Dexter-Russell 4-by-2.5-Inch Stainless Steel and Walnut Pancake Turner is a light weight and very thin spatula that works exceptionally well in cast iron pans. It is a very thin spatula, but has a solid and durable blade with little flex unless you press very hard. It easily turns eggs, and stirs vegetables. It is durable enough that I also use it to turn burgers and steaks. I have used the Dexter Russell very frequently for more than three years on my cast iron pans and it has held up well. The turner is thin enough to be used for some cutting tasks while cooking such as chopping meat. As a bonus it does and exceptional job at removing residue from cast iron pans, improving the surface of the pan, and keeping the pan surface smooth. You can scrape with light or medium pressure without harming the surface of a seasoned cast iron pan. I frequently use medium high heat when cooking burgers, steaks, and chops, so the surface of my pans take a beating. However, they are reasonably non stick thanks to the Russell Dexter spatula.
Oxo Steel Lasagna Turner.
It sells for approximately $10 at Bed Bath and Beyond, and is 20% less with coupon. This turner is heavier than the Russell Dexter. It is a thin spatula, but it is thicker than the Dexter Russell, and has almost no flex. It works well at turning eggs as well as flipping burgers and steaks, and stirring vegetables in cast iron pans. The functionality of this tool is similar to the Dexter Russell. It also is useful for scraping the surface of cast iron pans. It may not be quite as effective of removing the tiniest bits stuck on the surface of the pan as the Dexter Russel, but it does a very good job of maintaining the surface of cast iron pans. While a cursory inspection of the spatulas indicates that the Oxo appears to be sturdier and significantly heavier, I believe that the durability of the spatulas is actually near equal. Neither has a full tang handle, so over a long period of time, the handle could separate as a few people have stated in reviews. However, my Dexter Russell turner has help up very well for frequent use for more than three years. Be sure to thoroughly dry the walnut handle of the Dexter Russel turner after washing to prevent warping and separation from the metal. It is also a good idea to occasionally apply a light coat of mineral oil to the walnut handle to prevent the wood from drying out too much. Also thoroughly dry either spatula after washing to prevent rusting. If you get some rust on your spatula, there is no need to panic, you can usually remove the rust with Bar Keepers Friend.
When stirring vegetables, I like to use two spatulas to simplify turning the vegetables, so I sometimes use my Dexter Russell and Oxo turner at the same time. I slightly prefer the Dexter Russel for use in pans, but I probably would prefer the heavier Oxo on an outdoor grill. In my opinion, both are excellent tools for use with cast iron pans, and I recommend that people who purchase a cast iron pan immediately purchase one of these spatulas. Cleanup and maintenance of cast iron pans is fairly easy with proper use of a good metal spatula when cooking.
This spatula is perfect for cast iron cooking. I use it on my 15 inch skillet and 10.5 in skillet and it is just the right size, not too stiff and not too flexible, and very durable. The flat edge wears the cast iron evenly and is thin enough to easily slip under any food you are cooking. Even though it is thin the steel is very strong and I don't see any signs of wearing down the spatula itself. I have made steak, noodle stir fry, pancakes, parmesan encrusted chicken, and much more with this spatula working flawlessly. This helped convert my wife to the magic of cast iron cooking.
End Note on Smoothing Cast Iron:
Within a week of using this spatula on my 15 inch skillet the surface is noticeably smoother (I was a little aggressive in scraping down the skillet during cleaning as I wanted a smoother surface) and I no longer feel the need to polish it. My 10/5 inch skillet is incredible after being polished, and the spatula does not compare in results but if you don't want to polish and reseason then this sure will help spur the process.
I apologize if this isn't as well put together as some other reviews, but I didn't have a lot of time and I wanted to get this posted while I had a moment. I sincerely hope this helps anyone searching for a great spatula for cast iron or steel. Good Cooking!
Well, I dug a rusty Griswold #10 skillet out of my dad's basement that hasn't seen use in 35 years. After stripping and seasoning, I didn't use it once until this turner arrived, as I wanted to do it right. I really can't speak highly enough about how well this spatula works with the skillet. It's very well made, sturdy with just the right amount of flexibility. The handle is solidly attached and smoothly finished. The end is perfectly straight and glides along the skillet beautifully. The rounded corners are just right to scrape as necessary around the edge of the cooking surface. It's truly a pleasure to use.
Also, the size is right. When I drew out 4-by-2.5 inches on paper I thought it might be a bit small for general use, and considered going with the larger size. But, this one really is the right size for daily cooking in a 10 or 12 inch skillet.
Like all great tools, as soon as I used it I immediately forgot about the price, which is a small amount to pay for what will undoubtedly be a daily companion in the kitchen for many years to come.
[UPDATED November 10, 2014] Also perfect for glass bakeware!
We sometimes bake enchiladas in a glass Pyrex dish, and no matter what we've tried, they would always stick some amount between moderate and are-you-kidding-me. Until now we removed them from the dish using a large plastic spatula, which would mangle them to varying degrees. Now, they still stick, but this Dexter spatula is so straight and sharp it can easily scrape along the glass and remove the enchiladas without destroying them. Plus, the baking dish is much easier to clean!
So another unexpected use... this thing is absolutely perfect for glass (and perhaps similar such as ceramic) bakeware.
