I was hesitant to spend this much on a blender because there are $30.00 blenders out there & I'm no chef. After watching some You Tube demos, I decided it would be worth it because two of my favorite foods would taste better when freshly made - hummus & nut butters. I've used the peanut grinder at "Whole Foods" a couple of times & I noticed the peanut butter tasted much better than store bought. And you don't have to work hard trying to mix it like store-bought nut butters. But it's way too pricey.
I just received the Vitamix today. This model has the shorter, wider jar that fits under cabinets. My house was built in 1954 & it barely fits under my kitchen cabinets with the cap on the jar, but I wouldn't store it that way, anyway. I prefer to allow air to circulate in the jar. It easily fits under my cabinets without the cap.
After cleaning the jar as recommended (which takes a couple of minutes), I made a large batch of hummus, using the recipe in the included book. Even though I forgot to put one of the ingredients (ground cumin) on my shopping list, it was absolutely spectacular - the taste couldn't be better, and I'm very picky about food. I've eaten at several good Middle Eastern restaurants & the hummus is rather bland & doesn't come close to the Vitamix. There is a big difference between a restaurant making hummus for profit & someone making it at home for their own use. The consistency was perfect & uniform at the top, middle & bottom of the jar. The included tamper--which is a necessity for thicker dips & nut butters--worked very well. I recommend a rubber spatula for spooning out thicker foods like hummus. The included recipe book is excellent. It not only has great recipes, but it also provides detailed nutritional information for each recipe, including carbohydrate content - very important for a diabetic like myself.
Cleaning the unit is a breeze - after making drinks or hummus. I rinsed the excess hummus out with hot water, then I filled the jar halfway with warm water, added a couple drops of dish soap & blended on high speed for a minute or so. Everything came out perfectly clean - the jar, blades, etc. One of the features I really like is the on/off switch conveniently located under the front of the base. It is a great safety device that prevents accidental activation if you bump the on/off lever on the front without the lid on. The safety switch also illuminates the counter blue when it's in the "on" position to let you know if the machine is on or off without having to feel the switch. The rubber platform that the jar sits on is removable so the area under it can be cleaned or wiped dry if needed. Make sure to read the manual, especially the warnings about not touching the metal gears on the bottom of the jar or on the base after use because they get hot....as I found out.
After trying the hummus on a few Persian Cucumbers, I was too stuffed to eat anything else for dinner. Tomorrow, I'll be making a batch of peanut butter & maybe a green drink & will update. So far, I'm lovin' it!
6-30-18 UPDATE: I just made a large batch of peanut butter. Making peanut butter requires a bit more cleaning - brushing out the jar & the cap & longer blending. I filled the jar halfway with hot water & dish soap, poured out the liquid, then used a dish brush on the inside of the jar, rinsed the jar again, then blended again with only water. It came out looking new again.
You can choose how creamy or chunky you want nut butters by adjusting the blending time. Still lovin' it!
7-13-18 UPDATE: I've had a chance to make a few green drinks. I put a cored apple, three chunks of frozen mango, carrot, parsley, squeezed 1/2 a lemon, 1/2 cup water & a few ice cubes in the jar. I started on slow speed & gradually increased to fast & blended for about 15 seconds. The drink was absolutely delicious; the lemon seems to replace the bitterness of the parsley with a nice citrusy taste. There were NO bits of parsley in the drink. As a diabetic, I have to be aware of the carbohydrate content. The carrot - 10 gms. The apple - 15 gms. Three chunks of mango - 10 gms. Everything else - hardly any carbs & several grams of fiber, plus a high concentration of nutrients with only 30 gms net carbs. It is surprising how filling such a drink is - due to the nutrient density.
TIP: When adding parsley or any stringy vegetable, it's a good idea to add it after everything else is blended, otherwise pieces get tangled under the blades & are difficult to remove.

Well Worth the $$$
I was intending on buying the Vitamix 5200, which is recommended by America's Test Kitchen. However, the 5200's taller pitcher made storing the thing somewhat worrisome, so I decided to get the 5300. I was not disappointed. This thing is POWERFUL! Perfect smoothies, malts, peanut butter, and hummus (what I've made thus far) has come out of this thing, and the clean up is easy. It is stout enough to hide under a low cabinet, even on its base, and an be stored in a lower cabinet, also still on its base. It is my first Vitamix. If it lasts as long as the warranty says, they have me for life!
