The Classic Ikon hollow-ground santoku combines the benefits of a cooks knife and a vegitable cleaver. It is a fine knife for chopping, slicing and dicing. The kullened edge allows foods to realease easier from the blade and also enables you to cut with less friction. The Wusthof Classic Ikon is a culmination of all the best features of each of the Wusthof knife lines. The combined riveted handle design is combined with a contoured shape to add comfort and control. The Classic Ikon adds a rear bolster that acts as a counter balance when using the knife. This second bolster adds significant blade control. Classic Ikon has a unique forward bolster as well. The forward partial bolster is designed so you can sharpen the complete length of the blade. This bolster is also curvered inwards to allow your fingers greater control while holding the knife by the blade. Located in The Cutlery Capital of the World, Solingen Germany, the Wusthof factory history goes back as far as 1814 when the company was listed with the Duchy of Berg. To this day, the company remains family owned. Throughout it’s history, Wusthof has focused almost solely on the manufacturing of forged knives for the professional chef and home cooking enthusiast. Wusthof uses a special blend of German steel through out the whole length of the knife. The ingredients of this steel are proudly etched on each blade. Wusthof not only uses the best materials to make a fine knife, but it is also crucial that each blade is precisely tempered. The balance, quality and ergonomic on the Classic Ikon santoku is amazing. Very light weight and cuts up vegetables and boneless meats with ease. I am a lefty in a world of righties, so this fits well on either hand. This fact (along with pricing) is a reason why Shun knives with their cool Demascus blade out of the equation: because of their special "D" handles makes them -handed specific...but I digress.
I am an amateur when it comes to cutlery and cooking, but when friends and family come over and help prepare the meal, I always get the "woah!" expression when they use this knife. It also helps that I have my set on a magnetic rack on the wall to showcase them. My sister was so impressed that I instantly knew what to get her for Christmas.
Keep in mind that when you do need to sharpen this knife, to do it with an Asian knife sharpener. It has a sharper angle than other knives like the Chef's knife. I believe it's 15 degrees for Asian knives like the santoku versus 20 degrees on the others like the Chef's.
From an amateur's perspective, this is the best knife I have ever used (except for the all-mighty butter knife!).
This knife (Classic IKON Santoku 5") looks and feels great. We used it for the first time yesterday and were very impressed with the feel, balance, sharpness.

It is perfect for slicing, dicing, and mincing and cuts through even hard vegetables such as cabbage, like butter. The hollow edge works perfectly preventing the veggies to stick to the blade.
Die Ikonserie von Wüsthof bietet ein gutes Preis-Leistungsverhältnis bezüglich Design und Funktion, so dass ich mir mit dem 14cm Santoku 4172 eine "hübschere" Variante gegönnt und mein "altes" Santoku ablöst habe.
Die Größe von 14cm ist für die meisten Arbeiten bei mir ideal.
Das Messer ist leicht grifflastig, dafür liegt es toll in der Hand.
Nach dem Schneiden wird es gleich von Hand gereinigt und mit einem Klingenschutz in der Schublade verstaut. Bei mir darf kein "Gutes" Messer in die Spülmaschine!
Ich habe auch noch ein anderes Santoku mit 18cm Klingenlänge, dass ich aber nicht so oft benutze.
Der Kullenschliff soll das Ankleben von dünnen Scheiben durch ein Luftpolster auf der Klinge verhindern. Das funktioniert nicht mit jedem Schnittgut, ist aber zumeist besser als bei einer glatten Klinge.
Achtung, das Messer ist -wie es sich gehört- sehr scharf!
X50CrMoV15 ist ein Typ Klingenstahl, der sehr robust, verschleißfest, korrosionsbeständig und sehr pflegeleicht ist. Messer aus X50CrMoV15 haben einen feinen Schliff, eine langanhaltende Schärfe und wenn es nötig wird, kann ein solches Messer recht leicht nachgeschärft werden. Die Klingenhärte ist mit HRC 58 angegeben; ein guter Durchschnitt liegt bei 56-58, ab 60 muss man besonders pflegen und schärfen.
