, but can only imagine it would be an ideal substitute (reviews agree).
It's phenomenal. Why anyone would use the white, brown, pink, blue or yellow packets and brands to sweeten their goods when this is available is beyond me. Oh, this is not cheap, but neither is my body. You wanna dance? Pony up and pay for the music!
KEEP IN MIND< this is NOT a sugar substitute per se, and those with sugar sensitivities should try a little bit first, then work up. I can tell you this though: my son is a type 1 diabetic and he can tolerate this sugar quite well. His blood sugar seems to remain stable after using a tbsp in coffee or cereal.
And the Coombs family themselves? They are truly nice, good people and make an unrivaled product.
Highly recommend.
The next step was to choose from many different brands to find the brand that I liked the best. I chose the Coombs Family Farms organic maple sugar because of the size of the container and the container itself. The only problem that I had with it is that, when you get down to the bottom of the container, it is difficult to get the rest of the maple sugar out of it, so I purchased a teaspoon with a very long handle that I found on Amazon. That solved the problem.
I really love the aroma of this maple sugar and how wonderful it makes my coffee taste in the morning. I drink my coffee black with just the maple sugar in it. It is perfect that way. I prefer the coconut sugar for my herbal teas. I have tried the coconut sugar in my coffee and didn't like the way it made it taste, and I tried the maple sugar in my herbal tea and didn't like that either. So, I use the coconut sugar for my teas, and the maple sugar for my coffee, and that is the perfect solution to my quest for the best tasting drinks!
The container is comes in is extremely sturdy and offers a great deal of maple sugar for the price. Highly recommended if you're someone like me and needs a healthy sugar alternative!