Fazit: Schick, scharf, gutes Handling = meine Empfehlung und volle Sternezahl!
Aber lesen Sie ausführlich:
Ich bin Hobbykoch, der zwei bis dreimal am Tag und an sieben Tagen in der Woche gute Messer braucht, um den 2-Personen-Haushalt mit Nahrung zu versorgen.
Für bestimmte Schnitte, z. B. feinste Gemüse-Julienne-Streifen (damit meine ich nicht die üblichen 3–4–mm–Streifen, sondern solche mit etwa 1 mm Kantenlänge), kommt das klassische Kochmesser an seine Grenzen. Ich kam zu der Überzeugung, dass diese Dinge noch besser mit einer Klingenform nach Art der japanischen Santoku-Messer gelingen könnte.
Zunächst testete ich einige asiatische Originale in der Preisklasse bis gut 100 Euro. Sie gefielen mir nicht besonders. Ihr Schnittverhalten hat so gar nichts Vertrautes und viele Messer liegen auch nicht besonders gut in der Hand. Auch der Gesamt-Eindruck der Verarbeitung war meist deutlich schlechter, als bei europäischen Messern der gleichen Preislage. Die meist annährend Rasiermesserschärfe überraschte zwar positiv, aber für mich spielen Handling und Verarbeitung eine mindestens ebenso wichtige Rolle.
Deswegen schaute ich mir nun zunächst zu meinen vorhandenen Zwilling-Messern passende Santokus an. Die Messer der Serien Vier Sterne oder Four Stars II lagen – trotz der ansonsten von mir bevorzugten, identischen Form des Griffes – nicht gut in der Hand, die Balance stimmte nicht. Auch bei anderen Zwillingen waren die Griffe entweder zu dünn und/oder leicht (Professional S) oder insgesamt sogar viel zu schwer und unhandlich (Pro), ähnlich verhielten sich Fissler-, WMF- und Güde-Santokus. Die Schärfe schien bei allen brauchbar, aber auch spürbar unterhalb der Japan-Fraktion (lediglich das Güde Alpha vermittelte einen etwas höheren Schärfegrad).
Schließlich nahm ich ein Wüsthof 4183/17 aus der Baureihe "Classic" zur Hand und zum ersten Mal hatte ich das Gefühl, das Richtige gefunden zu haben. Klinge und Griff verhielten sich sehr ausgewogen zueinander, allerdings gefiel mir Letzterer von der Form her nicht besonders. Das Ausweichen auf das entsprechende Modell 4176/17 "Classic Ikon" brachte dann den gewünschten Effekt: Ein wunderbar ausgewogen und perfekt in meiner (!) Hand liegendes Santoku-Messer. Die Schärfe ab Werk kommt nicht ganz an Japan-Messer heran, ist aber höher als bei den oben genannten anderen europäischen. Tomaten- und Papiertest bestand es jedenfalls. Dieses Verhalten entspricht auch der für das Messer angegebenen Rockwell-Härte von 58 Grad, die zwischen jener der europäischen (um 56 Grad) und der preiswerteren japanischen Messser (meist um 60 Grad) liegt.
Im Zusammenspiel von Schärfe und spezieller Klingen-Geometrie lasssen sich nun viele Dinge mit deutlich weniger Kraftaufwand, schneller und präziser schneiden. Feinste, 10 cm lange Streifen von unter 1 mm Kantenlänge vom Kohlrabi oder der Möhre sind nun ebenso möglich, wie etwa lange Zucchini-"Spaghetti". (Zumindest für ein oder zwei Personen; darüber hinaus würde ich eher zu einer Reibe greifen.)
Der Kullenschliff: Bringt er einen wirklichen Nutzen? Am ehesten wirkt er bei flächig Geschnittenem, also z. B. Gurkenscheiben. Jedoch nur, wenn die Scheiben eine gewisse Dicke aufweisen – hauchdünn geschnitten kleben sie genauso, wie an meinem Kochmesser ohne Kullen. Beim erwähnten Julienne-Schnitt bemerke ich keinen Unterschied, die feinen Streifen muss ich immer abstreifen. Letztlich scheinen die Kullen nicht viel zu bringen, aber weil sie auch nicht schaden, fallen sie bei mir unter "bewertungsneutral".
Mittlerweile habe ich 12 Mahlzeiten mit dem Messer zubereitet und ich musste es bislang nur einmal abziehen. Entgegen anders lautenden Angaben auf verschiedenen Webseiten, die 14 oder 15 Grad empfehlen, wird das 4176/17 laut Wüsthoff-Service (der auf meine Anfrage übrigens sehr schnell antwortete!) mit 10–11 Grad geschliffen. Je nach Benutzung etwa alle 3 Tage abgezogen, scheint es dauerhaft scharf zu bleiben.
Über das Langzeitverhalten des Messers kann ich zum jetzigen Zeitpunkt (wenige Tage nach dem Kauf) natürlich noch nichts sagen. Wenn es (meist alle paar Jahre) nötig wird, werde ich es professionell nachschleifen lassen. So, wie sich das 4176 mir aus der Packung heraus präsentierte, und mit den guten Erfahrungen der ersten Tage, kann ich ihm nur Bestnoten in allen Punkten geben und eine volle Empfehlung aussprechen. Insbesondere in Relation zum sehr günstigen Preis von deutlich unter 100 Euro!
J’attire votre attention sur le modèle car la gamme chez Wüsthof est large, et même si la marque est réputée, tous les modèles ne se valent pas.
Le Classic ikon santoku en 17cm est particulièrement bien équilibré, taille idéale pour la cuisine. Made in Germany dans le très réputé acier de Soligen ! C’est une valeur sûre.
Le tranchant est rasoir et la finition est vraiment exemplaire ! Vous pouvez vous amuser à faire des tranches de 2mm dans une tomate bien mûre sans difficulté si cela vous chante.
Concernant L’ergonomie, le manche est impeccable et la finition inox sur le talon est du plus bel effet ! Ça respire la qualité !
Son poids parfaitement étudié lui donne l’inertie parfaite pour les travaux de hachage etc.
Contrairement à ce que les gens pensent, il ne faut pas que le couteau soit trop léger... Mais ici, c’est parfait.
Il n’y a pas de Damassage sur la lame, mais ce n’est pas plus mal car il sera plus facile à entretenir et cela l’aurait rendu encore plus coûteux. Pour le quotidien, cela suffit amplement.
Lavez le au liquide vaisselle à la main et séchez le bien. Personnellement j’évite le lave vaisselle et cela me permettra de le conserver en parfait état de nombreuses années.
Seul petit bémol, j’ai du acheter la petite pochette à part pour protéger la lame à 7,95€.
Cela aurait mérité d’être livré avec le couteau étant donné le prix tout de même conséquent.
Je l’ai cependant acheté autour des 70€ en promotion, sachant que le prix public est de 125€ mais qu’on le trouve vendu autour des 100€.

Potrebbe esser utilizzato come coltello principale in ogni cucina in opzione/aggiunta al classico coltello Wuesthof Classic Ikon Cuoco , rispetto a quest'ultimo richiede una tecnica di taglio di livello leggermente superiore, ha una lunghezza di lama inferiore, ma grazie all'alveolatura durante il taglio sulla lama si creano delle sacche d'aria che impediscono alle verdure tagliate a fette di rimanere attaccate alla lama. Come ogni coltello deve esser comprato in base all'uso che si intende farne, forse come primo coltello quello da Cuoco rappresenta una scelta migliore.
Come visibile nelle foto il peso complessivo è di 200 g tondi con un punto di equilibrio leggermente spostato verso il manico: il coltello non è perfettamente bilanciato, ma per la sua particolare tipologia ha un buon bilanciamento.

Eccellente lavorazione come da abitudine della serie Classic Ikon di Woesthof: 170 mm di lama forgiata in unico pezzo in acciaio inossidabile martensitico X50CrMoV15 che attraversa tutto il coltello, gusci esterni perfettamente lavorati per un risultato uniforme, senza giunture, nel complesso un coltello di livello assoluto.
